So it might be pale due to whipped cream being added. You can watch some videos of pastry cream being made and it looks the same as what she did.

You can use corn starch when shaping the mochi to prevent it from sticking. And to cook mochi batter, other than using a microwave or pan like in the video, you can also steam it.
You can take 1/4 Cup of Glutinous rice flour into a non-stick pan. Using low to medium heat pan fry the flour. When it turns slightly yellow, it is done. You can use this to dust your finished mochi balls.

I think you did nothing wrong, I follow exactly the steps on the video and the dough was very sticky.. something is missing, she also missed to show a step for the filling.

First of all she uses oil and real mochi doesn't, second, tye original one is steamed rice, but as we don't use steamers so much the result is similiar but not the same

All mochis are covered in flour in Asian countries. I haven't heard people getting some kind of trouble from it.

It doesn’t harden but become a little less stretchy, room temp is recommended for eating but can spoil.
