  • If it is possible to make hand cheese, as well as any other string cheese with powdered milk, or on the contrary it is not possible is a controversy that has two sides. In my opinion I believe that it is possible but we must prepare the milk in such a way that it has proteins and fats that when curdling and heating the curds the paracasein fibers are aligned to allow the curd to stretch.
    In this case we couldn't make it and things didn't go as planned, but we think we have the solution. And although we didn't manage to make the cheese stretch moderately, which tells us that we are on the right track.
