  • Today we're sharing how to make the ultimate vegan lasagne better than ever. We're making an incredibly delicious, Plant Based, No Oil (Oil-Free), Dairy Free, Meat Free, Gluten Free (optional), High Protein Lasagne based off Nana's recipe but made better and healthier. Even with that list of Free Froms it's unbelievably epic!

    My Famous Lasagna - Made Healthy! Whole Food Plant Based, Oil Free, Gluten Free DELICIOUS!
    Wicked Kitchen Lemon, Garlic and Herb Seasoning Paste
    1 TBS Black Peppercorns, toast
    1 TBS Fennel Seeds, toast
    8-10 Whole garlic cloves
    1 Lemon, Peeled with microplane
    1 TBS Rosemary, chopped
    1 TBS Parsley, chopped
    1 tsp Smoked Paprika
    1 tsp Sage, fresh - diced
    1 TBS Salt, coarse
    1 tsp Chili Flakes - optional
    Bolognese - Lentils:
    1 Coffee Cup of green lentils, soak for an hour, then drain
    8-10 garlic cloves, diced
    1 lg carrot, diced
    1 lg onion, diced
    2 celery stalks, diced
    1 can plum tomatoes
    5 TBS Tomato paste/Puree
    3 Coffee cups, water
    Tomato Sauce:
    4 can tomatoes, plum
    ½ jar / 230 ml / 1 cup roasted red peppers and liquid
    2 carrots, diced
    2 celery stalks, diced
    1 Onion, diced
    6 cloves garlic, chopped
    2 TBS Wicked Lemon Garlic Herb Seasoning Paste
    Cauliflower Mornay:
    1 sm head cauliflower, chopped
    1 potato, peeled and cut into chunks
    5 - 6 TBS Nooch (more or less is optional)
    ½ Tablespoon White peppercorns, toasted, mortar pestle
    2 clove - grind
    ½ tsp nutmeg
    1 tsp Onion Granulated/powder
    Tsp Corn flour
    Oat/soy milk 300ml
    Water
    Kale, 1 Bunch, steamed
    Regular or Gluten free Lasagna sheets
    Assemble the lasagna:
    Julienne 1 onion for the bottom of the pan - this will help prevent sticking and burning and only adds more flavor.
    Layers:
    Thin layer of julienne onion
    Sauce
    Pasta sheets
    Bolognese
    Pasta sheets
    Little sauce
    Kale
    Mornay
    Pasta sheet
    Bolognese
    Pasta sheets
    Sauce
    Mornay to top
    Cover with parchment paper and seal with tin foil over that. This will help it all steam cook and roast inside without burning the top. Cook for 45-60 minutes at 180c/350f remove from oven, take of the wraps and bake an additional 15 mins to tighten the top.
    Let rest at least 20 minutes to let it settle or overnight is best nut if you can’t wait - I get it.

    Just discovered your channel, this is my first video. I’m a former lifelong foodie, all things butter, fat, beef, etc.. Own all the Modernist Cuisine books and gadgets. Its my hobby. Unsurprisingly I learned at age 58 that I have heart disease…(duh). I went through the stages of finding a new diet that we all do, and of course landed on the only one that really works, whole food plant based! What a difference.       I‘m absolutely thrilled how you gave lasagna a complete new design 🎉 I’m gluten-free for almost 20 yrs, dairy free for 13yrs all due to health issues.     the julienned onions at the bottom of the baking dish to prevent sticking is such a great tip! onions taste sooo good caramelized in the oven

    Im a vegan private chef and I am def going to try this.. Only thing I would add is a dollop of white miso or chic-pea miso to the blender when you were making the cauliflower cheese sauce. The umami in the miso is really tasty.

      Miso works, it's just extra when trying to make this simple - and oddly enough they don't sell fresh miso in many grocers here in the U.K. which is a miss!

    Oh Derek! So many…so, so many GREAT TIPS in this video. My challenges: wipe down the chopping board after every single veggie chop. Toasted spices and garlic; cauliflower ‘bechamel’ sauce; add lentils! Steamed mirrepoire; lots of canned tomatoes. I salivated throughout that entire video. And your narrative from start to finish with snippets of your gorgeous doggy…Thank you so much for the generosity shared in all your videos. 🥰

      Adding nuts makes it pasty when cooled, without them is less expensive and helps keep the viscosity more pliable hot or cool. Plus nuts are an allergy for some. Thanks for watching!

    I absolutely love lasagna! I absolutely love food. 😂 Vegan food is just delicious food. We don't need to eat non-human animal flesh to be satiated. I ate animals and their secretions for about 30 years of my life(I didn't eat steak as a baby, lol) Been vegan for 5 years now, and I wish I did it sooner. 🌱💪🏽✌🏾✌🏾

    Gorgeous! My mouth is watering. Thankyou this is just non stop healthy helpful howto's! A lifetime ago I worked in the kitchen of a Whole Foods Market before it was Amazon, before it was Whole Foods; it was small home-town stores; the one I was employed at was called Wellsprings. People used to call in on a landline telephone and we would stop cooking to help them. Upon penalty of death no-one ever was to give out a recipe to anyone. They were handwritten on index cards. We used to joke if they ever wrote a cookbook it would sell out. Thanks for your genius in the kitchen; you've become my new favorite cooking channel!

    Yay! I passed this video several times because I did not think it would be gluten-free. So glad it is. I am a day after girl as well. When I bring lasagna to people, I always make it early in the morning or the day before so they have to reheat it because it’s always best then.

    I just discovered your channel and this is my first video. Thank you so much! I have been cooking/gardening/fermenting "healthy" for a long time, but my husband diagnosed with autoimmune disease and now has been on a majorly strict anti-inflammatory diet for a year (sugar/oil free, gluten free, plant based, corn free, nightshade free). I have tried to rock it for a year, but often need creative impulses to wrap my head around something new. With tomato season around the corner, I just can't imagine if I ferment my sauce that it could be bad for anyone not really allergic.     I love going back to watch your older videos which I haven't seen when I have the time to spare.
    But this one blew my mind!
    There's so many recipes which can be made out of this one recipe!
    Just off the top of my head you could make lasagne (obviously), bolognese sauce, a carbonara base, cheesy mac, potato bake, cauliflower bake, and on and on.
    Seriously, thank you for your videos. I've been vegan for around 15 years now and love cooking, but until I came across your channel I was starting to feel a bit stale with cooking and being very reliant on easy options such as plant based mince.
    If I get nothing else from your videos it's to just have fun with it.
    But I do get so much more than that, believe me!
    I think the next time I cook a pasta sauce I'll leave the plant based mince in the freezer and the wine in the bottle and start with the lentil sauce you've got here. I'm sure it'll be great and no doubt I'd I make it again I'll add a dash of wine as usual, but I'm keen to just try what you've done as a starting point.
    Anyway, thank you again!!

    This is only the second of your videos I watch, but definitely not the last. You make a plant based diet not only look approachable but also appetising. So much vegan content out there is only about salads and shakes and whatnot. I love anyone who keeps this whole veganism thing on a level I can handle. You rock! Thanks for the videos.

    Looks absolutely delicious! I'm not a fan of cauliflower and have avoided it since I was a kid but I keep seeing it crop up in beautiful white sauces so this could be my time to try it. Hopefully you can't taste it 😄

      hmm I love cauli! It may come to you, but don't fret if it doesn't. People keep trying to get me to eat avocado and I can't stand it! and I think at the age of 65 that is unlikely to change

      @@helenswan705 I actually just prepared and ate brussel sprouts for the first time since being traumatised by them as a child (and I'm 54) so I still will definitely give cauliflower another go soon 🙂 The sprouts were incredible...I just needed to find the best way to cook them (roasting!) and the right flavours to go with them. So happy I've added another yummy veg to my list

      @@Paula-wn6do I recommend being very careful not to overcook it. I like to top the sauce-covered cauli with a mix of breadcrumbs, herbs, ground almond and grated cheese (I am not vegan)

    I've been a professional cook and baker for a big part of my adult life. Your recipes - and this one especially, tick off so many boxes for me; interesting, creative, veg forward and, as I can see from the methods and the ingredients, delicious. I can't wait to make a batch of this lasagna. Will make a great dish for throughout the week for my family and me. I can't eat healthy evening 50% of the time if it's not yummy, or I don't get a chance to do some "real" cooking. thanks!

    I just found your channel yesterday. or the day before, and every one of your videos interest me.
    Thank you, especially, for this one.
    I am vegan and gluten-free, and it's SO helpful not to need to make substitutions, so many cooking channels don't even suggest any.
    My 3 questions are:
    Do you make your own nutritional yeast? And, if not, what brand do you use?
    And, I repeat the same questions for the nut milk that you use, as well as the pasta sheets.
