This recipe is amazing. I made a slight adjustment. Used a 28oz can of whole Italian Plum tomatoes with Basil and used 2 of those tomatoes in place of the cherry tomatoes. Made extra sauce which was needed with extra tomatoes. Just added a little more balsamic vinegar, garlic, salt & pepper to accommodate extra tomatoes. Also remember the pinch of sugar, not on the recipe but she mentions it and adds it in the video.

Hi Jimmy, I am also a seasoned cook being Italian from a big Italian family all my grandparents were from Italy, I was 7 or 8 years old making homemade ravioli with my mom and my gramma but the best thing to do with the ground beef is to make sure you drain it really well to get rid of any fat and after you scoop out the flesh of the zucchini and chop it up put in a strainer or colander and put that on top of a bowl and let it weep out and squeeze out as much water from the zucchini as possible that will make for a less mushy filling🥒🍆🍅🌶🥒🍷🍴😉

I do the same thing.. but I make pizza boats with mine...I stuff with red onion .. bell peppers.. pepperoni.. sweet Italian sausage.. mushroom.. black olives.. a good pizza sauce .. a sprinkle of oregano....I like to put the sauce over the veggies and meat in my boats... I have seen people put the sauce in first ... what ever you like doing ...then I put fresh mozzarella cheese on top...the fresher the better... I like using the mini mozzarella balls .. they are just the right size... I kinda flatten out with my fingers and put them on top....then I bake them at 375 till cheese starts to brown and the boats are tender... pull them out let them sit for a few minutes and BAM... pizza boats!!!!! A healthier sub for pizza dough and they taste amazing ...Oh one more thing... and they didn’t do it in the video... I put just a little salt and pepper on the zucchini before I put toppings and sauce...also if the are huge zucchini.. rub a little olive oil on the outside of them after you slice and scoop them out and put salt on the outside as well... also if you want more tender veggies.. you can cook the bell peppers and onions a little before you put them in the boats ...but I like them kinda crips like on a good supreme pizza... but to each his own... I hope you guys try it.. I love them
I like how I can stuff a zucchini with almost any left over. A piece or sausage and toast add cream, butter, practically anything! I call it cabinet. I use what I have and my daughter asks for it every week! LOL

Just made it, with a few modifications, in my Ninja Grill. Skipped the egg, the parmesan and the tomato sauce cuz I hate those, and the bread crumbs b/c I'm gluten-free, used a full 400g mozarella block, added pulled pork that I got tired of, set the grill at 370°F for 30 min, covered them with foil. OMG YUMM!!!
Have been making these for years. You can vary your flavors. Sometimes I do more of a taco meat style. Sometimes I do a pizza sauce style with mozzarella and mushrooms. Can also do a barbecue sauce meatloaf style. Or even a tuna boat style. Could do an Italian stewed tomato version, or a chicken enchilada version. Many variations possible.
Oh my gosh that's tasty. Really nice flavor and texture. I would recommend though, that if you have a grand daddy zucchini (12" or more) to thin the skin a little.
I heated the zucchini halves for 1 1/2 minutes on low heat in the microwave. It made it easier to scoop out the meat. Next time, I will try one of the ideas for removing moisture from the zucchini before cooking.

I made zucchini boats-not like yours though-the other day. Because I have a gas oven, I don’t cook them on such a high temperature nor do I leave them in the oven that long. The next time I fix them, I am going to try your recipe. They looked delicious.
