This was a big hit. I fixed it for my husband for his bday breakfast Sunday with scrambled eggs and he loved it. Once the eggs were done I only put enough for his meal so the next day he could fix another two fried eggs and have the rest again. He did just that. It was hard for me to not dive in but on a diet. :)

By the way, I broke the yokes on purpose for my egg and left the others whole for my husband. He loved it! You are absolutely correct - those potatoes must be cooked just right. Use the recipe in the description if feeding two. His printed recipe ratchets up the ingredients a lot (e.g. 4x russet potatoes) but feeds four easily. My goodness, that is one phenomenal looking breakfast. This is an appetizing meal that would be perfect at any time of the day or night. The only slight adjustment I’d make is to add some sliced fresh jalapeño or Serrano peppers for the spice that many folks like in their meals. My friend, you’ve definitely hit it outta the park! That is one of my go to meals when I'm running low on groceries and don't really have a plan. Difference is I cook up the "hash" push it to the side, fry my eggs and put them on top of the hash on my plate with the egg yolk still runny to spread through the hash...yum!

It's a meal that allows you flexibility, bc you can substitute pork sausage for bacon, or hit it w/ red bell, stretch it w/ dirty rice, etc. I think some Videlia onions would be delicious in it. I prefer over-easy eggs. Farm fresh are the best. Love your cooking style &this channel.

Ahh this is literally my favorite meal for breakfast. Although recently I've been making grits with roasted tomatoes, bacon, potatoes w spinach. Thanks for the tip of using thick cut bacon! Also over easy is the BEST!!

We also used our cast iron pan and cooked thick cut bacon w/two Yukon gold potatoes, a red bell pepper, three eggs, and shredded extra sharp cheddar cheese. The potatoes rendered in that bacon grease gives it perfect flavor. I gotta say, this dish was bomb! And we had enough for two servings of leftovers.

I make this about twice a month. The only thing I do different is add chopped onion and mushrooms. It’s super easy and you can make alot just by adding more potatoes. I use a 15” cast iron so it fits. Great job. Love all your videos.
I love the whole process. When I make it I will be taking the eggs out of the skillet and put onto a big plate and then put the country fixings around it. Reason...less fat or greasy looking for those that want it that way. :)

I used sausage link sausage instead of bacon. I like my eggs just like you. I doubled the recipe for meal prep. My better half loves it. This will be in our rotation breakfast, at least three times a month.
This is basically my breakfast everyday, I make it a bit different but it’s the same idea. You can add whatever ingredients you want Instead of frying the eggs I fold them into the mixture, I end up with scrambled gags mixed throughout. While in the pan I mix in a bit of mild wing sauce, mild because after all it is breakfast. Not much sauce just enough that you see the potatoes change colour…..do not pour the sauce as if you were coating wings, a light sprinkle. It’s delicious and keeps you full of energy most of the morning

I used sausage link sausage instead of bacon. I like my eggs just like you. I doubled the recipe for meal prep. My better half loves it.
This will be in our rotation breakfast, at least three times a month.

This is basically my breakfast everyday, I make it a bit different but it’s the same idea. You can add whatever ingredients you want
Instead of frying the eggs I fold them into the mixture, I end up with scrambled gags mixed throughout. While in the pan I mix in a bit of mild wing sauce, mild because after all it is breakfast. Not much sauce just enough that you see the potatoes change colour…..do not pour the sauce as if you were coating wings, a light sprinkle.
It’s delicious and keeps you full of energy most of the morning
