    Ingredients
    Lemon Custard Sauce
    2 egg yolks
    30g lemon juice
    45g granulated sugar
    15g cornstarch
    1 tbsp lemon zest
    150g milk
    200g cream cheese
    10g granulated sugar
    150g heavy cream
    5g vanilla extract
    *I used only half of the lemon custard sauce to fill 12 mochi. So if you do not want any leftover, you can halve the ingredients and make less sauce.
    Mochi Dough
    100g glutinous rice flour
    35g cornstarch
    45g granulated sugar
    180g milk
    15g vegetable oil
    Steps:
    Lemon Custard Sauce
    In a clean bowl, mix well egg yolks and 45g granulated sugar, lemon juice, vanilla extract and cornstarch. In a saucepan, bring together lemon zest, milk, and heat until simmer. Pour them back into the egg yolk mixture while quickly whisk them in. Pour all the batter into the saucepan, over medium heat, keep stirring until thickened. Transfer the lemon custard sauce into a clean bowl; cover with plastic wrap, set in the fridge to cool it down.
    In another bowl, mix well softened cream cheese and 10g granulated sugar. Add in cool lemon custard sauce and heavy cream, and use a hand mixer to beat until thickened.
    Transfer the sauce into a piping bag.
    Mochi Dough
    In a clean bowl, mix well glutinous rice flour, cornstarch, sugar, milk, and vegetable oil. Grab a nonstick pan, pour all the batter in, keep stirring over medium heat until thickened and a dough ball forms.
    Dust some flour on to the dough ball and the mat, wear gloves and knead the dough a little bit until the dough becomes stretchy. Divide the dough into 12 equal pieces; roll them into flat and round pieces. Pipe in enough filling, wrap it up, and put in a cupcake liner and serve.

    One time at my school we had a day when students could hand out food to people. I didn't know what food I wanted but then I saw a girl who was giving out free mochis. I got one and it was so good. Better than i imagined.

    I think you missed a step in the filming process because you made a very yellow lemon custard but what you piped into the mochi skin did not look the same

      I am not certain, but it looked like she made the first part of a pastry cream. It's basically like a custard that gets chilled and then mixed with heavy whipping cream afterwards. So it might be pale due to whipped cream being added. You can watch some videos of pastry cream being made and it looks the same as what she did.

      The first one is not the dough its the filling...afterwards with which the rice dough was filled.!

      ​@@umaimaimran2425The filling that they used looked different (texture and color) from the 1st mixture. The first mixture did look doughy while the filling is more soft custard that was on the runny side.

      I think you did nothing wrong, I follow exactly the steps on the video and the dough was very sticky.. something is missing, she also missed to show a step for the filling.

    I have a question too… what kind of flour did you use at the end to shape the mochi dough by hand? Not regular flour I presume is it with the rice flour or corn starch, i ask since this is the last step i dont want to eat raw flour 😂😳.. i made the filling the other day and it turned out great, like lemon cheesecake filling almost, but i tried with regular rice flour, now ordered the proper rice flour online so will attempt mochi againX thanks for the video, i dont have a microwave and most recipes make mochi with microwave so this was better for me. Thanks. 🙏

      You can use corn starch when shaping the mochi to prevent it from sticking.
      And to cook mochi batter, other than using a microwave or pan like in the video, you can also steam it.

      You can take 1/4 Cup of Glutinous rice flour into a non-stick pan. Using low to medium heat pan fry the flour. When it turns slightly yellow, it is done. You can use this to dust your finished mochi balls.

      Cream cheese, sugar and heavy cream were added into the lemon custard sauce. Hence, the result of piping cream was pale in colour.
      I don't know why that step was not included in the video. Maybe the battery of the camera was out during filming and the owner had to charge it, then back to recording / filming again.

      treat it as normal food, 2-3 day should be fine(refrigerated)

      First of all she uses oil and real mochi doesn't, second, tye original one is steamed rice, but as we don't use steamers so much the result is similiar but not the same

      It doesn’t harden but become a little less stretchy, room temp is recommended for eating but can spoil.

    one question the milk you use is whole milk or evaporated milk

      although I am unsure of the video recipe, with previous experience, I recommend normal or whole milk. Evaporated milk has a certain fat amount in them that’ll mess up the recipe when you add butter.
