The "Italian" one, which is actually French and not Italian, is actually *hot chocolate.* Any recipe which uses cocoa powder is *hot cocoa* as where recipes which use sliced up solid chocolate is *hot chocolate.* However, I personally think genuine hot chocolate is absolutely disgusting. It tastes like when you buy a candy bar in the summertime and it melts to the inside of the wrapper.

OMGosh!! I tried the Italian hot chocolate - not exactly to the letter of the recipe but, OH MY!... I didn't have any dark chocolate, so I substituted semi-sweet chocolate chips. I added a splash of half and half, plus 1 1/2 TBSP. of granulated sugar, and 1 1/2 Tbsp. of cocoa powder, then prepared it accordingly. I've NEVER had a more delicious cup of hot chocolate in my life! Thank you for this recipe. I CANNOT wait to make this for my grandchildren!
Hot chocolate is something I usually only drink when I’m really stressed or anxious and need a comfort drink. So I need it to take like 5 minutes instead of 30 lol. But if it’s like a cold day out and your chilling, maybe making hot chocolate for multiple people, then I think these recipes are a great idea! The second recipe was great. Took 5 mins and was an awesome comfort drink :) I used skimmed milk, dutch processed unsweetened cocoa, added a pinch of cinnamon, and 2 stevias instead of the brown sugar. Amazing.

I make hot chocolate about once every couple of months. But I make several cups and drink it throughout the evening. My first time going to Spain, was a chilly Autumn with my girlfriend. We sat outside a cafe, pulled out a map while figuring where to go first. Being chilly, we didn't want a cold drink. I suggested "Hot Chocolate". When the Hot Chocolate came, a spoon was in each cup. Not on the side of the saucer like you would think. It was incredibly rich and thick and tasted unbelievable. After 5 minutes of sipping and looking at the map. We realized why we had a spoon. We were drinking rich Chocolate Pudding! Still slightly warm, it had firmed up enough where we needed to use the spoon. Not sure if that is typical Spanish Hot Chocolate. But it sure was GREAT!

My family's favorite way to make hot chocolate is to chop up 3 Musketeers bars and melt in a pot with a mixture of bourbon vanilla, milk and half & half. Measurements are sort of optional in family recipes so it comes out slightly different everytime, but always delicious.

Tips I've learned from too many years experimenting with hot chocolate: - Skip the heavy cream. I've found that great hot choc. will do fine with a base of whole milk. Anything fattier will create a disgusting skin on top of your drink if the temp drops even a little bit, and we don't want that. (Super thick drinking chocolates are usually thickened with cornstarch, not with heavier cream.) - A dash of vanilla and a dash of salt. But mostly the dash of salt. Even if you're not going for a 'fancy' hot chocolate like the Mexican stuff, the salt really just rounds out the sweetness. - The super thick, italian kinds of "drinking chocolate" are meant to be sipped slowly out of a small cup like an espresso. Not drunk in the same quantities as a huge mug. Just... trust me. It's not good. (Edit, because there seems to be some confusion: when I say "drinking chocolate," I mean the super super thick kind that has the consistency of melted chocolate, NOT HOT COCOA, THE DRINK. Obviously hot cocoa can be drunk in large quantities LOL but the melted chocolate kind of drink is very very rich and sweet)

I'm Mexican. I've lived here for exactly all of my life. I've drank at least hundreds of gallons worth of hot chocolate, and I've never, ever, ever in the whole entirety of my existence, have heard about putting a chile together with hot chocolate. Nevertheless, now I'm curious and would love to try it out. EDIT: It's been about a year and I have yet to see or try this version somewhere around here. EDIT 2: it's been 2 whole years already. 🤣 A couple of things can impact that result... 1. The temperature of the chocolate. Colder is more brittle. Obviously, going too warm can be a problem too. 🤪 2. The sharpness of the knife makes a huge difference in how nicely chocolate will be chopped. 3. The secret I learned in my baking and pastry classes? Use a serrated confectioners knife or bread knife. The points help control the chocolate a bit better, and break it up better, but a warmed, smooth edged knife is what you want for pretty chocolate curls, or a warmed bench scraper.

Made the Italian version myself at a 6x recipe. I kept the cornstarch slurry at 1 tablespoon which for me made it the perfect thickness. It had just over 11 full servings in a mug. Couple notes for mine was that 1, you truly can not stop stirring for more than a few seconds at a time. It will burn quickly during any pause you take from the pot. It also comes out extremely rich meaning that 1 it is very filling and 2 it still comes out with a strong dark chocolate flavor so add more sugar if you want it more like a milk chocolate cocoa. It also came off as a "drink this outside while you are cold" vibe because indoors it did not do great as a refreshment and more acted like a delicious mousse you could drink. You will want an actual beverage on the side if you are indoors as me and my family were very thirsty while drinking this cocoa. For my sister who is pregnant, she said that was exactly what the doctor ordered so for anyone with a pregnant spouse, this could be a nice treat that is both cheap and easy to make. Overall it is a wonderful new recipe for my family to use and I would recommend it to anyone that wants to step away from the generic hot cocoa bought from the store. 8/10 will make again.

I make hot chocolate about once every couple of months. But I make several cups and drink it throughout the evening. My first time going to Spain, was a chilly Autumn with my girlfriend. We sat outside a cafe, pulled out a map while figuring where to go first. Being chilly, we didn't want a cold drink. I suggested "Hot Chocolate". When the Hot Chocolate came, a spoon was in each cup. Not on the side of the saucer like you would think. It was incredibly rich and thick and tasted unbelievable. After 5 minutes of sipping and looking at the map. We realized why we had a spoon. We were drinking rich Chocolate Pudding! Still slightly warm, it had firmed up enough where we needed to use the spoon. Not sure if that is typical Spanish Hot Chocolate. But it sure was GREAT!

My family's favorite way to make hot chocolate is to chop up 3 Musketeers bars and melt in a pot with a mixture of bourbon vanilla, milk and half & half. Measurements are sort of optional in family recipes so it comes out slightly different everytime, but always delicious.

Tried the Italian hot chocolate and OH MY GOD! It’s seriously cafe style and I loveeeeee itt!! Also I used milk chocolate instead and avoided the sugar still turned out great though

I just made the more basic of the three with a couple small changes (a little more sugar and about a half teaspoon of cornstarch), and it's so good!
Tips I've learned from too many years experimenting with hot chocolate:
- Skip the heavy cream. I've found that great hot choc. will do fine with a base of whole milk. Anything fattier will create a disgusting skin on top of your drink if the temp drops even a little bit, and we don't want that. (Super thick drinking chocolates are usually thickened with cornstarch, not with heavier cream.)
- A dash of vanilla and a dash of salt. But mostly the dash of salt. Even if you're not going for a 'fancy' hot chocolate like the Mexican stuff, the salt really just rounds out the sweetness.
- The super thick, italian kinds of "drinking chocolate" are meant to be sipped slowly out of a small cup like an espresso. Not drunk in the same quantities as a huge mug. Just... trust me. It's not good. (Edit, because there seems to be some confusion: when I say "drinking chocolate," I mean the super super thick kind that has the consistency of melted chocolate, NOT HOT COCOA, THE DRINK. Obviously hot cocoa can be drunk in large quantities LOL but the melted chocolate kind of drink is very very rich and sweet)
The part about the italian one is wrong; in 18 years i have never seen anyone drink that from such a small container. It's always a cup even if the drink is thick

A couple of things can impact that result...
1. The temperature of the chocolate. Colder is more brittle. Obviously, going too warm can be a problem too. 🤪
2. The sharpness of the knife makes a huge difference in how nicely chocolate will be chopped.
3. The secret I learned in my baking and pastry classes? Use a serrated confectioners knife or bread knife. The points help control the chocolate a bit better, and break it up better, but a warmed, smooth edged knife is what you want for pretty chocolate curls, or a warmed bench scraper.

Made the Italian version myself at a 6x recipe. I kept the cornstarch slurry at 1 tablespoon which for me made it the perfect thickness. It had just over 11 full servings in a mug.
Couple notes for mine was that 1, you truly can not stop stirring for more than a few seconds at a time. It will burn quickly during any pause you take from the pot.
It also comes out extremely rich meaning that 1 it is very filling and 2 it still comes out with a strong dark chocolate flavor so add more sugar if you want it more like a milk chocolate cocoa.
It also came off as a "drink this outside while you are cold" vibe because indoors it did not do great as a refreshment and more acted like a delicious mousse you could drink. You will want an actual beverage on the side if you are indoors as me and my family were very thirsty while drinking this cocoa.
For my sister who is pregnant, she said that was exactly what the doctor ordered so for anyone with a pregnant spouse, this could be a nice treat that is both cheap and easy to make.
Overall it is a wonderful new recipe for my family to use and I would recommend it to anyone that wants to step away from the generic hot cocoa bought from the store. 8/10 will make again.

literally most recipes for "mexican" hot chocolate include chilli with or without cinnamon.
I grew up Mexican and there has been no such thing as any sort of chili that gets added to the chocolate. Cinnamon? Yes. But no chili or vanilla in my experience.
