I once had a waffle iron and every time I see such an awesome brekkie I regret getting rid of it! These waffles looked great and I love the thicker alpro yoghurts as a topping so I am pretty much sure I would enjoy them a lot!

replace one thing at a time and find easy plant based recipes that you enjoy! After time, it'll become more and more normal. Also don't be too strict with yourself :) it's a journey!
I agree with the comments above! Vitamin B12 is a really important supplement and just take things one step at a time - slowly swap what you’re used to eating for vegan alternatives and try out something new each week! Find which vegan products you like the most and have fun creating vegan versions of your usual favourite meals. Most importantly, don’t be too hard on yourself if you slip up, we all make the odd mistake - you’re always learning ☺️ x
Cannelloni is something I've intended to make for a few years already but I just cannot get round to actually doing it :D But considering I have access to vegan cannelloni, it would be easier than your attempt anyways, so maybe I am just looking for excuses!

Maybe adding water and a stock cube to the sauce might help increase volume without losing flavor but all your food looks delicious! 🙂

I think the sauce needs to be thinner when you do pasta in the oven. I would add à splash of water to it when you are boiling it
