Also his drop dumpling technique is very similar to #수제비 Sujebi which is a Korean Soup dish made from drop dumplings, but obviously his dish he turned into a dessert; genius.

Michelin Guide only covers certain cities: San Francisco, LA, Chicago, New York, Washington so outside that area, chefs cannot get stars
