One shortcut that works in a pinch is sweet Chilli sauce, a blob of peanut butter, soy sauce, a little sesame oil a splash of water and a little green onion in the blender. I add garlic n ginger too. It's not traditional but it's kid approved if im out of hoison. My only issue ive ever had in my decades is when i make bulk to take to potluck or gatherings. They all start to stick together and tear. Ive used parchment, damp towels, a misting bottle and so on....
There are a few places near me that make spring rolls and one of the places that does basically everything else so well always messes up the spring rolls. I think they overhydrate the wrapper because it's kinda mushy and super fragile and doesn't keep the filling in at all.
If you don't fold the ends in, when you fry it, the insides might spill out. I think you're thinking of burritos maybe? Or a spring roll with only one or two fillings?

In Thailand we also have many ways to wrap wontons/ spring rolls. Vietnam is not the only Country that eats spring rolls. 😆 There is no right or wrong way! Do what’s best for you. Now I’m a profession chef in Germany mainly cooking for first class/ business class for Asian airlines. We have sooo many methods/ tricks that wasn’t “authentic” but it is effective and the outcome came out just perfect. Trust me… no right or wrong as long as the spring rolls doesn’t fall out everywhere and break apart. You’re fine :D ps. Your spring rolls look great!
I tried her way, it's not bad or anything, but I usually don't like that, because the ricepaper gets clumped on the edges more so than the method demonstrated here, so yeah

There is something about all those fresh veggies, shrimp and the peanut butter dipping sauce that is so refreshing and satisfying. And I'm gluten sensitive so it can eat these without any issues. 😋

Here in the Philippines, we have versions of spring roll. "Shanghai lumpia" veggies and ground meat, "lumpiang gulay" veggies only, "lumpiang obod" stem of banana tree, "lumpiang sariwa" crepe wrapper not the conventional one, fresh veggies, deep fried rice noodles, peanuts w/ peanut sauces, "turon" plantain and jackfruit with the wrapper coated with melted brown sugar or caramel and etc.
The traditional way of folding the Vietnamese spring roll is very similar to folding the Tex-Mex burrito, tbh In both ways, people will start from the bottom and fold in the 2 sides Honestly, I think it is the best way because it ensures the contents do not fall out as the 2 sides are already tucked in

The base line for ocd is basically, things have to match, pair together, equal out, and such. Things have to balance or be symmetrical, or be done a certain way, etc. For example, if im tapping my fingers out of boredom, i will have to count it in my head to make sure it either a multiple of 5 or an even number. Like, ill tap 50 fimes or ill tap 100 times or 25 or i may do 40 or just 6 or something. And yes, i do have ocd. But for some ppl ots different. One of my friends from highschool would do sets of 4 or multiples of 5
You rolls turned out great. Since I can't manage to roll them right. I just hit up my local thai place and grab sweet chili sauce instead of the peanut. It's less stressful that way. I love raw spring rolls they are the best.
No, it's peanut sauce the American way. In Vietnam we don't make peanut sauce with milk and peanut butter. I must say I was quite shocked when I saw her sauce recipe 🥴🥴, for sure it's not the original recipe

How much should it be soaked in water? We seem to have it fall apart every time. Or it sticks to the one next to it, and it tears apart.
1. Soak completely in water for 0.5- 1s then pull out
Or 2. Use your hands to spread the water evenly on the rice paper
