To each their own, but the tradition of hot chocolate and churros in Spain is just as real as in Mexico. I attended the French Cullinary Institute in NYC in the mid 90's..he taught one of the pastry classes. He was a great teacher and very nice... He had just left Le Cirque ...It was a great time to be cooking in NYC

I drink it as is, my boyfriend dilutes it 1 part cocoa to 1 part warm milk cause it's RICH.

I'd recommend trying 'Ceremonial cocao', bitter but it's amazing for pure cocao experirence, sweeten with coconut blossom. I use a velvetiser to make it.
Just use his regular recipes, swap out higher fat ingredients with low fat alternatives. Then increase the portion size for meats/protein sources. Apply this to every recipe you see and you'll make everything "high protein"

I'm pretty sure I've seen people serve chocolate mousse in a chocolate cup, but that's not what I have in mind.

The Spanish brought chocolate to the Old World from the new world and have the longest tradition of how we now consume chocolate. Better than the French. As for NYC - Jacques Torres is the best. @ there are lots of variations of how to prepare chocolate. There’s a chocolate museum in Astorga Spain that shows the variations machines and ways of processing it. There’s also different amounts of and types of spices to add to the chocolate - salt, sugar, vanilla, liquors, etc. i don’t know exactly what went into the place in Burgos, but it was phenomenal. I don’t drink coffee and always go for hot chocolate wherever i can find it. There are huge differences in hot chocolate if you compare Swiss miss to Starbucks to Jacques Torres. And different ways of preparing. I like to use farmer’s market whole milk and heavy cream. I put way more chocolate than recommended per ounce of milk. Lots of ways to have chocolate and I’m not saying ALL Spanish chocolate is better than ALL French. There’s a millions ways to prepare hot chocolate.

Spain has a long history of hot chocolate and it was the first way chocolate was consumed in the new world. Keep in mind the quality of the dairy used makes a difference. I save my my highest quality full fat milk for hot chocolate along with top of the line cream.
Best hot chocolate I ever had was at the Marathon Tomb in Greece, probably 30 years ago now. There was a little shop of some sort next to it and they served the thickest, most delicious pots of hot chocolate.
Best hot chocolate I ever had was at ChocoMuseo in Antigua, Guatemala. They have a traditional style "make your own hot cocoa" option where you get all of the parts of the cocao to your table and get to see all of the ingredients (including dried chili which is traditional) and put it together yourself, tasting as you go. I was blown away. You can go to the local cocao farms as well, make your own chocolate bars, and learn all about the process. Very cool place and the chocolate is insanely good! Central American chocolate and coffee is the best in the world, hands down, and they are often under represented.
@terfalicious Costa Rican arabica coffee is definitely the best I've ever had. Did a course abroad for a few weeks and got to go to Honduras, Guatemala, and Costa Rica. Normal coffee and chocolate in the United States doesn't hit the same anymore after that haha. Also, can't forget how good some of the Rum and other spirits are!

Listen, changing up the content to keep it fresh is a good policy... impossible to run out of recipes... Assume that you can choose from 100 ingredients. Then, assume that an average meal can contain about 5 ingredients. Meaning there are millions, if not billions of recipes...

In many places ice cream sells a LOT better in Winter though? Some places it's too hot in the summer, like nearly all of Asia so we do shaved ice during that time of the year instead...cheaper to make, less steps so less melting right away. Plus you get a really nice texture to the ice and it'll change with where you are ^^
Everyone complaining about Josh not cooking enough anymore need to realize that creation gets stagnant if they stay doing the same thing day after day. Josh is a chef, and he will never not be. He is now exploring his talent in other ways and it completely adds to his appeal.

I personally wouldn't go for all that cream. It thins out the intensity of the cocoa. I would put a dash of espresso in it and a pinch of salt. Makes it taste more chocolatey somehow.
In defense of Swiss Miss, if it tastes watered down to you it's probably because you're either: A, using too much water; B, using water instead of milk; or C, both.

The best hot chocolate will be an espresso 3oz with 2oz hotchocolate on top. Thats my guess ! Why because people either make it too rich or to watery but with a mocha, you get the espresso finish.
There's a diner her in town that serves up the best hot cocoa. It's so rich and chocolatey, and the whipped cream is light and fluffy and they serve it with chocolate chips on top ^-^ Uncle John's Pancake House... I haven't been there since they moved locations but *chefs kiss*

I don’t actually measure things when I make it though 😂 1.5 Tbsp Dutched Cocoa into the largeish mug (I like Drost) Pinch Salt Very hot water to 3/4 full of mug Stir and melt the cocoa 1/2 tsp vanilla Heavy Cream about 2 Tbsps Maple syrup 1 to 2 Tbsps or to taste It tastes like brownies

When I saw the Valrhona chocolates in Dominique Ansel's preparation, there was no way you could beat that quality (I live in the town where Valrhona is, it's the only reason I agreed to move there)
I understand everyone yearning for older content of him cooking in his kitchen, but this is his channel and he should do as he pleases. If you don’t like the content, then don’t watch it instead of complaining in the chat. It’s not his fault the algorithm is pointing him to this direction and I’m sure there will be plenty of time for him to revert to his previous style of cooking.
Pretty much every creator hates the algorithm but they all still follow it I wonder what would happen if they all came together and decided to just do what they wanted
They would lose a lot of money because there are more than enough content creators who would continue to follow the algorithm. The worst part is that making a change like that also affects how RUclips pushes your content, which would result in other creators being pushed over them and it can be hard to get back into that position once you've left.

@@edgeoftheuntimeworld i haven’t had all the hot chocolate in Spain or France. I’ve lived in Germany, with frequent trips to Switzerland, itlay and France. Also lived in Spain and NYC. Spain has a long history of hot chocolate and it was the first way chocolate was consumed in the new world. Keep in mind the quality of the dairy used makes a difference. I save my my highest quality full fat milk for hot chocolate along with top of the line cream.
Nothing better than the original Dutch hot chocolate! We invented cacao powder.

Best hot chocolate I ever had was at the Marathon Tomb in Greece, probably 30 years ago now. There was a little shop of some sort next to it and they served the thickest, most delicious pots of hot chocolate.
Best hot chocolate I ever had was at ChocoMuseo in Antigua, Guatemala. They have a traditional style "make your own hot cocoa" option where you get all of the parts of the cocao to your table and get to see all of the ingredients (including dried chili which is traditional) and put it together yourself, tasting as you go. I was blown away. You can go to the local cocao farms as well, make your own chocolate bars, and learn all about the process. Very cool place and the chocolate is insanely good! Central American chocolate and coffee is the best in the world, hands down, and they are often under represented.

@terfalicious Costa Rican arabica coffee is definitely the best I've ever had. Did a course abroad for a few weeks and got to go to Honduras, Guatemala, and Costa Rica. Normal coffee and chocolate in the United States doesn't hit the same anymore after that haha. Also, can't forget how good some of the Rum and other spirits are!
Now we need a maxed out hot chocolate recipe! I would love one for that hazelnut...

In many places ice cream sells a LOT better in Winter though? Some places it's too hot in the summer, like nearly all of Asia so we do shaved ice during that time of the year instead...cheaper to make, less steps so less melting right away. Plus you get a really nice texture to the ice and it'll change with where you are ^^
Everyone complaining about Josh not cooking enough anymore need to realize that creation gets stagnant if they stay doing the same thing day after day. Josh is a chef, and he will never not be. He is now exploring his talent in other ways and it completely adds to his appeal.

Completely agree. All the videos showing the so-called French hot chocolate are recipes of expensive cafés in Paris, a trap for tourists. But the rest of France don’t drink that. I'm French and I live abroad. Growing up in Paris, I often drank hot chocolate at Carette and Angelina. Josh, you're no joke, Angelina's is by far the best, it's called ‘l'Africain’, which translates as ‘The African’.

I personally wouldn't go for all that cream. It thins out the intensity of the cocoa. I would put a dash of espresso in it and a pinch of salt. Makes it taste more chocolatey somehow.
In defense of Swiss Miss, if it tastes watered down to you it's probably because you're either: A, using too much water; B, using water instead of milk; or C, both.

Thats my guess ! Why because people either make it too rich or to watery but with a mocha, you get the espresso finish.

There's a diner her in town that serves up the best hot cocoa. It's so rich and chocolatey, and the whipped cream is light and fluffy and they serve it with chocolate chips on top ^-^ Uncle John's Pancake House... I haven't been there since they moved locations but *chefs kiss*

1.5 Tbsp Dutched Cocoa into the largeish mug (I like Drost)
Pinch Salt
Very hot water to 3/4 full of mug
Stir and melt the cocoa
1/2 tsp vanilla
Heavy Cream about 2 Tbsps
Maple syrup 1 to 2 Tbsps or to taste
It tastes like brownies

When I saw the Valrhona chocolates in Dominique Ansel's preparation, there was no way you could beat that quality (I live in the town where Valrhona is, it's the only reason I agreed to move there)
I understand everyone yearning for older content of him cooking in his kitchen, but this is his channel and he should do as he pleases. If you don’t like the content, then don’t watch it instead of complaining in the chat. It’s not his fault the algorithm is pointing him to this direction and I’m sure there will be plenty of time for him to revert to his previous style of cooking.
Pretty much every creator hates the algorithm but they all still follow it
I wonder what would happen if they all came together and decided to just do what they wanted
They would lose a lot of money because there are more than enough content creators who would continue to follow the algorithm. The worst part is that making a change like that also affects how RUclips pushes your content, which would result in other creators being pushed over them and it can be hard to get back into that position once you've left.
