As a Mexican, I am really impressed with the way you cook this roasted red chile, very similar to how it is cooked in Mexico. The flour tortilla, the snowy environment and the countryside remind me a lot of the ranches in Chihuahua. I congratulate you for this video. God bless you!!!

As a person of Mexican descent i will attest to the authenticity and deliciousness that this meal showcases. That enchilada sauce you made is first rate and is almost exactly what myself, my parents and grandparents would do. The use of oregano is also a plus. I've never seen flour used before but our recipes vary regionally and it clearly works great. My folks always had to stretch meat so we also usually added diced potatoes. I still add potatoes add as it's an easy way to create more volume. It's also a gluten-free way to thicken the sauce with the potato starches. Either way as a humble home cook, i salute you!

There is no doubt that the weather was a bit of a challenge, but with all respect that ain't snow. My first outdoor winter cooking experience was at 12 years old. A boy scout camping trip on the shore of lake Ontario. Thankfully we were prepared and had extra provisions . An unexpected blizzard added an extra day to our camp out. We had fun and learned a lot about cooking on an open fire in such conditions. Snow shoeing back to the road was quite an experience. We had the time of our lives. This recipe sure would have been wonderful 58 years ago.

back in high school my girlfriend's grandmother made chile colorado. served it with beans, rice, & tortillas. it was heavenly! also, every Christmas she made dozens of tamales. ❤

I made a duck stew for my birthday (Jan 2nd). I used Amarillo Chiluhacle peppers, ginger, ginseng, bay leaves, shiitake threads of seaweed, fresh brown mushrooms, carrot chunks, shallots, peas and handfuls of wild rice to absorb most of the duck stock to make it into more like a stew than a soup. Balanced with chicken bouillon, salt, pepper, soy sauce, black vinegar, worchester, and a touch more ground hot pepper as part of the balancing. Soup in the winter is the best. I had also made a soup using beef short ribs.
I love Chile Colorado. Even though I grew up Hispanic in Denver, my Mom, Aunts or Grandma never made this. Now I make it every once in a while, on a day off work!
What do you mean, "Growing up Hispanic"? FYI Mexicans are the ones cooking with dry chiles. In fact until very recently, the other "Hispanics" Central and South Americans, MOCK Mexicans for eating "spicy" food.
I just made this almost exactly about a week ago. My wife, born and raised in Iowa, loved it and said "I am definitely not used to my chili having so much flavor". I went out and bought more dried chiles the next day.

Reminds me of feeding cattle off the back of my dad’s old 1957 International one ton pickup truck and coming home to cook on our ranch in South Central Montana in the ‘70’s. I really cherish those days. ❤
I always liked feeding the cattle in the snow. My favorites were when it was so heavy and coming straight down that the world got so quiet you could literally hear the snow hitting each other and landing. A soft, barely audible crystaline sound you can never hear in town.

The first time I ever ate this style of chili was in Cuba New Mexico. The lady asked me if I wanted red or green and if I wanted meat in it. I said red and with meat. She brought me a bowl of stewed red Chiles that had chunks of meat cooked in it. I have to say it was pretty delicious.
New Mexico is home to the Hatch green/red chile. Green when it’s ripe, red when it’s dry. Their state question is “red or green?”, in reference to the type of chile you want on your huevos rancheros, chicharrón burrito, enchiladas, etc.
I generally use Guajillo, New Mexico, and Chiles de Arbol for my red sauce but the end product is likely very similar. Living in the northeast like most here I used prepacked chili seasonings and chili powder for a long time, what a revelation it was the first time I tried using dried peppers! That first batch was nowhere near as good as what I make now that I've settled on the pepper combination I use now, but I instantly knew I could never go back to packaged chili seasonings! I hope your viewers try this out, it will change the way they make chili forever.

I have had this with a side of refried beans and a side of Mexican rice. It is even better the next day. The flavor generated by these dried chili peppers is amazing. I never had any of these types of meals made with fresh peppers. I have always wondered if folks cook with them fresh, and what does that do to the flavor? Also, I could be wrong, but I think most people run the sauce through a sieve after using the blender. I am pretty sure that is how Mom did it, and how her Mother taught her how to do it.

Made a big pot of this chili this week before the cold wave hit. Been making it for 50 years. Ate it for three days straight, and liked it more each time. Best food on the planet!
Cowboy Kent, my roots are from Wyoming, my dad from Lyman and my mom from worland. My dad grew up on a sheep ranch that my grandfather homestead. My aunts and uncles and my father formed a family corporation 50 years ago and I still go back there to visit. I can't tell you how much character makes me miss the wholesome hard-working people in the Midwest. God bless.
When I got bro chorus at the first blizzard, living alone on a farm with 7 puppers a bunch of quackers, bockers and whatever sound Guinea fowl make…. I used almost the exact same base peppers and such for a vegetable soup. My farm grown sweet potatoes aren’t super sweet like grocery store ones, some green beans and carrots and whatever else I put back from harvest. That sauce you just made reminded me 100% of the base I made for my vegetable soup (with a kick to clear the sinuses) but I used my canned peeled tomatoes from my farm too. With some vegetable broth. This recipe reminded me so much because I used those same dried chilies cooled down with the tomatoes then blended for my base. Then I added in my canned or frozen veggies from my farm. Boy it opens up your sinuses, gets the blood flowing and you feel better before bed.

Yesterday in Jamestown ND, where the wife is, it was -19 feels like -38. I'm in Florida, 1. Working 2. I live here 3. I'm smarter than her....lol it was still 43. It even snowed in the panhandle.
I have a deep 17 Dutch oven named Bertha. she weighs 65 lbs empty. And her sister is a not-as-deep 17 named Bernice. Love the vids you two kids make! As a volunteer I get to cook for many many young people in our Church. Have done for years and years. You’re an inspiration! This would be a fun recipe to make for them. I just need to expand it to feed 150 or so.
Wow! You and Shan out there in the snow and cold. You two are dedicated! I live in Vermont, where we don't have Latino foods in our grocery stores. So I order my dried chili pods and other ingredients online. It seems to be colder weather _all over_ the United States. The temperature up here got down to 18 degrees below zero for three days. Today it's been a "balmy" 15 degrees above zero. Good weather for your chili for sure!

I decided to make this today and Cowboy Kent wasn’t kidding. It is delicious!!! There was no beef in my freezer so I used a pork sirloin roast and it turned out perfectly. My sister-in-law showed up unexpectedly for dinner with her husband and kids and they all loved it, even with some picky eaters in the crew. I made a duck stew for my birthday (Jan 2nd). I used Amarillo Chiluhacle peppers, ginger, ginseng, bay leaves, shiitake threads of seaweed, fresh brown mushrooms, carrot chunks, shallots, peas and handfuls of wild rice to absorb most of the duck stock to make it into more like a stew than a soup. Balanced with chicken bouillon, salt, pepper, soy sauce, black vinegar, worchester, and a touch more ground hot pepper as part of the balancing. Soup in the winter is the best. I had also made a soup using beef short ribs.

I love Chile Colorado. Even though I grew up Hispanic in Denver, my Mom, Aunts or Grandma never made this. Now I make it every once in a while, on a day off work!
What do you mean, "Growing up Hispanic"? FYI Mexicans are the ones cooking with dry chiles. In fact until very recently, the other "Hispanics" Central and South Americans, MOCK Mexicans for eating "spicy" food.
I just made this almost exactly about a week ago. My wife, born and raised in Iowa, loved it and said "I am definitely not used to my chili having so much flavor". I went out and bought more dried chiles the next day.

Reminds me of feeding cattle off the back of my dad’s old 1957 International one ton pickup truck and coming home to cook on our ranch in South Central Montana in the ‘70’s. I really cherish those days. ❤

I always liked feeding the cattle in the snow. My favorites were when it was so heavy and coming straight down that the world got so quiet you could literally hear the snow hitting each other and landing. A soft, barely audible crystaline sound you can never hear in town.

The first time I ever ate this style of chili was in Cuba New Mexico. The lady asked me if I wanted red or green and if I wanted meat in it. I said red and with meat. She brought me a bowl of stewed red Chiles that had chunks of meat cooked in it. I have to say it was pretty delicious.

New Mexico is home to the Hatch green/red chile. Green when it’s ripe, red when it’s dry. Their state question is “red or green?”, in reference to the type of chile you want on your huevos rancheros, chicharrón burrito, enchiladas, etc.
Made this stew on Saturday. Followed recipe to the T. Put it over some mash taters and it was great! A new favorite in my home. Thank you

I generally use Guajillo, New Mexico, and Chiles de Arbol for my red sauce but the end product is likely very similar. Living in the northeast like most here I used prepacked chili seasonings and chili powder for a long time, what a revelation it was the first time I tried using dried peppers! That first batch was nowhere near as good as what I make now that I've settled on the pepper combination I use now, but I instantly knew I could never go back to packaged chili seasonings! I hope your viewers try this out, it will change the way they make chili forever.

I have had this with a side of refried beans and a side of Mexican rice. It is even better the next day. The flavor generated by these dried chili peppers is amazing. I never had any of these types of meals made with fresh peppers. I have always wondered if folks cook with them fresh, and what does that do to the flavor? Also, I could be wrong, but I think most people run the sauce through a sieve after using the blender. I am pretty sure that is how Mom did it, and how her Mother taught her how to do it.

When I got bro chorus at the first blizzard, living alone on a farm with 7 puppers a bunch of quackers, bockers and whatever sound Guinea fowl make….
I used almost the exact same base peppers and such for a vegetable soup. My farm grown sweet potatoes aren’t super sweet like grocery store ones, some green beans and carrots and whatever else I put back from harvest.
That sauce you just made reminded me 100% of the base I made for my vegetable soup (with a kick to clear the sinuses) but I used my canned peeled tomatoes from my farm too. With some vegetable broth.
This recipe reminded me so much because I used those same dried chilies cooled down with the tomatoes then blended for my base. Then I added in my canned or frozen veggies from my farm.
Boy it opens up your sinuses, gets the blood flowing and you feel better before bed.

Yesterday in Jamestown ND, where the wife is, it was -19 feels like -38. I'm in Florida, 1. Working 2. I live here 3. I'm smarter than her....lol it was still 43. It even snowed in the panhandle.
I have a deep 17 Dutch oven named Bertha. she weighs 65 lbs empty. And her sister is a not-as-deep 17 named Bernice. Love the vids you two kids make! As a volunteer I get to cook for many many young people in our Church. Have done for years and years. You’re an inspiration! This would be a fun recipe to make for them. I just need to expand it to feed 150 or so.

Wow! You and Shan out there in the snow and cold. You two are dedicated! I live in Vermont, where we don't have Latino foods in our grocery stores. So I order my dried chili pods and other ingredients online. It seems to be colder weather _all over_ the United States. The temperature up here got down to 18 degrees below zero for three days. Today it's been a "balmy" 15 degrees above zero. Good weather for your chili for sure!

I decided to make this today and Cowboy Kent wasn’t kidding. It is delicious!!! There was no beef in my freezer so I used a pork sirloin roast and it turned out perfectly. My sister-in-law showed up unexpectedly for dinner with her husband and kids and they all loved it, even with some picky eaters in the crew.
