Growing up in NM, tamales were always part of Christmas. I always plug into my local tree while camping in NM woods to get my true green energy. You made a tamale that would make all those mamas proud of you! Merry Christmas and Happy New Year too.
Never thought about doing in the crock pot. Gonna have to try that with a smidgen of liquid smoke. Haven’t made tamales in years, always slow cooked them on the stove. But I did make home made enchilada sauce and poured some on top of the tamales. 😋😋. Your dish looks delicious, Kent. 👍👍👍

I started a new tradition in my family 10 years ago. Rib Roast for Christmas. I was gifted a Ronco Rotisserie oven fir my wedding 24 years ago. That is where I cook it. You have well done and charred on the outside. Rare in the middle and everything in-between... in-between.

I will never forget what my Vietnam Vet leaders went thru and how they were literally spat upon when they came "home" and how well I have been treated with "thank you for your service." I didnt know what to say for a long time and I did multiple tours and came up with "You are Worth It." I dont like city values but we country boys still know what bathroom to use for Gods sake. My cooking is getting better thanks to guys/channels like Kents and others. I get my retirement pension next year and believe he offers training on the range in a tent for a couple days. Sounds lik a blast and I was Infantry. We did not sleep in tents lol. Helmet for a pillow lay down on the ground and you were out cold and 4 hours of sleep was a great night! And I love it outdoors and a blessing from that is a tent is luxury. Clean water is a luxury. Buddies are more important than the powerball lottery and we have everything we need in the country. My best holiday wishes all. Remember, its supposed to be about somebody who gave his life to save others. Not material gifts.

Merry Christmas from South Texas, Cowboy Kent! I tasted my first tamales over 50 years ago at my grandparents’ house, made by their neighbor, Mrs. Ortiz. One of those childhood flavors you never forget and could never find again. I am fortunate to work with a wonderful lady who shared the tamale making tradition with her parents. She nearly gave it up after they passed, but changed her mind, thankfully. Her coworkers purchase all she can make. I take 8 dozen each year. They are so close to that childhood flavor memory and bring great Christmas spirit to our house. We lost our best little buddy a couple of weeks ago. I was reminded of your sadness when you lost yours. Such a difficult time, but so thankful for over 13 years of companionship and happy times. My first tamales were from a street vendor in McAllen Tx. After the laughter and teasing died down, I figured out I had to remove the corn husks to eat them. At that point, I decided they were pretty darned good! In fact, those were the best I've had since and I've had quite a few. Nicely done, Kent, I'd like to try some of yours! With our family it went form me watching my mom make tamales when I was a child, to now we make them together every Christmas or New Years. The only big difference I can see here is my mom adds a good helping of lard into the masa for maximum smoothness.

If anyone else is looking to make tamales, one trick i used to help spread the masa faster is using the smooth side of a wet corn husk that was previously sitting in water with the other corn husks. Press the corn husk down on the masa until you're happy with it, then simply peel your smoothing husk off. This improved the speed of production and quality greatly for me.

I just love tamales. I made some years ago around Christmastime with hamburger meat and my sauce was made with 3 kinds of chilis (including serrano). I used a huge steamer and covered it all with leftover corn husks, but I didn't know about the pennies. Making my tamales did take a lot of time, but it was so worth it and delicious. The best ones I ever had came from a little old Mexican Lady that use to bring them to Tysons for night shifts "lunch" and I would buy them off of her. I didn't know I liked Tamale's until hers. I haven't seen her in years, and I will tell you this, I wished so much that I would of been able to get her to teach me how they did them. Every other Tamale I compare to hers. I don't know if it was her family recipe, or the region she had been from or what. It's been like twenty years. I can remember her face, but not her name and I crave those Tamale's. gosh, I haven't had a tamale in years, local lady had them one year, and they were SOO dang delicious. I haven't been able to go back since sadly, so this is extra comforting ^_^
I had never had an authentic tamale until I worked in Biloxi, Mississippi about 2007. I was there for my firm to work rebuilding the bay bridge to Ocean Springs from hurricane Katrina. A local Mexican lady sold them out of her house every day and they were real tamales! Spicy and very delicious. At least twice a week our crew would chip in and buy a couple dozen tamales from her for lunch. I always looked forward to eating a couple of them! Fast forward a few years and I had to go back to see how our work had performed on a vacation trip. The tamale lady had sadly passed, but her daughter had taken her place. I bought a few tamales. Nothing anywhere near the flavor of her mother's tamales. I was disappointed but will always remember my first tamale experience and how flavorful they were. I encourage everyone to at least try a true Mexican tamale. You won't regret it if you love mildly spicy food! It is wonderfully different from most bland foods you have ever tried in your life.

Mr. Rollins...I appreciate your recognition of our military and veterans. I thought about you and your recognition of them this morning when my wife and I were stopped at a red light and were behind an SUV with a great sticker in the rear window. It said:
"Anyone who disrespects our flag
hasn't been handed a folded one."
I read that and thought about the lump in my throat when I was handed the folded flag that had covered my dad's casket. Mr. Rollins, your videos are all entertaining and the recipes are excellent but I have to tell you that your love of country and the respect you show our men and women in the military and our veterans is the kind of thing that makes this the greatest nation on the planet. I simply wanted you to know that I appreciate your closing remarks at the end of each episode. Thank you and I wish for you, your bride and your taste testers a very Merry Christmas.

Dude, you're killing me with this recipe. 😂 I am dying for a real tamale. So glad I ate my fill growing up and early adult years! Love what you did with the masa. In the assembly line was the spreader and folder.
I personally like to eat my tamales with a little bit of salsa and sour cream on them but any way you eat them is good God bless and Merry Christmas to you all

gosh, I haven't had a tamale in years, local lady had them one year, and they were SOO dang delicious. I haven't been able to go back since sadly, so this is extra comforting ^_^

I had never had an authentic tamale until I worked in Biloxi, Mississippi about 2007. I was there for my firm to work rebuilding the bay bridge to Ocean Springs from hurricane Katrina. A local Mexican lady sold them out of her house every day and they were real tamales! Spicy and very delicious. At least twice a week our crew would chip in and buy a couple dozen tamales from her for lunch. I always looked forward to eating a couple of them!
Fast forward a few years and I had to go back to see how our work had performed on a vacation trip. The tamale lady had sadly passed, but her daughter had taken her place. I bought a few tamales. Nothing anywhere near the flavor of her mother's tamales. I was disappointed but will always remember my first tamale experience and how flavorful they were.
I encourage everyone to at least try a true Mexican tamale. You won't regret it if you love mildly spicy food! It is wonderfully different from most bland foods you have ever tried in your life.
