That university of Phoenix roast was savage
Lmao ikr, dude's got a career in comedy if this doesnt work out.
He smoked them
Grilled em a bit too. He did Austin proud though! Hook em!! 🤘🏼
i don’t get it
Too damn hilarious 😂😭😭😭😭😭
I love when a restaurant uses specialized techniques on local ingredients that are very hard to replicate anywhere else. Def makes this place special and worth trying!
Dude's got a PhD in grilling, even roasted a university .
This isn't Texas bbq. Texas bbq is only salt and pepper rub
@@jf9457 lol
That Univ. of Phoenix gag was priceless.

No, for the two face mask like the fake president
@@lordnat1968 why would you even care if someone else choses to wear a mask.?.
you would feel so much better when you get to see some dudes mouth?
are you scared of masked people?
@@lordnat1968 imagine being bothered by someone else wearing a mask. Not someone telling you to wear a mask but simply someone wearing one themselves. Wild.

Well is it fixed now?
This place kills it. Everything I've ever had here was excellent and the way they handled Covid seating was such that it is a permanently usable part of the restaurant. These guys are doing it right in every way.
Oh hey i drive past this place almost every time I go to work. Neat to see a video about a local place. Been here once, bar's the best place to sit and the brisket was to die for.
I liked how they incorporated the outside seating. I think they had the best go of it that I personally saw. You're on point with the brisket, it's killer.
Dude, that last statement is so humble. "It's very simple food, but there's a lot to it."
Sir, this may seem like simple cooking to you but I can guarantee that the majority of the population does not. I, for one, don't think this is simple food.
This is an incredibly unique amalgamation of flavors and techniques. If you care about something, you will do your due diligence and R&D the hell out of a dish to make it the best version you deem possible.
Preach!
My wife and I had our honeymoon in Portland in 2016 so the next time we go back this will definitely be on our list of restaurants to visit.
You gotta update us when you do visit the place
Live fifteen minutes from there, absolutely delicious and totally worth the 2 hour wait
That brisket looks phenomenal! And, while I don't generally eat mussels, I'd be all over trying that mussel/egg bite. Your sauces have me very interested!
The sauces should. I would venture to say they have the best bbq sauce I've had outside of Texas. Probably the best brisket too.
Great concept and great menu and super cool chefs
That is some creative stuff. Wow.
I’ve never once thought of Maine and barbecue together but I think you guys are onto something. BOL.
There’s actually a lot of good barbecue in Maine, Terlingua is primarily a TexMex spot.
Portland has a couple of good bbq spots. It's a surprisingly diverse food hub.
Definitely works! BBQ seafood 🤤
Was here for my birthday last week, the food is AMAZING! The cornbread is unreal
Mannnn, almost lost this Texan with the University of Phoenix comment lolol
Anyone wanna explain for non americans
@@lc9072 University of Phoenix is an online university with, shoddy at best degrees, it's an online college.
Love Terlingua!
Thx so much for all your lovely videos. I could watch a video from the same restaurant for hours :) Keep up all the good work you´re doing guys !!!
What did the mussel say to her boyfriend?
"You never open up to me!"
Thanks guys, I'm here allllllllllll week..
"Yeah so we make our own house biscuits and rolls, here we are just gonna combine the wet and dry ingredients, loosely shape them aaannndd they are ready for the smoker!"
How cool. Glad to see some lads shirk the barbecue tradition and do something unique.
Very innovative ideas...would love to visit!!
Oooooo I miss living in Portland! They place is absolute fire!
@Eater Kinda doesn't work without the check mark 🤔
Wrapping the pork in butcher paper is interesting. Also he opens that smoker ALLOT!

People not understanding that you run out of bbq is funny as hell. “I drove 20 minutes to get here!!”

Maine is the most underrated state 😭
Unfortunately Mainers are getting priced out of the Portland area, sad but true. Massholes ruining the state (as always)
"This is Tommy."
"He's... a tray of quail?"
Get up with the get down .
USA+MEXICO= ART
Well Texas was originally Mexico and a lot of our culture has Mexican heritage
This is Delicious and unique

Hot damm that looks so good
When will the meat hook be back?
I know how lucky I am to live in Maine. I'm a recovering Masshole
Yo.... the dude without the hat sounds like Justin Geathje
Please send samples to my location for review. 😎
How about y’all come to The South.
What's the time stamp for the University of Phoenix joke?

did this dude say coffee and brown sugar?? i need to buy a smoker even though i dont eat pork lol
am i trippin or does the one dude sounds like the "apparently" kid all grown up
what happened to this place? There's no lobster or quail on the menu today. It's mostly just standard texmex bbq items now.
Two things I don’t find very appetizing or good yet want to try 😂 the deviled egg and mussels looks really good but I’m really not a fan of those two foods though but I would try one of those maybe 😅
Shouldn't they separate the meat and the seafood in different smokers?
3:10 "Coffee and brown sugar"??
Are you cooking lobsters under raw chicken?
I love this videos but bro where's the eating part! I want to see that too...
Fine dining in Portland has exploded in the last 20 years.
Who looked up seafood/mussels and this vid popped up?
US Citizens Eat meat like i eat my rice 😯🤤
Nebraska beef is the best...
tHAT CHEF IS HIGH AS HE IS GOOD
PETA you there? 😢😢😢😢😢
Oh yeah. No authentic Texas BBQ would be complete without mussels and seaweed?! But what do I know? He must be an expert, having moved to Austin and living there for 8 whole years barbecuing in his backyard.

Quail's not something you typically see on a barbecue menu,
10:16
neither is mussels or lobsters,
10:19
or anything else.
10:20
And we're just trying to work with what we've got locally.
Yummmmmm
That’s not Spanish mackerel , they are spotted mackerel
Maine has cold water. Lobster molt their shells in cold water.
Maine has soft shell lobster. You can keep them. Warmer water harder shells tastier meat.
12 year lobsterman here.
that quail ..
you know these guys lost their sensation in their hands when they handle food like that
1:35 why do u smoke seafood next to meat?
Why not? It isn't illegal, is it? 😂
coffee??? that's new
Except for not killing the Lobster before throwing it in a boiling Jacuzzi...this looked delicious AF.
Tom delonge doin a BBQ
Rostchild
I wonder if a lot of their seafood options are locally sourced, being in Main and all.
Coffee ? Is that common ? First time I heard of using coffee on barbecue.
On pork. Yes
fairly common actually. Coffee rubs are used in the south even in competition cooking. And you can buy coffee BBQ rubs at grocery stores and online. I've actually never tasted it but I would like to.
Ya. It common in meat marinades. Coffee is acidic so pairs well with meat, as well as tenderizing it.
@@Gerbera726 not really.
Yes, it is a "thing", lol.
