Thanks for the instructions brah, now i'm 100% i won't be able to make this desert.
you certainly could; you just need to prepare everything in steps to facilitate prep : 1)make the tart dough(which can be done well ahead and kept frozen until ready) 2) prepare the sorbet 3)temper and shape the chocolate 4)bake the sponge cake then cool and rest under weights. 5)take dough off refrigeration for 60 minutes or more to relax then shape(flatten)and return to refrigeration. 6)next day relax the dough, prepare the caramel, bake the tarts and cool to room then assemble the rest.

I've done enough pastry and desserts that I could probably do one of these parts. The sponge cake, the tart with caramel, maybe the sorbet after a few tries. All together and looking like that...no way. This is why you pay him to do this. Looks incredible all together.

How did you get the chocolate off the bench and onto the baking paper ?
Its poured onto an acetate sheet(clear plastic) that's sitting on the bench

He poured it onto a sheet then placed another sheet on top, you can see the outline on the table.

poor version:
just buy pie crust from your grocer or make one at home (you can use flaky or something similar to cracker or wonton) lightly oil cupcake tin, place the dough in the tin, and cook until golden brown.
You can bake a box chocolate cake or make one yourself.
Don't need corn syrup to make caramel sauce, just buy some or slightly brown sugar on a stove top, add heavy cream and salted butter as shown here.
take a hersheys bar and you can either cut a circle and flip it to smooth side for just a thicker presentation or melt it down in a microwave at low power 30 seconds at a time until the remaining chunks melt into itself when stirred. Pour it out over parchment paper put some on top and roll like shown. Refrigerate as shown and then cut. Maybe sprinkle cinnamon or nutmeg on top instead of spray painted gold. Mini chocolate chips or crush them up for more similar effect for under the sorbet, and instead of making your own you could scoop out regular chocolate ice cream with a spoon to get similar shape. Chocolate mouse is also easy to make and can be a good option too. Finally maybe some whipped cream in top instead of eatable gold. Color it yellow if you have to.

If all the ads were in this type of format, I'd probably watch more. Any advertisement video that teaches me to do something that I already really enjoy doing(although not nearly as well), I am hooked. Added bonus for quality chocolate being poured.
if you dont have a fancy steam oven use a bain marie in the bottom of the oven for moisture

Yes, i asked the same question and someone was kind enough to point out that nearly all micehlin kitchens use a pacojet. There is another channel on youtube called chef steps, they too made a very similar dessert and they used a pacojet as well.

I made the caramel and it tastes incredible but I feel like 300 g of butter is too much. I only had a 250 g block of salted Beurre d'Isigny on hand and felt I should've stopped adding it halfway through. The emulsion broke at the end but this is also a high fat content butter. Idk

Tart shell is mostly there for the texture. You shape it like a tart, so it can have a filling, and it looks nice as well. Im sure it just tastes like a moist spongecake, with a crispy tart shell.

Can someone please tell me how the chocolate and cardamom sorbet is so smooth and creamy without having an ounce of cream in it . He didn't even use a machine to churn the mixture to prevent ice crystals.
