Easy Instant Pot Recipe: Creamy Leek and Potato Soup - Dairy Free!

  • In this video, I show you how to make a dairy-free creamy leek and potato soup using your Instant Pot. This is a 'warm hug in a bowl' kind of soup and the recipe is beginner friendly. I walk you through all of the steps in the video. I'm using the Instant Pot Pro but you can use any Instant Pot for this one. Perfect if you're seeking simple comfort food with those amazing seasonal leeks. You can finish the soup with all kinds of toppers and mix and match the herbs to your taste too. Ingredients below. Enjoy!
    Ingredients: Instant Pot Creamy Leek and Potato Soup (Dairy Free)
    2 tbsp olive oil
    4 cups 400g of chopped leeks
    1 onion, chopped
    2-3 potatoes, diced
    1 litre of stock (I made mine with vegan bouillon powder)
    1 tsp of thyme
    1 scant cup, 100g cashew nuts
    Topper ideas: pumpkin seeds, flat leaf parsley, chives

    You had me at leeks, potatoes, onions, and herbs...cashews pushed me past the point of no return! I'll be making this before we reach our spring thaw! By the way...LOVE the apron! Do tell!

      Sounds like an excellent idea!
      I got the apron from Gillian Kyle .com , an amazing Scottish business. She has the rights to use the Tunnocks Teacake design on all kinds of good stuff plus a whole load of other lovely things. I only eat a Tunnocks very occasionally these days but happy memories of childhood treats and I just love the design.

      Use white pepper in mashed potato - doesnt look like bad bits then!!😂

      I can totally believe. I had horrid memories of it from childhood but with the right foods its amazing. Leeks and Potato dishes are the two I mainly use it in

    Using cashews instead of cream means this is also vegan. When I make it I just use milk and bay leaves as the herb. Not as creamy, but if you blitz some up with the blender and leave some chunky it's pretty good.

      Thanks so much for the tips Maria. Yes I'm eating a lot more plant based these days. I love the cashews as it makes it a more complete meal and helps me get more of those plants in too. I love the bay leaf idea too. So good in soups.

      You could make the same recipe with dairy cream if you have that. I think she was just trying to show how to work with the ingredients you have on hand.

      Yes absolutely agree with @kellyS_77 .I originally made this one when I was out of cream but I'm eating more plants these days and I love this as the cashews are a good source of protein so it makes it more of a meal in a bowl. Both version are good for me :)
