    Lions Mane Mushroom
    1. Press method: press first to shape then marinade and cook to finish
    2. Raw method: marinade first, pressing while marinading and press while cooking
    3. Vac bag method: (if you have access) naturally presses and then must press before and while cooking
    Marinade:
    1 cup boiling water
    2 shots Red Wine
    1 Shot Olive Oil
    1 shot Soy Sauce
    2 Tablespoons Beet Powder
    2 tablespoons Fresh Thyme, chopped
    1 Tablespoon Garlic, granulated.
    1 Tablespoon Onion, granulated.
    1 tablespoons Black Pepper
    Add all dry ingredients to a large bowl then add boiling water and wet ingredients and whisk together.
    Choose a method shown or try all three for yourself. Let me know how it goes.

      Your Always pressing the Pans with a towel or by Hand
      What If you create a pant for This cooking Method where you Press a lever to Press IT without that effort
      Then in a Restaurant or at Home you Dont have to Deal with such force
      Older people will easily still make IT
      Thats what i thought when i saw you Video
      Im interested to evolve Things but AS Long AS ideas Help the world to change a Bit i will Tell the people what i think

      To have a press of some sort would be great. Even if you start with home cooks and move on from there. I have not eaten animals for 40+ years but your mushrooms are in a whole different realm of reality. You are amazing to be able to create things like you do. I wouldn't eat things that bleed or are red inside. It's so great that you do show food that is not the same because people are not the same. You are a magical man and I will watch your videos forever and will be looking for Frankie!!!

    I'm classically trained, graduated Le Cordon Bleu, worked in dozens of kitchens. My wife is vegan and nothing she's ever introduced me to has looked like these steaks. I'm so going to be making these and if I ever open my own restaurant, I'm going to have something like this on my menu. Thank you chef.

      I made these with only about 1/2 the ingredients you used and it was still so tasty. My lions mane were about a 1/100th 😂the size of yours but it didn’t seem to be a problem. Nice job!!!

      Not only are they delicious (and beautiful), but there are several studies suggesting that lion's mane can improve and even restore cognitive function by stimulating growth of new brain cells. It used to be disregarded as just chinese traditional medicine (eating of shark fins, acupuncture etc.), but finally the world is opening up to this fantastic mushroom that's proving to help with memory, depression and anxiety, and much more

      The whole point of lab grown is to get those essential nutrients animal meat provides without compromising the environment and obviously the morality of killing animals for food. Mushrooms although provide some nutrients, these are not rare in Vegan diets. Also the mushroom industry is huge, i mean mushroom are in the top 5 most sold fresh produce, unfortunately the market prices are controlled by a monopoly board. A pack of white button mushroom should realistically only cost a few cents.

      As a mycologist, all mushroom cultivars are grown indoors, except if the cultivar is meant for outdoor conditions. We cannot genetically modify it in a lab as it does not carry seeds, it is mycelium and acts independently cause it has a symbiotic relationship with other plants or fungus. You can have two mycelial species and have them mate to create new genetics but it's up to the fungus if it creates a symbiosis or not. The mushroom industry is large, but is done in corporate scale as to why you only see the common stuff like portobellas, button mushrooms, oyster mushroom, etc., because they grow fast and can scale fast. Lion's Manes which is another class of fungi takes longer to grow, as to why it's either foraged wild or grown indoors by smaller mushroom farms

    Hey thanks dude…im a vegan chef and use fire bowls and have cooked all sorts of locally sourced mushrooms, shiitake, kings but never knew how to get the Lions to cook well other than rubbery …so im deeply grateful for your generous sharing.     I have started my mushroom urban farming business a month ago. First batch of Lion's Mane is colonising. I am also growing some pearl oyster mushrooms and shiitake. I hope to supply the local restaurants and the local people at farmer's markets here in the North East of Scotland. I am also a chef but have never tasted Lion's Mane mushrooms before in my 30 something years of chefing (until I grew my own). The health benefits of these mushrooms are so good. Hence the reason you can't find them fresh anywhere to buy. All the growers make tinctures, mushroom powder and other supplements.

    After nearly two years of vegan eating we’ve craving old-fashioned burgers. We tried the pressing method with both Portabello & Lions Mane. We finished the cooking with time on the grill. The result was juicy-delicious mouth satisfying burger. Next time we will include a crispy tofu slice. Mr Derek, thanks for your skill, techniques and generous sharing of this recipe. As much as I despise cliches, this recipe is a “game-changer”. Now, please show us the how-to of growing the shrooms at home if you will!

      I understand that vegan has to be plant-based. But mushrooms/fungus is classified as an animal kingdom on its own, not a plant genome. It doesn't carry seeds or photosynthesize like a vegetable, yet it's okay for vegans?

      A somewhat silly saying we use to distinguish between vegans, vegetarians and others states: “whole food-plant based; nothing with a mother & nothing that’s had a face”.

      @@darrelmiller8432 Ah I see the saying. However, as mycologist, mushrooms/fungus is classified as an animal kingdom on its own, not a plant genome. It doesn't have a human or typical animal face, but it has what we call an identification spore print and family DNA lineage. It may not have a mother, but it carries the reproduction of both a "mother and father" in one organism, as it produces colonies and clusters of its families. Their job is to regulate the life plants and trees. as to why it is not plant-based. Fungus is more closely related to humans, and your body produces and carries micro-fungus especially in the gut system(that is why mushrooms is not plant)

      Mushrooms do not contain any fat as they are water-soluble once broken down, so the presence of LDL or HDL in mushrooms are not there to cause you cholesterol imbalance because it doesn't have any. Once you start adding oils to anything you cook is when you introduce certain lipids in your body. Natural fat coming from animals or natural high-density acidic oils from certain plants break down better in the body as they are HDL levels of cholesterol. If you consume fats with low-acid lipids it breaks down longer in the body causing more LDL cholesterol. Your cholesterol levels are also genetically tied to your birth and diet, as some people can break down lipids faster and some don't. Out of all the oils I founds to break down easily in the body, as well as provide good fat to your cholesterol, is Olive Oil or Pork Lard as they carry necessary omegas and acids to help break down stubborn fat. CANOLA oil is what is cut in most alternative oils you see from avocado oil/ grapeseed oil/ almond oil/ or generic low quality oils, as it's good for corporations trying to scale the sale of cooking oils by cutting it with canola. The meaning of canola is, Canadian-Oil-Low-Acid, which means it's acids are too low to break down its own fats/lipids and can contribute to more LDL(bad cholesterol) imbalance.@@darrelmiller8432

    Just made these today and I did the press first method. My omnivore husband was blown away…I told him they were mushrooms, but he said if he hadn’t known, he doesn’t think he would have picked up on it. My only issue was that the color in the center was still pretty white, so I’m curious if I smoked them a little or used dark soy sauce if that would help? I feel like I pressed them sufficiently and marinated them more like 30 minutes. The flavor and texture of these were incredible!

    We just marinated and cooked our first homegrown Lion’s Mane mushroom and it was so delicious and totally satisfying with some veg sides. Thank you for explaining and demonstrating several different ways to make them. We are sold on mushroom steaks! The next test will be on the BBQ.

    So I've been vegetarian for 17 years. I had always wanted to try this but I despise mushrooms with every fiber of my being. That said, I'll try anything once so I got some Lion's Mane mushrooms and followed your videos and holy shit they were incredible. It actually freaked me out a little how meaty they were, lol!     As a chef, I've been very interested in cooking vegan longer than eating vegan. The science behind the innovation just astounds me. Your video, this is my first time on your channel, is incredible. I've seen Lions Mane mushrooms used as steak substitutes before, but not to the capacity to yield such asceticly pleasing results.     Holy moly! I eat meat all the time but love vegan experimentation too! These look outstanding. The closest Ive seen to a beef steak substitute. We've tried lions mixed with jackfruit as a carnitas sub and it was super fabulous! The crispy shredded bits were insane and if I hadnt made it, Id hardly be able to tell it was animal free! Cant wait to get ahold of some mane and shock people with this! 😍😍🤘🤘

    I am transitioning to become vegan and you are helping me so much! I moved away from red meat and pork over 5 years ago, however, chicken and fish have been a bear to let go. I love your recipes and I think in particular what you do with mushrooms will take me over the finish line.

      I was the same. Hasn't eaten any meat except chicken and fish. Now im fully vegan. I told myself I would eat chicken on my birthday. But I never did. I watched vegan documentaries to help me. I can tell you that I caved after 2 weeks. But then I was straight back on it and after a month i was fine. I don't miss meat at all. In fact i love my food so much now that I kick myself for not doing it earlier. As a bonus I feel a lot better, in many ways. And a couple of my chronic health problems completely disappeared.

      @@Vitalascends Where do you think the herbivorous animals humans use for meat get their nutrients from? Are pigs, cows & chickens sneaking bacon, burgers and wings on the side?
      Dietary cholesterol is a primary correlating factor to the main cause of death in America- heart disease- and is only found in animals. Seems like poison to me.

    I am not vegan but I freakin love mushrooms so I will definitely be giving this a try! It looks amazing I bet it tastes delicious! I normally think of most meat substitutes as being gimmicks but this looks super legit and definitely nutritious!

      Growing mushrooms is so much fun, I have grown several kinds (including psychedelics) and they are one of the most entertaining things to observe- many of them change and grow hourly. I have trouble digesting meat anymore, and I am definitely going to try this method.

    I made these steaks yesterday, with Lion's Mane and blue oyster mushrooms from ATX's Hi-Fi Mycology. They were scrumptious. SO juicy!

    First time I've genuinely regretted not catching a video early.
    This is absolutely nuts- I'm not even a vegan or vegetarian and I intend to eat this regularly.
    Fantastic job, I think this is the closest we're getting to meat short of growing it in a lab.

      What people don't understand is that mushroom is not really Vegan, as it is an animal kingdom of its own and classified as fungus. Mushroom is not a vegetable or plant, it is mycelium.

      What's the flavor like? I noticed he used beets in one and blueberries in another, I'm guessing they help with the red color but do they make them taste really sweet or fruity?

      @@jerryballsteinpretty sure it’s mainly for the bleed when you cut. If you’re soaking it in a handful of other savory spices that will pretty much overpower any sweetness

    Derek, I have no words. Except, "freakin' awesome!". I am eager to try this but it is tough to get lions mane here, but I am going to search a little harder now. I did do your 2 skillet technique on some portabella mushrooms and they were amazing! I sliced them up and made a vegan "philly steak" with vegan cheese. It was incredible. THANK YOU so much for your (and your bother's) contributions to a healthier ME! 💗 and the rest of the world of course, lol!

    I have not had meat in 33 years and even when I did steak was not a favorite of mine, YET, when I saw the cutting of the mushroom, I began salivating...instinctively! I have cooked Oyster Mushrooms using the compression method. Lions mane is on my list. I am more than fascinated by them.

    Speaking of a "local area" mushroom farm, no joke I have one less than 5 minutes from my front door here in Port Charlotte, FL USA...they sell Lions mane and oyster too...
    Lions mane costs around $10 USD for 6 oz and oysters are $7 USD for 6 oz because I texted them after doing a quick Google searching local mushroom farmers in Port Charlotte and discovered them then decided to text to find out what they would possibly have + how much it would be to get my hands on either lions mane or oyster mushroom after you did a video on lions mane, but honestly don't remember which one though.
    I haven't been in there yet, but definitely a bit a hidden gem in my area...
    I've always been quite fascinated by your techniques that you use for mushrooms due to the fact that they look absolutely amazing and betcha the flavor is completely insane...😏😏😏😏

    Hubby got upset with me showing him a rare steak! LOL
    Now where to find Lions Mane in central Vermont…. Might have to try at Kiddo’s apartment in central FL.
