making this right now! will let y’all know how it goes… *edit 1* : the microwaving technique is so nice. saves lots of time. i added way too much red food coloring to my dough, so now it’s neon pink instead of baby pink 🥲 (add the food coloring LITTLE BY LITTLE after the last 30 seconds!) *edit 2* : the dough was not very sticky at all for me after using just a bit of cornstarch. it stayed nice and “unsticking” lol. very easy to roll out. i did not have a big enough cookie sheet so i just put the entire cutting board with the rolled out dough in the fridge! *edit 3* : just rolled up 16 balls worth of mochi. it was an annoying process with some of my mochi dough ripping! i used 2 tbsp sized balls of ice cream and used an almost 4 inch wide dough size. it was alright though. wrapped them in foil since i didn’t have plastic wrap. let’s see how it tastes later! gonna let it freeze more for two hours EDIT - LOL SORRY GUYS I FORGOT ABOU THIS. but i can tell u, yes, its really really good. i've made this 3 times now. i find that u dont really need to refrigerate the dough before wrapping the ice cream with it. and also i didnt pre-freeze the ice cream balls and it turned out nice! and i always did a dumpling style wrapping bc its easier, then i cut off the extra dough and reroll it to make more mochi! overall, its really good. totally my bad for not replying sooner

Thanks to blenders existing, it's much easier to do make mochi nowadays, since you can use the water mochi was boiled in to also make a healthier syrup by boiling sugar with an acid like lemon juice or vinegar, for sucrose to turn back into fructose, and not need to add any extra water to the mixture. You can make things easier by simply using clingwrap and a rolling pin to flatten boiled rice, then work that as a sticky dough to mix it well. The advantage of doing this is that rice flour is nowhere nearly as available worldwide as plain old rice and processed sugar is. It also works to use wheat flour, which you boil (ideally in the syrup I mentioned before). That syrup is often mixed with a concentrated tincture (i.e. floral tea) to make fake honey.

You could even make doughnut-like sup dumplings by using a thick (ideally sticky) batter to coat the ice cubes, then deep-frying that in oil (you can use a small pan, to use a lot less oil), and you can either keep the soup dumplings to fry there until the soup warms up, or you can move them from the oil to water in which to boil so the dough cooks through. Be careful if you don't use stretchy dough (which requires letting it rest for longer), and carefully cover every exposed part of the ice cube, to avoid having the dumpling getting broken and the water mixing with the hot oil to make a fire hazzard. That's why it's recommended to get a crust by deep-frying in oil, and then boil it to soften the crust and cook it through, before optionally frying it a bit more to get an outside texture similar to pot-sticker dumplings (which can be soup dumplings). Fun fact about rice: Sticky-rice-soup was mixed into the cement mortar used to make the Great Chinese wall, making the mortar waterproof and nearly as strong as modern cement. Today it's still a tradition in some parts of the world to add starch (pasta water, water from washing rice, or even boiled mashed rice/corn/potato/wheat, as flour or not) into the whitewash (which is a runny cement mixture without sand and without gravel, and with pigments optionally added), to make it waterproof. Usually, the part right below the roof is kept not waterproofed, so moisture in the walls can evaporate.
Ive done it before. 2 great big wooden mallets, a big super heavy granite bowl, and a lot of work. Theres a reason people use electric mochi makers instead.

I don’t know how many people care especially since this video is a year old now, but for those who are interested. This isn’t actually mochi. This recipe is more in line with daifuku. Daifuku is made by wrapping a filling (mostly red bean paste) with gyuhi (the rice flour dough in this video). The biggest difference is, mochi is made from steamed rice, gyuhi is made from rice flour. daifukus’ are usually the ones being filled with, while mochi is often the one being coated. Most common daifukus are filled wilth red bean paste, sometimes along with strawberries or chestnuts, and of course matcha flavored fillings. Mochi may be eaten on their own, but usually are with something like sweetened soy sauce, soy flour, wrapped with nori (dried seaweed sheets), coated with red bean paste, or inside oshiruko, zenzai, or ozōni. Anyway, loved the video as always!

This recipe totally works in Grams. 160g Sweet Glutinous Rice Flour, 60g sugar, 236g (1ml = 1g) water. Thank you. So, the microwaving part differs for me. Started out with 450W 1 min. Then 500W for 1 min. Then 700W for 1 min. I kept tasting it to see if it's cooked. Yea, I still don't know my microwave. But in the end I got the dough cooked and wrapped in my purple sweet potato filling. Also, I used baked cornflour (In the oven for 20 mins 250C xD) for the dusting. Delicious Dough and not too sweet.
As Crysty said, use the stove. But do so in a double-boiling setup, by having a smaller pot in which to boil the mixture by placing that bowl in a bigger pot with water. This way, you make sure the temperature doesn't get too high, to avoid burning the mixture.

This recipe totally works in Grams. 160g Sweet Glutinous Rice Flour, 60g sugar, 236g (1ml = 1g) water. Thank you. So, the microwaving part differs for me. Started out with 450W 1 min. Then 500W for 1 min. Then 700W for 1 min. I kept tasting it to see if it's cooked. Yea, I still don't know my microwave. But in the end I got the dough cooked and wrapped in my purple sweet potato filling. Also, I used baked cornflour (In the oven for 20 mins 250C xD) for the dusting. Delicious Dough and not too sweet.

As Crysty said, use the stove. But do so in a double-boiling setup, by having a smaller pot in which to boil the mixture by placing that bowl in a bigger pot with water. This way, you make sure the temperature doesn't get too high, to avoid burning the mixture.
