  • Raymond Blanc demonstrates one of his signature desserts, Cafe Creme. A cup sculpted completely from chocolate, filled with a iced espresso parfait, topped with cherry liqueur sabayon and finished with sugar coated truffles.

    You can tell the immense pride and dedication he has over this dish, the look in his eyes when he said it took 6 months to develop and how he was frustrated over the thermometer dropping into the chocolate. Even after all these years of fame, he's still cooking in his own restaurant instead of enjoying TV fame. This is seriously the most passionate Chef I have seen on TV.

      Raymond is one of the nicest guy in the elite chefs' circle, he has spoken openly about anti-bully in commercial kitchens.

      Wilson Leung That's nice to hear. I'm so tired of watching shows where the chef acts like a complete douche to his team. Another anti bully is Michel Roux Jr., who I adore.

    I've just watched this amazing dish being created & can only imagine what it must taste like...... I cannot imagine however how anyone could dislike this clip. Chocolate perfection. Art.

    This man's talent is unbelievable! and not a smidge of ego. Sigh. Just amazing! My dream is to eat LMLQS and learn at his cookery school. I too am a self taught private chef and stories like his inspire endlessly.

    Raymond was one of the Pioneers of tempering chocolate.a legend.& as Marco calls him genius.

      Pioneers of tempering chocolate ?That's was done by process engineers. The chocolate is delivered tempered.I was an apprentice in chocolate in the 1970's and had old pastry books that show this coffee cup and even a choc spoon. Books by authors who were already dead. Nothings new.

    Raymond Blanc is certainly not pretentious, he is a world class chef who delivers the goods. The chocolate coffee cup is a masterpiece of culinary art and he should be applauded for it.

    thanks for the help. ive ordered them off ebay and they came yesterday but ive not got round to making it yet. it will probably take me about 5 trys to get it right. i made croissants the other day and it took me 3 attempts to get it right.

    ...although to be fair he wasn't blaming Adam but rather suggesting that the thermometer should have some kind of catch on it to hook over the side of the bowl to prevent it from slipping into the contents...

    Genius! Although if your going to go through that much trouble, might as well weld and cut a bottom for the cup so it can be picked up too, that is if it doesn't spill all over the customer.

    That's a reaccuring topic btw. Chef Raymond asks, why they can't create a little "mold" on ALL of kitchen equipment that is used, so that it can be put on the edge, without slipping in/out of the bowl/pan/kettle, etc...

    Raymond was not mad at him, he was mad at the company that did the thermometer; he was angry that these (thermometers) do not have an extra bit of plastic to hang on the side of the bowl,plate, casserol etc :)

    Everyone is misinterpreting this. At :55 He clearly knows the thermometer sitting on the edge of the bowl, because he grabs it himself and moves it, drops the bowl, and sees it slip in. He says "Why cant they do a bloody thing which would stick to it" Basically trying explain that the thermometer needs a "catch" to keep it on the bowl. "You put it and the first thing it does is slid in chocolate"
    The camera guy zooms on the asst. and makes it look like the chef is scolding him or something...

    Raymond is a legend and clearly a lovely man. But he does seem to be slightly neurotic at the beginning. Sometimes you can see that Raymond may not be the best person to work for (I think Marco Pierre White disliked working for Raymond).
