    It’s been forever since I have had a Cornish baked hen...mom used to fix them on Sunday while we were in church ⛪...u and I grew up in the best of times. I thank my dad and mom all the time. Moms in heaven now but she knows I appreciate everything...dads 95 ...

    Back for a refresher on this recipe. I've made this a couple times and it makes a fine Sunday dinner. A pot full of boiled potatoes makes a good home for the gravy. Thank you again for this recipe and God Bless to the Rollins family and all their fans.

    I ran a Cowboy Kitchen for a season up in Surprise Valley, Modoc County. Cooked day to day meals, fed the Brandings, Castrations, Paddocking, etc etc. Birthdays & other Special Events. These Cowboys & Buckaroos ... Buckaroo is a next level Cowboy from what I could discern ...were all hearty & grateful eaters, but very few would choose Chicken if they had a choice. They tended to leave the Chickens for the Ladies...... Love the show & sharing of information Sir. May the Lord continue to take a liking to you👏🏾🤙🏽👍🏽

    Your home cooking is amazing! You make it look so easy but I’m sure outdoor cooking with keeping the temp right and maintaining it is work of love.     Thank you Kent and Shannon for another awesome video! It almost brought tears of happy nostalgia! Long story short, when my ex and I split she got the apartment and I moved onto my sailboat. My parents came to visit for Thanksgiving and all I had to cook on was my little diesel stove. So, instead of a huge turkey, I made cornish game hens! One at a time in my little cast iron pot/skillet using almost your same recipe! Complete with the bacon wrapping! I wish I had known the butter inside trick though!! And, also it took about 45 mins for each one, so my turkey dinner was more like an evening of cornish game munchies... Anyway, I hope you guys are having an awesome new start to the year!

    Made some of these little yard birds this afternoon. Followed Kent's guidance except I put the dutch oven in our kitchen oven (it was too hot outside for a fire) and threw some mushrooms in my gravy. Served everything over a bed of wild rice. Kent's Red River Ranch seasoning with olive oil, bacon, butter, lemon and chicken broth made the prep quick and easy. Thanks again for herding us in the right direction Kent.

    4 Michelin Star rating on that recipe butter and bacon cannot go wrong with that. Mom always made fried chicken with boiled potatoes and cream gravy.

    You just reminded me, I used to buy live chickens at a city store. I'd pick the one I wanted from the shop window. The storekeeper took it in back, killed it, cleaned it and scalded it. I singed off the pin feathers on my gas stove top. Can't get fresher than that. I can't wait to try these game hens with your gravy! I always use cornstarch for my gravy too. No lumps ever. Biscuits, oh yeah! And turnip greens! Nice to meet you, Shannon! You sure are pretty!

      Made these again for Saturday dinner. Problem: This makes a lot of food. I baked two hens for the wife and I which was more than we could eat. The leftover hen want back into the gravy and was served over buttered egg noddles for dinner tonight. Delicious!! I think it was better as leftovers. Well done partner, this is a keeper recipe.     I'm making this for Sunday dinner this weekend! The chicken aerobics part was funny. I love all the outdoor cooking pages. Especially Cowboy Kent's page and Townsend's page. They virtually transport you back in time with their videos. Educational at the same time.

    OMG!! YUMMY. I bought 2 hens for new years and never cooked them...bought a Dutch oven today...now I. find this..hens are on the menu soon with baby red potaoes and green beans n bacon...yes and of course gravy!!.. maybe even some cornbread...come a nice day

    Tonight I felt like game Henson. Adopted your recipe for over and pretty much followed your procedures. It never did lose any of its fluid. When cooked I removed the hen's, then strained the fluid into sauce pan. I had no corn starch so I used Wondra. I can never bring myself li f to use anything out of a can. I added a half pound of fresh b it from mushrooms to the fluid. Heated through fluid, added the Wondra, and let it thicken. Lastly, I added the heavy cream, reheated it to near boil and served. I never once tasted the dish but I wasn't disappointed. The gravy was delicious! The hen feel off the bone and the whole business turned out great. This recipe is very easily adopted to the oven!

    Thanks so much for the recipe. Growing up, my Mom cooked these often and with a white gravy in the oven. One per person and always a good meal. Will fire up the DO outside, weather permitting and make these babies over the coals!😉👍🇺🇸

    Growing up, my mother used to make my brother/sisters our own cornish game hens for Thanksgiving each year and mine was the only one brushed with bbq sauce..lol....good memories.

    Awesomely delicious Kent I'd try some of your taters and carmelized onions with it. However with the gravy bonus it's a tuff choice between those and a good mashed potato. Thanks to Shannon for the work behind the camera, her giggle when the hens were doing aerobic exercises killed it. Can't forget beagle without his approval we wouldn't know how great it really must taste. Be well.

    When I do my pigeons I rub 'em down with butter, an fill 'em with pearl onions & garlic cloves!!
    I never thought to dress 'em with bacon!! Thanks for the idea!!

    I tell you Kent,
    between those little hens, the gravy and your presentation, ... you do really knock it over the fence!!! This is something I got to try!!! I keep forgetting to say this, ... I know you’re the star of the hour, but you tell your little princess she does a hell of a job with that camera!!!
    Oh and another thing, I’ve got some really bad hearing from working on some jets, but I heard her busting a gut laughing in the background!!!

    Made this in a oven set at 400 and finished with a broil for 10 min
    and it was perfect. The gravy sends it over the top!!!

    My wife made these mini birds tonight, she did. I must say they were wonderful, they are. The Star if the show is the gravy, it is. I think your ratio is off though, 2 fellas for one bird, I think 2 birds for each fella. Seriously though, it was wonderful and a definate repeat. I like to eat all poultry, but i guess some people might be surprised that turkey is my least favorite, and i don't eat it unless i deep fry it in my deep fryer or smoke it with about 70% hickory and 30% white oak. I do not even care for mesquite wood.

    Thanksgiving is just around the corner so I will relate a little story concerning Cornish game hens and the approaching holiday. A friend of mine, on the eve before Thanksgiving, roasted one Cornish game hen. His mother lived across the street from him. She had a big turkey cooking overnight in the oven and said friend sneaked into her house around 3 0r 4 A.M. and replaced the little game hen with the turkey. He took the big bird back to his house to finish cooking it. Around 9:00 the next morning, he went over to visit--and to see how Mom was taking his practical joke. Can't print here what she said to him, but their family had a great Thanksgiving anyway.

    Oh my my, this looks and sounds out of this world delicious. I must make it. So now, if someone doesnt have one of those fancy dancy dutch ovens and a campfire and coals like you have....could it be baked in the good 'ol oven? What temp would you use and for how long? I am predicting, when I make this we just may founder out on it LOLOLOL. Ohhhhhh Love you guys.

      325 covered for about an 50 minutes then remove the cover and baste and cook until golden brown or internal temp is 165

    Cooked Kents Cornish Hens w/Bacon last Sat!! Used my indoor Electric Grill and 14" Cast Iron Skillet.. This was the BEST iv ever made and it is Now a Sat Special at the Gages!!😃

    👍. Marinated overnight,We Spatchcocked that hen, in pan with broth, garlic a white wine mushrooms and broccoli- previously frozen. Serving with mashed Potatoes and Mac n cheese. Cooking right now,Ten minutes left for cooking time,where we'll add bbq sauce to the skin side of hens.Thank you, chef K.Rollins, for the lemon tip, didn't have fresh so we used bottled lemon juice.
