Only thing i did different was put the plunger on the other way around with the flat of the plunger going in the tube first rather than the sides.. i just cut a bit off one side so it would pull all the way back to insert the tube. That way you dont have to cut the tube at all and youre able to squeeze out all of what you put in it as well as it going into the tube easier at first...
Great idea, love it , golden rule don't waste money, just one thing if you turn the plunger around it will fix in to the tube easier and you wouldn't need to cut the tube at all, but still top marks thirty quid saved.
Just used this technique for injecting structural non-shrink grout under my acrylic/fiberglass shower pan where it was flexing and creaking. Drilled 1" holes up through the sub-floor below and injected the grout through 1/2" PVC tubing. This stuff goes off pretty quickly so I had a series of empty 'caulk guns', with tubes attached, at the ready. Just one leaked on me - I think I damaged the plastic 'piston' when I first cleaned it out. Maybe injecting low-expansion polyurethane foam would have been easier but I think this was a better long term solution.

Do you tidy the mortar once you have placed it in the gaps?
You will create a mess if you do. Allow it to dry but not yet too hard. Then you can remove the excess.

did you use a particular measure or type of mortar and would ANY mastic gun work?
4 sand 1 cement and dish soap worked for me in the paid gun. If I saw the video earlier, I would not have spent the money.

wonder if you could apply a bit of heat to the nozzle and then shape it into a flat spout which allows you to get into the brick joints🤣❤️
Your could use pliers on the nozzle. It doesn't cost you much to break it.
