- Skip the sugar and make it KETO friendly. This delicious dessert is known through many names. Easy and quick to make and entertain friends and family.

Ingredients:
2 oz hot water (60 ml)
2 tablespoons instant espresso
16 oz heavy whipping cream (473 ml)
1/3 cup confectioners sugar (50 g)
1 tbsp dark cocoa
Handful chocolate covered coffee beans
Directions:
Step#1- Dissolve instant espresso coffee in the hot water. Refrigerate until complete cool before using.
Step#2- In a large bowl add heavy cream, sugar and cold espresso. Start whipping with handheld mixer or stand up mixer until it forms stiff peaks.
Step#3- Transfer into a piping bag with a round tip and fill small cups or glasses. Halfway I like to add a few of the chocolate espresso beans. Cups should be under 4 ounces.
Step#4- Dust with cocoa, add one chocolate bean on top and store in refrigerator until ready to serve.

Trick to keep your whipped cream full & fluffy…. Each week I make my own whipped cream to top cakes & ice cream. It used to get liquidity in 2-3 days & I’d drag-out my mixer AGAIN. Now I put about a Teaspoon of Cream of Tartar. It stays fluffy & delicious for 4-5 days! Cream of Tartar doesn’t affect the taste in spite of what some people say. I’ll even add Chocolate sauce & it still stays fluffy & all WHIPPED UP!
