I made two smaller cakes from this recipe, used up 3 bananas which needed eating and apart from a few banana slices sticking a bit in the middle (I did turn the cakes out while still very warm) the flavour and texture were fantastic, I only added a smaller medium banana to the actual cake mix and I think that helped to keep the cake lighter and more spongy. The flavours are wonderful, syrupy, buttery, gooey sticky banana, very hard to stop after one piece! I am going to freeze one of the cakes, thanks for the great recipe!
Hey, if you are in a diet, you may use no sugar or substitute it for some drops of sucralose (I really don't suggest stevia), but the bananas grant some sweetness anyway. Also, you can use any proportion of oat flour and whole wheat flour, they actually make the cake even more moisty (but you might use a little more of baking powder). You can either leave the topping of or have fresh bananas instead, the cake will still be gorgeous.
Just keep in mind that sugar does more than add sweetness, it is responsible for the texture of the cake as well; so completely omitting the sugar would make the cake gummy and dense- and I wouldn't recommend it.

Hi Kalpana, I know that a lot of people use a flax egg (1 tbsp ground flaxseed + 4 tbsp water) but I've never tried this substitute and I can't guarantee that it will turn out the same as this cake. That being said, no harm in trying!

Great recipe! I have a question to ask you. I made this recipe last week. It was my own recipe. However, the center of the cake could bake even though I lfet it for 1h 05 in the ovrn. I put 2 1/4 flour, 1 1/2 sugar. 3/4 butter, 4 eggs. 1 1/4 milk. There is something wrong with tha ration and I cannot find what is it. Did I put too much butter? or too much flour? I love how soft my cake was, but the center was not cooked. Please help me!!!!
The ratios look fine, but did you use any leavening agent like baking soda/baking powder? If not, then that is probably the reason. if you did, you might have baked the batter in too small of a dish/too low of an oven temperature/not long enough/you opened the oven door while the cake was baking. Hope this helps!
Tried this today. The bananas stuck to the tray and was quite ugly when I stuck it back on hahah. I found the top to be sickeningly sweet. Bananas are already sweet on their own so I found the caramel to be unnecessary (didn’t realise that until I tasted the cake). The batter was nice, though.
Sorry to hear! The top is indeed supposed to be sweet since it is a caramel... and if you decide to make this again I would use a non-stick baking pan or line the bottom with some parchment to prevent sticking.
Amazing recipe, I tried it once it was super delicious but the cake layer sticky, I made it again but I used the buttermilk instead, it was a little bit better, less sticky but not the same look in the video. Any advice to have more fluffy version of the recipe! Actually I like it as is and I cannot stop eating. But my mother does not really like sticky cake!
Hi! I tried it today in an 8x8 pan. Poured the entire batter but it wasnt ready at 35 minutes. I kept adding time til it was an hour and 10 mins but it was still soggy. I flipped it and didnt get that look on top like yours. What went wrong? The texture was so moist not like yours. Help pls!!! Thanks
I think it's probably your oven temperature, an hour and 10 minutes is insane for this recipe! try to place an oven thermometer to monitor the oven temperature. In terms of the top- what went wrong? Was your pan not greased properly?
i tried this with oil as a substitute for butter, and the batter turned out WAYY too runny. had to add like another cup of flour and it was still runny. tried to bake this is a round cake pan and it took almost two hours for it to cook properly and the cake was still very wet. a total disaster :(
Hmm... weird, I've tried this recipe with both oil and butter and it works just fine! I wonder if maybe your measurements might have been a bit off? sorry to hear it didn't work out for you!
You can try lining the bottom of the tin with parchment paper, or using a non-stick baking pan. Usually it is fine for a couple pieces of the banana to stick, you can just scoop them out and re-position them:)
