Wow, my dad asked for a second portion and he is totally not a fan of vegan swaps! This is definetely going to become a staple of mine to impress non vegan guests... Thank you!!! Made this lasagna yesterday for me and my kids and OMG, it was incredibly delicious. Made a whole deep lasagna pan and we only had 3 pieces left for today. My kids aren't even vegan and they couldn't believe how good it was. Sounds like my kids might be making a lifestyle switch. Incredible recipe! Thank you!
I made this the night before last exactly as called for EXCEPT using mushroom mince in place of the vegan mince (which would be BEYOND crumbles stateside). I used a vegan boulonnaise recipe using mushrooms on line and adapted it for the vegan mince. It required preparing a day advance to slow-cook the mushrooms. I found a mandolin slicer saved time on slicing. Overall, the lasagna was very tasty and silky-textured. I recommend using a baking pan at least three or more inches deep.
You've got to season at every stage in order to let the salt brake (by osmosis) into the cells of the ingredients. Since it's a long process the earlier the better. Heat also helps speeding it up! Just in case you were wondering why!
Thanks for the explanation, however, aren't you afraid to use way too much salt? Especially in this recipy, most of the times in pre-prepared vegan meats there is a lot of salt already. Do you know if there is an alternative for this, or just not adding it?
Thijs van Esch The oldest trick ever is your solution. Taste before adding salt, or even after if you think it has enough by itself. You never taste too much when cooking.

Not being able to eat your favourite dishes is the hardest part about going vegan. I am currently transitioning into becoming vegan and for me giving up cheese is more difficult than giving up meat. I am so happy that vegan cheeses exist.

When I tried soy milk when I first went vegan, I hated it. But then I decided to try it after few months again. And I loved it. The one thing about being vegan is, your taste buds do change.

Gaz, I just made your recipe and eating it now. It is amazing! My mother’s side is Italian, and I grew up on meat lasagna. Your recipe may be your interpretation, but it is a darn good one. There are extra flavors with the vegetables, but it has some of those classic meat and cheesy flavors I miss. Just remember that haters are going to hate. Personally, this Italian is going to keep using your recipes!
I've found that brown lentils work well as a great alternative to meat or meat substitutes. They're quite peppery too so add a lovely texture and taste 💕

I have a lot of Italian friends at uni and the easiest way to trigger them is saying things like "Carbonara, you mean that pasta dish that has loads of cream in it?" I can't help but troll them.
This comment is coming from an Italian person (yes, I saw this video many months after it was released) that's approaching vegan diet. I can say I'm not a typical Italian if for typical Italian you necessarily think about those Italian cuisine traditionalists that always complain about recipes not being right. However, who decides what's a typical Italian? I most certainly love my country's traditions but I'm 100% aware that cooking involves fantasy and creativity so I am fine with a vegetarian carbonara and vegan lasagne (it's plural - lasagne, not lasagna. I'm most concerned about the wrong use of the grammar than about the ingredients list). The thing is: it's very useful to call them that way because people recognize those names so of course if you make pasta with, let's say, tempeh instead of bacon (guanciale), with a egg substitute and nutritional yeast instead of pecorino cheese that is not a pasta alla carbonara, but that's the whole point: it's a vegan version of the least vegan Italian pasta dish so of course you have to swap everything. That makes perfect sense and if you're trying to recreate the same flavors and textures of the original recipe you might as well just call it carbonara. I think it's more a matter of nomenclature than anything else. Is it a carbonara if it doesnt have the only 3 ingredients that carbonara requires? No. Is it important that we call it differently if the aim is to recreate that dish in a vegan version? No. So people should just chill. All people I mean. Italian fanatics and whoever complains about them. I also want to point out that lasagne is the type of pasta not necessarily the ingredients you put in and we make all sorts of lasagne. Ever tried with pumpkin and mushrooms? Or with radicchio? Or with pesto? (Just naming a few that can easily be "veganized" but there's many more). So yeah.. nomenclature

I'm Italian and I feel like apologizing my self! Italians sometimes live in the past and are really proud of the Italian cuisine so they will try to hate anything that doesn't correspond to the original recipe. Of course the vegan version is not going to be exactly like the traditional one for obvious reasons. Sometimes people are ignorant and just can't make a change. Italians...move on!

I’m learning so much. Mostly what a courgette and an aubergine are. We call them zucchini and eggplant in Canada. But courgette and aubergine sound good too. Nice recipe - lasagna is bomb.
Courgettes and aubergines actually the French names if those vegetables. Since I learned english through American tv shows I learned zucchini and eggplant as well. I only learned recently that the brits uses the French words which I'm not gonna lie makes things so much easier for me :)

I just made this tonight and it was INCREDIBLE. My absolute favorite lasagne recipe I’ve ever made 😊 I’m so happy to finally have a recipe that doesn’t rely on tofu ricotta and processed vegan cheese (nothing wrong with those, just not my favorite). I left the cheese out of the béchamel and loaded it with nooch. My non-vegan husband devoured it 😊 I’m already excited to eat the leftovers!

Made this for Christmas. Absolutely phenomenal. Loved by non-vegans, too. Used a package of beyond beef and a package of beyond meatballs. It slightly resembled Greek pastitsio because of that delicious bechamel! Will be making this recipe again and again!

No need to leave it in the fridge! Just let it rest for 20 minutes after removing from the oven, and you get a nice set--but still supple--slice. This lasagna is a thing of beauty, and your little tips throughout the process are helpful. Too hot here right now for this hearty a dish, but I will definitely try it one of the first cool days of Fall. TFP!

I am not vegan, but I really enjoy vegan mince and I use it quite a lot. I can suggest to try adding marmite/vegemite (or any brand that makes similar product) to the ragú. It gives a very good "meat-y" flavour when caramelized! I am italian and I can say that my family approves too :)

Tried this out tonight. Turned out amazing. I didn't use the zucchini or eggplant because I didn't have any, instead used capsicum, mushrooms and carrots. First time also for me to attempt vegan bechamel and boy did it turn out creamy and cheesy and so delicious.. Gaz, many thanks for always delivering the goods!

How did you make the sauce? Ours came out burnt with constant stirring and never thickened

Actually I only added 2 tablespoons of nutritional yeast when the sauce was done, no vegan cheese involved. It crisped up nonetheless!

In case anyone is wondering, yes the béchamel works with gluten free flour. I used bobs red mill 1-1 and it tasted great 😍

I think alot of American vegans use tofu, for the "ricotta" substitute, but in the UK most lasagna I've ever had only had the bechamel.

I used a vegan boulonnaise recipe using mushrooms on line and adapted it for the vegan mince. It required preparing a day advance to slow-cook the mushrooms. I found a mandolin slicer saved time on slicing. Overall, the lasagna was very tasty and silky-textured. I recommend using a baking pan at least three or more inches deep.

You've got to season at every stage in order to let the salt brake (by osmosis) into the cells of the ingredients. Since it's a long process the earlier the better. Heat also helps speeding it up!

Thanks for the explanation, however, aren't you afraid to use way too much salt? Especially in this recipy, most of the times in pre-prepared vegan meats there is a lot of salt already. Do you know if there is an alternative for this, or just not adding it?
Thijs van Esch The oldest trick ever is your solution. Taste before adding salt, or even after if you think it has enough by itself. You never taste too much when cooking.
Inaccurate, osmosis is the movement of water down a concentration gradient. Salt allows water to move out of cells. It doesn’t break into cells.

Not being able to eat your favourite dishes is the hardest part about going vegan. I am currently transitioning into becoming vegan and for me giving up cheese is more difficult than giving up meat. I am so happy that vegan cheeses exist.

When I tried soy milk when I first went vegan, I hated it. But then I decided to try it after few months again. And I loved it. The one thing about being vegan is, your taste buds do change.
The easiest to veganize 4 the flesh eating family and friends is Lasagne, spag.bol , cottage pie and carbonara.

Gaz, I just made your recipe and eating it now. It is amazing! My mother’s side is Italian, and I grew up on meat lasagna. Your recipe may be your interpretation, but it is a darn good one. There are extra flavors with the vegetables, but it has some of those classic meat and cheesy flavors I miss. Just remember that haters are going to hate. Personally, this Italian is going to keep using your recipes!
I've found that brown lentils work well as a great alternative to meat or meat substitutes. They're quite peppery too so add a lovely texture and taste 💕

and red ones tests like chicken...I make Indian curry using them.

I have a lot of Italian friends at uni and the easiest way to trigger them is saying things like "Carbonara, you mean that pasta dish that has loads of cream in it?" I can't help but troll them.
This comment is coming from an Italian person (yes, I saw this video many months after it was released) that's approaching vegan diet.
I can say I'm not a typical Italian if for typical Italian you necessarily think about those Italian cuisine traditionalists that always complain about recipes not being right. However, who decides what's a typical Italian? I most certainly love my country's traditions but I'm 100% aware that cooking involves fantasy and creativity so I am fine with a vegetarian carbonara and vegan lasagne (it's plural - lasagne, not lasagna. I'm most concerned about the wrong use of the grammar than about the ingredients list). The thing is: it's very useful to call them that way because people recognize those names so of course if you make pasta with, let's say, tempeh instead of bacon (guanciale), with a egg substitute and nutritional yeast instead of pecorino cheese that is not a pasta alla carbonara, but that's the whole point: it's a vegan version of the least vegan Italian pasta dish so of course you have to swap everything. That makes perfect sense and if you're trying to recreate the same flavors and textures of the original recipe you might as well just call it carbonara. I think it's more a matter of nomenclature than anything else. Is it a carbonara if it doesnt have the only 3 ingredients that carbonara requires? No. Is it important that we call it differently if the aim is to recreate that dish in a vegan version? No.
So people should just chill. All people I mean. Italian fanatics and whoever complains about them.
I also want to point out that lasagne is the type of pasta not necessarily the ingredients you put in and we make all sorts of lasagne. Ever tried with pumpkin and mushrooms? Or with radicchio? Or with pesto? (Just naming a few that can easily be "veganized" but there's many more). So yeah.. nomenclature
@@Ketutar it's different in the UK. We have appropriated the carbonara dish and if its white creamy sause with long pasta then people will call it carbonara. Sorry but its just the truth

I'm Italian and I feel like apologizing my self! Italians sometimes live in the past and are really proud of the Italian cuisine so they will try to hate anything that doesn't correspond to the original recipe. Of course the vegan version is not going to be exactly like the traditional one for obvious reasons. Sometimes people are ignorant and just can't make a change.

I’m learning so much. Mostly what a courgette and an aubergine are. We call them zucchini and eggplant in Canada. But courgette and aubergine sound good too. Nice recipe - lasagna is bomb.
Courgettes and aubergines actually the French names if those vegetables. Since I learned english through American tv shows I learned zucchini and eggplant as well. I only learned recently that the brits uses the French words which I'm not gonna lie makes things so much easier for me :)

I just made this tonight and it was INCREDIBLE. My absolute favorite lasagne recipe I’ve ever made 😊 I’m so happy to finally have a recipe that doesn’t rely on tofu ricotta and processed vegan cheese (nothing wrong with those, just not my favorite). I left the cheese out of the béchamel and loaded it with nooch. My non-vegan husband devoured it 😊 I’m already excited to eat the leftovers!

No need to leave it in the fridge! Just let it rest for 20 minutes after removing from the oven, and you get a nice set--but still supple--slice. This lasagna is a thing of beauty, and your little tips throughout the process are helpful. Too hot here right now for this hearty a dish, but I will definitely try it one of the first cool days of Fall. TFP!

I am not vegan, but I really enjoy vegan mince and I use it quite a lot. I can suggest to try adding marmite/vegemite (or any brand that makes similar product) to the ragú. It gives a very good "meat-y" flavour when caramelized! I am italian and I can say that my family approves too :)
My mother always added a tsp or two of Vegemite when cooking minced meat.

Tried this out tonight. Turned out amazing. I didn't use the zucchini or eggplant because I didn't have any, instead used capsicum, mushrooms and carrots. First time also for me to attempt vegan bechamel and boy did it turn out creamy and cheesy and so delicious.. Gaz, many thanks for always delivering the goods!
