In Brazil we have this tradition of eating something at 4 to 6 pm. In rural areas every old lady will have something to give to her grandsons at this time like a second breakfeast
We have the exact same in Algeria at about 4pm we have the " café de l'aprèm" literally coffee of the afternoon and often it's just milk, coffee or late with some sweet treat ( cake, brioche or traditional candy).. so now I live in France and I really like the fact that here too I can have the equivalent that's called "goûté" !

Imo the best french toast is banana bread french toast. There's a breakfast place near me that serves it and it's easy to make at home as long as you don't mind making the banana bread. It you have it with butter and walnuts it's amazing!

So, I took his cinnamon roll recipe, but instead of cutting it into rolls, I cut it in half and baked it in a bread pan. Then I used the cinnamon roll bread in the french toast recipe. Ungodly good, highly recommended.

I just made the churro style French toast for myself this morning. Only differences were, I didn’t have nutmeg(not a big deal), but couldn’t get brioche so I opted for challah bread and I used egg yolks only and…HOLY CRAP was my mind blown. I always hated how my French toast was “eggy”. Then I did a little research and found out it’s the sulfur in the egg whites that create that eggy flavor. So I opted out of the whites and it upped my French toast game by huge margin and this recipe kicks ass!!

This looks so fancy ( and delicious, of course ) ! "Pain Perdu" means "wasted bread" it's a way the poor people found to eat the stale bread. My grandmother used to make it for me when I was a kid : one egg, milk and sugar, fry it and put "cassonnade" on top ! It's so funny that this down to earth recipe made to accommodate left over has become such an epitome of french cuisine XD my grandma would have lectured me if I had tried to make this recipe with fresh bread, let alone brioche !

In Brazil, we have the "rabanada". It looks like french toast: similar ingredients but different technique. It's a typical Christmas dish. We use a day old french baguette. Firstly we dip it into a mixture of milk and condensed milk, then into beaten eggs. After that, we deep fry it in oil. We end up covering it with cinnamon sugar. It's usually served cold. Each family has its own tricks, but that's the basic.

I just made the churro style French toast for myself this morning. Only differences were, I didn’t have nutmeg(not a big deal), but couldn’t get brioche so I opted for challah bread and I used egg yolks only and…HOLY CRAP was my mind blown. I always hated how my French toast was “eggy”. Then I did a little research and found out it’s the sulfur in the egg whites that create that eggy flavor. So I opted out of the whites and it upped my French toast game by huge margin and this recipe kicks ass!!

Wow, I’ve made baked French toast before but I never thought to use croissants. That is brillant. I’m definitely making this. And I love how flaky those croissants are. I find it’s crazy hard to find decent croissants anywhere. I lived in France for a time and I miss their bread so much!

this is really funny to me because in france we just call it 'pain perdu' (lost bread) and use whatever bread / brioche is about to go stale.
This looks so fancy ( and delicious, of course ) ! "Pain Perdu" means "wasted bread" it's a way the poor people found to eat the stale bread. My grandmother used to make it for me when I was a kid : one egg, milk and sugar, fry it and put "cassonnade" on top ! It's so funny that this down to earth recipe made to accommodate left over has become such an epitome of french cuisine XD my grandma would have lectured me if I had tried to make this recipe with fresh bread, let alone brioche !

But yeah, his cookbook mentions are too repetitive that it becomes annoying.
Pro tip: for type 1 French toast, use apple sauce instead of maple syrup. The acidity balances really well with the rich sweetness

In Brazil, we have the "rabanada". It looks like french toast: similar ingredients but different technique. It's a typical Christmas dish. We use a day old french baguette. Firstly we dip it into a mixture of milk and condensed milk, then into beaten eggs. After that, we deep fry it in oil. We end up covering it with cinnamon sugar. It's usually served cold. Each family has its own tricks, but that's the basic.
