    Im an old Southern fella and when a watch Kent, Shannon and the four-legged people, it just takes me home to a time when Mom had the most wonderful smells in our kitchen .
    The old wood- farred Queen Ann was cherry red and all us kids done with chores and washed up.
    Dad would come in and it was Sunday or Saturday in the South.
    We didn't have much but we never lacked for anything.

    My GE microwave from 2005 finally crapped out. At first ruclips.net/user/postUgkxO_Bc204MGjxDl87cOKcdgaRhzSqGmv_g I was unsure because I was looking for something with the exact same features. Found it with this one. Interior space cavity was large, but the outside was smaller than my old one. I love the one-button push for 1-6 minutes, and the 30 second add or 30 second start. and MOST IMPORTANTLY, I love how you can adjust the power level during cooking. The reviews said it could not be done, but this marked all the other boxes. and happy to say, it does. I can hit 1 minute start, and change the power level from 10 to 5, 30 seconds in, without interruption. my favorite feature!

      @@CowboyKentRollins I so wish there was a working substitute for cooking wine! I know the wine works chemically on food while it's cooking.
      But, I was such a drunk for 30+yrs, and finally sober for 9yrs, I do not dare to have it in the house...I love your videos...Thank you...🇺🇸 😎👍☕

      @@lilblackduc7312 you can use really any acid. So what I would do is increase the lemon juice and mix with chicken stock. It won’t be the same but it would still be delicious. Wines work as an acid in the food which is a flavor enhancer. You can get that from lemon juice and then the chicken stock would create essentially a pan gravy. Congrats on being sober, and never think a dish is out of your reach because you avoid the booze! Enjoy cooking and god bless.

    I'm going to try this recipe with Cornish Hens. I'm just cooking for myself. A little trick if you don't have twine or fencing wire is to cut a slit on each side between the thigh and butt flap. then tuck each leg into the opposite side slit. It also helps hold the butt flap up.

    This is my favorite chicken. My wife and I make it like this. We normally use our convection. Run it at 350 for 35 minutes on the halfs. Kick it the rest of the way in the cast iron. I never rinse chicken. Always brine em. Torch on the pins for the win. I fry my steaks too, get a better sear and crust, no steam.Beautiful set here.🐸🍺🔪🔥

    My mother used to put a frozen bag of lima beans in the bottom of the roaster around the chicken, and the beans cooked in the chicken drippings were out of this world!

    I worked on some quarters for a day, only to have a twig trip me up. The entire pan hit the dirt. Little warm rinse, new mist, and more seasoning made it taste like it never hit the ground.😋

      I learned back in the service on KP washing dishes that the water needed to be 140° to kill bacteria. ( had to use two pair of gloves.)
      I really don't worry about things that are cooking (except chicken) if it is going to reach an internal temp of 140° or more. Here in West Texas there is always dirt or sand in the air, so stir.
      "Marry an an enlisted man: they know how to cook, clean and take orders". 🤠

Although I've cooked with my cast iron for years I've actually improved many of my techniques using your guidance from these videos. My wife of 30 years this year is even impressed how much my cooking has improved. As someone who loves the Homestead and the great outdoors I have to thank you.     The chicken just went into the Dutch oven. If it smelled that good raw, I can't imagine what it's going to smell like cooked. Thank you for teaching me this. Love your channel. This is definitely going to call for some after-dinner cowboy coffee. Wish you could join us.
