Never having them before, nor knowing what they were, she found them to be delicious. So, she ordered more. When my father finally told her what they were, boy, she was not so happy! When I was a little guy we were on vacation and we stopped at a dinner in Wyoming and I ordered rocky mountain oysters not know what they were and my parents and waitress laughed so hard. Thank God they told me what they were. I went with sausage and eggs instead.
Being from Florida we eat fresh oysters all the time but never had the baked, that is until this weekend. Going to my favorite fish monger and get me a bunch of fresh oysters and baking them up. As usual I will call the neighbors and share the food! God bless you, Shannon and of course the Beagle!

Love Oysters fried and on the half shell. Tried some Rocky Mountain Oyster in a little place called Moscow, KS. Waitress there said "Everyone was nuts about them".
We used to have these after branding and processing the calves! My mother-in-law would cook them up for an afternoon feed and that recipe was lost along the way. Thanks for the memories and recipe! - Marc
I loved every minute! The recipes all sounded good. Some of my favorite high school memories are of the FFA Christmas mountain oyster fries we used to have. They were sliced 1/4" thick and well-breaded. Man, I'm making myself drool! Mmm mmm mmm!! 😃😍
When I lived in South Carolina we would buy oyster clusters by the bushel. The best way to do them was to smoke them until they opened. The salty liquid that came of of them was delicious. I think that that is one of my better memories of coastal living.
I remember cutting young bulls with my father and grandfather here in Kansas, my grandmother and mother cooked oysters with the same recipe you did, they are good, now I found a great sauce for them thanks.
I grew up on a farm where cow/calf beef cattle production and burly tobacco was the mainstay. I had cut numerous calves growing up but had always given the testicles to our farm dogs, to which they consumed whole hardly or threw them at my sisters. It wasn't until I was stationed at Naval Air Station Memphis, that I had my 1st culinary encounter with Mountain Oysters. A friend that my dad use to work with had a row crop farm just north of where I was stationed and an acquaintance of his had a dairy operation where they were also raising steer Holstein calves for the market, hence the supply of oysters. There were no ladies in the area for the cooking or consumption, just a bunch of old West Tennessee Farmers. I was highly impressed with all aspects of the calf fries and would recommend to anyone that has not tried them to do so.

You eat prairie oysters raw? Or the ones from the sea? We eat the ones from the sea raw here in the US. Usually served with lemon and horse radish and possibly a tiny dab of hot sauce. Not enough to obscure the flavor of the oyster. Growing up on the west coast, these were always served raw. I didnt actually know they were served any other way
I live in Norwalk and have had Oysters all over the world. By far, with no exception, Bloom Brothers Oysters are the best oysters I have ever tasted . . . Hands down, no exceptions!
Hey Ken, great job! On the BBQ end of it, you don’t have to shuck the oysters. Just wash (scrub) them clean and put’em on the grill. The good ones will open up when they’re steamed and ready. Save the liquid broth and put in your seasoning. And don’t eat the ones that don’t open. They’re bad. Thanks again!
Not true, I live near Netarts Bay, one of the greatest Oyster bays on the west coast and eat oysters multiple times per month. The statement that ones that don't open are bad and not fit to eat is simple an old wives tale and not true.

Also, try this: bbq sauce, liquid smoke, garlic, Chipotle powder, lime. 😋 One more: minced tomato, onion, garlic, bell pepper, dash olive oil, butter, parmesan, lime. Oregano n Basil (optional, but so is everything)

The absolute best way to cook an oyster is to roast or steam them til they open on their own. And Bulls Bay cluster oysters are better than any oyster on the East Coast. Calf fries are scrumptious! I've had them many times & have always wanted more. Lamb fries are great too! I may be from NE OK, but we do some fine country cooking here too! I don'gt think we're as good as the folks in SW OK, but not too shabby. Good to see you sharing these types of recipes for those who are uninitiated.
Kent those Rocky Mountain Oysters look great and I really enjoyed the different recipes for the oysters from the sea as well. my favorite way to eat them is raw with a little shot of Louisiana hot sauce.

I must say I’ve tried a few of your concoctions and have made even some of the pickiest people I know ask for another round. I sure enjoy the creative things you add to meals that others wouldn’t think of and I have a Nhac for doing that myself. Garlic doomaflotchie 😂😂!! Those calf fries look great. Cowboy Kent, is there a reason you have to peel them before cooking? Guess it makes sense when you are making bite-sized pieces, but what if you cook them whole? I was trying to impress some cowboys who were working the calf crop and I said I'd cook up lunch, including the calf nuts. 😂😂 I knew enough to take them out of the 1st sac and wash them, but I didn't peel them, and then I pan fried them whole. 😂😂 Of course I seasoned them and added lemon or lime juice when they were done. But during the sauté, they burst open and ended up looking like little lobster tails, so the casing was more like a sausage casing and the good part kind of revealed itself at that point anyway. I thought they tasted pretty good that way, but it was not a traditional presentation to say the least. 😂😂

Kent, Coming from the Gulf Coast try this next time you cook those "East Coast" oysters try smoking them. Down here we use a good smoking wood like pecan (or maybe mesquite where you're from) add a little butter, slice of jalapeno & parmesan cheese and smoke. I think you'll love them, there so many great ways to eat oysters....
I was hoping that Kent would show me a way to do oysters that I haven't tried yet but sadly that didn't happen. I keep trying oysters when they are prepared a different way but still don't care for them I guess the only times I've tried them is when I really wasn't hungry.
I must admit; being a yankee growing up in the Southwest, I aint too keen on the idea of castratin' anything. But, the cowboys have been around for over 100 years, and I'm sure they have a logical reason behind castrating their bulls; I'm sure ole' Kent Rollins can tell me the history behind many cowboy traditions 200 times over and then some! That being said, I am curious on how Rocky Mountain Oysters taste. I mean, if beef tongue can taste good, I don't see why them 'oysters' can't! Haha! Thank you for the videos, Kent. We get fresh oysters from near the coast here in California and like them simple. Shuck and then put in the half shell on a grill with a wee bit of fresh grated parmesan cheese and then grill until cheese is melted. Or we sit and shuck and eat raw. Have had lots of rocky mountain oysters. Justice Sandra Day O'Connor writes in her book Lazy B:Growing up on a Cattle Ranch in the American Southwest of branding, castration season on the cattle ranch she grew up on and how when her future husband John came to the cattle round up it was the first time he had ever had fresh rocky mountain oysters
I love me some oysters and those first two looked mighty fine. I guess you had to cook them since you have a cooking channel but they are just fine straight off the shell.

Calf fries are scrumptious! I've had them many times & have always wanted more. Lamb fries are great too! I may be from NE OK, but we do some fine country cooking here too! I don'gt think we're as good as the folks in SW OK, but not too shabby. Good to see you sharing these types of recipes for those who are uninitiated.

Kent those Rocky Mountain Oysters look great and I really enjoyed the different recipes for the oysters from the sea as well. my favorite way to eat them is raw with a little shot of Louisiana hot sauce.

Garlic doomaflotchie 😂😂!! Those calf fries look great. Cowboy Kent, is there a reason you have to peel them before cooking? Guess it makes sense when you are making bite-sized pieces, but what if you cook them whole? I was trying to impress some cowboys who were working the calf crop and I said I'd cook up lunch, including the calf nuts. 😂😂 I knew enough to take them out of the 1st sac and wash them, but I didn't peel them, and then I pan fried them whole. 😂😂 Of course I seasoned them and added lemon or lime juice when they were done. But during the sauté, they burst open and ended up looking like little lobster tails, so the casing was more like a sausage casing and the good part kind of revealed itself at that point anyway. I thought they tasted pretty good that way, but it was not a traditional presentation to say the least. 😂😂
I have always peeled mine, they make for better and easier cooking, thanks for watching

Kent, Coming from the Gulf Coast try this next time you cook those "East Coast" oysters try smoking them. Down here we use a good smoking wood like pecan (or maybe mesquite where you're from) add a little butter, slice of jalapeno & parmesan cheese and smoke. I think you'll love them, there so many great ways to eat oysters....

I was hoping that Kent would show me a way to do oysters that I haven't tried yet but sadly that didn't happen. I keep trying oysters when they are prepared a different way but still don't care for them I guess the only times I've tried them is when I really wasn't hungry.

I must admit; being a yankee growing up in the Southwest, I aint too keen on the idea of castratin' anything. But, the cowboys have been around for over 100 years, and I'm sure they have a logical reason behind castrating their bulls; I'm sure ole' Kent Rollins can tell me the history behind many cowboy traditions 200 times over and then some! That being said, I am curious on how Rocky Mountain Oysters taste. I mean, if beef tongue can taste good, I don't see why them 'oysters' can't! Haha! Thank you for the videos, Kent. I do love some good crispy calf fries
We get fresh oysters from near the coast here in California and like them simple. Shuck and then put in the half shell on a grill with a wee bit of fresh grated parmesan cheese and then grill until cheese is melted. Or we sit and shuck and eat raw.
Have had lots of rocky mountain oysters. Justice Sandra Day O'Connor writes in her book Lazy B:Growing up on a Cattle Ranch in the American Southwest of branding, castration season on the cattle ranch she grew up on and how when her future husband John came to the cattle round up it was the first time he had ever had fresh rocky mountain oysters
I love me some oysters and those first two looked mighty fine. I guess you had to cook them since you have a cooking channel but they are just fine straight off the shell.
I do like them right out of the shell and a cracker
