INGREDIENTS:
Set A:
1 kilogram pork belly (slab), cut into 3
2 tablespoons vinegar
2 tablespoons rock salt
Set B:
1 tablespoon whole peppercorns
4 pieces laurel leaves
1 head garlic, halved
5 cups cooking oil

I was a little bit skeptical at first because it does not require pre-boiling of meat. But I tried it today and they were really crispy! Finally, I don't have to deal with oil splatter anymore! Thank you Chef Simpol for this recipe and the technique! 😊

Hello, Chef Tatung. Do we wait for the temperature to slowly rise to 160 degrees while the stove is on medium heat or do we crank up the heat so the cooking oil gets to 160 degrees ASAP then maintain na lang namin ang temp between 160 and 170 degrees?
Just slow cook unti skin is fork tender and raise then crank the heat up to brown.

Watching this in Feb 2024 after it got tested on FEATR together with Panlasang Pinoy and Chef RV's lechon manok. Congrats Chef! Your version of lechon kawali won the taste and crispy test. Will try this recipe asap. Question: Will using "first use oil" not turn out as tasty?
