Perfect Char-Grilled Oysters

  • Easy char-grilled fresh oysters cooked over Cowboy Lump Charcoal.
    Daniel is showing you how quick it is to make this killer recipe at home! It starts with an easy tarragon infused butter sauce and a hint of heat from truffle-infused hot sauce. He shows you how to finish them off by drenching the oysters in that butter bath and finishing them over the flame with a little sharp cheese. All ready in under 20 minutes.
    He's using the Cowboy Cauldron today, but this recipe is great for any grill where you can put the oysters over direct heat.
    Ingredients:
    ► 5 lbs fresh oysters
    ► 2 lbs butter
    ► 2 tbsp fresh tarragon, minced
    ► 4 to 5 tbsp Truffle Hot Sauce
    ► 1 tsp freshly ground black pepper
    ► 1/2 cup grated parmesan cheese

    I'm so glad I found this video!! I JUST made some steamed oysters with garlic and butter but I shucked it first and it was soooo difficult. I wish I saw this earlier lol..but now I'm going to try this method. Thank you so much!

    We were seeding oyster beds out front of the house in the 60s, so we just get wet when a hankering strikes; pop use to put a touch of salt on the rim of a budweiser & pop down a half dozen with a cherry tomato most nights before dinner; several of us have annual hundred head or more oyster roasts; but I ain't never heard of anybody sniffin' one.

    You only need to use a 2-3 chunks of wood, you're just using it for the extra smoke flavor. It isn't the heat source. Also it will smoke/smolder better if you put the wood chunks down first then pour the coals over the wood.

    Looks awesome. Question though. Why wouldn't you shuck them first then put them on the grill? I have an oysters pan that I put right on the grill. Is it a moisture thing? Well done my friend. Jimmy from New Hampshire

      Hey Jimmy, we grill em both ways. For this one we wanted them open to we could get that smoke flavor through and really drench them in the butter. That's the only reason. We also like letting them open naturally under the heat too

    Great video! Alright when I went to go try the grilled oysters for the first time, I didn’t anticipate one major problem… after the oysters popped open and I took them off, to open up the top shell, little tiny bits of the shell were cracking off the edges as I was prying then open, and bits of the shell ended up getting down into the bottom half. Uuugh! This was so annoying. If you know how to avoid this issue or what I was doing wrong, I’m open for suggestions.

      We're so glad you tried this recipe! 🙌 The best way to make sure that you eliminate the as many of those little bits as possible is to scrub the oyster well to clean it prior to cooking. Then carefully, peal the top shell off prior to eating.

      Because we are cooking hot and fast oven an open fire pit, the oysters pick up enough flavor. Just like food right over a campfire always picks up some flavor, same idea!

    An open oyster doesn't mean it is bad, it means it is breathing and has probably been out of the water for a while. If that open oyster doesn't close when you tap it with another oyster, then it is a bad oyster.

    I do this but put spinach, Romano cheese, a cupful of absenthe on each oyster , I call it grilled oysters Rockefellar.

    Do yourselves a favor and shuck the oyster first and wash them. Then place on the grill with your butter and garlic. No one wants grit and sand in their oysters.

      A good quality oyster shouldn't have any of that inside it, and washing when would remove the salty sea water. I'm not too sure elsewhere but nice Florida oysters there's never any problem. However shucking the top shell off first will just safe some time and you can season with whatever first then grill on the half shell. If you can shuck okay you shouldn't push in any dirt or shell
