For the chocolate based ones, you can get pre-tempered chocolate melts that are super duper easy to work with for beginner chocolatiers - melt in a double boiler to the consistency desired for you project and you’re off! You can get them usually in milk dark or white chocolate - make sure they’re not candy melts, as that will end in disaster, doubly so if you try to use a microwave! A heat proof bowl on top of a pot of water works just as well
Pretty sure all covuture comes pre tempered and once it melts back down you have to re temper it as all the sugar crystals change

What is tempered chocolate?
@@corneliusdinkmeyer2190 it’s plain chocolate that has been heated and then cooled for making chocolates/chocolate bars/etc so it has a glossy finish and doesn’t melt in your hands from touch … buying pre-tempered chocolate for baking means it has already gone through this process so all you the home chef has to do is melt and use however your recipe / design calls for it
You make it look so easy. I imagine these are actually very difficult to master. I find it simply fascinating.
Most of these are actually quite easy they just probably won’t look quite as good your first time
To master? Yes, very hard. To learn? No, not hard at all. However, you need a good understanding of the physics of chocolate, caramel, and the other ingredients, and practice - LOTS of practice - to master these tricks of the trade. It takes knowledge and skill just to get the chocolate to behave, or getting consistent results from the baker's etc. At that point, you are a Journeyman, and can be truly called a Baker or a Confectioner.
Me? No, I'm not even a Novice, much less an Apprentice, Journeyman, or Master. But I have worked with some of the best... Magicians of the Edible Arts.

They will work for tampered chocolate...not just melting the chocolate... and it's freaking hard
some of them (like the hand) are actually impossible to make the way its shown on the video. And a lot of those things would be stuck (like the caramel works)

Gotta love how the instructions spell out “new” comb. Always nice to have that little reminder not to use a comb covered in hair as a dessert tool.
I love that it says NEW comb, just in case you rush upstairs!

For the carmel nests, my dad does make a Swan using butterscotch, then makes the nest and puts little mini egg sweets into them to make it look like an actual nest.
I honestly read this "camel's nest" and wondered what I was missing😆

The tricky part is getting the caramel to the precise temperature that makes shaping it possible.
And for chocolate none of that stuff works if it isn't in temper.
Getting the results you see in the video is the result of a lot of practice with fundamental skills like chocolate tempering. Then you can get creative with shaping it.
I WAS LITERALLY THINKING THIS
I was looking at this and thought "but wait... dont you have to temper the chocolate first??" but im not a pro or anything so i wasnt sure. Im glad im not the only one that noticed that.
You can also just use compound chocolate if you're not confident in tempering chocolate.
I’ll use the microwave Method
Compound will never set up hard enough to hold it's shape for those small, delicate pieces. That's the kind of stuff candy bars are made from. Soft, and melts almost immediately when you touch it.
I wish they'd be more carefull with their indications in this, of course you cannot detail everything, but people are not carefull... and, telling them to use bubble wrap, which by definition, is NOT legal to use in cooking in a country like france because it's simply not hygenic...
When you know people are just gonna go "Ah yes I shall take this bubble wrap that has stayed in this shipping box and rince it under water
Also no matter where you live, I'm pretty sure the balloon trick ones are like... completely illegal, 1, it's not hygenic, 2, when you pop the balloon the air you blew in, with your saliva, is going to get shot out everywhere, basically the same as spitting in a plate, but pretty
Oh and telling people to use a new comb is nice, but please wash the comb before using it, new isn't clean

One thing they did not mention but they should. Make sure you always use TEMPERED CHOCOLATE 🍫 if you just melt.your choccy it won't get hard and will start melting when you touch it. Also make sure to be very careful when working with caramel as its super super hot and can really burn you!

I've tried several of these. Wow they make it look easy.
I did a cookies & cream cake and used white chocolate to make the "splash" over the bowl. It turned out cute.
I'd like to try the bubble wrap "honeycomb" with the sugar "wings" to try and make a bee cake.
