Homemade is really good though , there are easier ways to make it without eggs and with cool ingredients just mix them until is foamy and put to the freezer and before it frozens completely mix it again to break the crystals

Fun fact. I worked at a McDonalds for a summer once. And when the staff says that the ice-cream machine is broken then they are lying. It isn't really broken. The ice-cream machine is probably the most sturdy and repairable machine in the store, the reason they say it is broken is because it takes about 3 hours to clean it. And you gotta clean it every day when used. So we just said it was broken, just to avoid cleaning it, as you can only clean when the store is closing, and when it takes 3 hours you have to do overtime, and you don't get paid for overtime most of the time.

I remember the McDonald's near my parents house used to be open 24/7 and back when I still lived at home with my parents I would go there after a night out with my friends and the workers would say they were closed because they didn't feel like working. They were literally the only restaurant that was open at that hour so after that happened a few times I told the owner who was not aware that his overnight employees were so lazy and costing him so much money because they didn't want to work. Needless to say there was a whole new crew there the next time I went during the late night hours and they were open and I got my food. Oops, I didn't think he was gonna fire them all.

While flurries arent very difficult or flavorful, nothing beats the experience if having them on a hot day with your family and friends, or sitting in home at night watching tv. Like street food, its not scientific, its the experience.

tbh I think he was actually serious when he said the mcflurry had no flavor. I made his hot chocolate recipe and it was way too sweet for my tastes even without the extra 60 grams of sugar. I think he just actually tastes things less easily.

I like how the guy doing the blind taste test isn’t even convinced that the homemade McFlurry is that much better. He straight up says that they’re both similar, just that the second is a bit richer. And then Joshua starts trying to convince him of all the reasons why his McFlurry is SO MUCH better, even calling it a straight up win. Sorry but I’m no convinced it was better either, especially with something as simple as ice cream.
Trust me, I have had homemade ice cream, and it is a world of a difference better than store-bought ice cream. I was literally astonished the first time I tried it. And it was not just me, my whole family was amazed at how much superior home made ice cream is, so much that we all went out and bought our own ice cream makers afterwards. The only reason why the guy can't taste much of a difference, is because the candy ground up inside of it is masking the taste, and bringing it down to the level of the normal store-bought stuff. If he was tasting unadulterated homemade ice cream versus store bought ice cream of the same flavor, it would be no contest.

well the modern world's definition of normal food, it kinda trashy. mcdonalds for one, taco bell, and many other restaurants. dont get me wrong, i like greasy, unhealthy food too, but my definition of FOOD is my mom's homemade cooking. its not necessarily "healthy" but its not fake shit that lasts a year sitting in a fridge. if i was a chef like him and had a more sophisticated flavor palate, id be pretty fucking depressed too...

The hard part is having enough ice, a $7 vanilla bean, a place to store a huge metal bowl, etc. The McDonald's drive through is 4 minutes away from my house. Really, I can get two McFlurries and enough gas for my car for less than the price of a vanilla bean, and have it back at my house in 15 minutes.

When I was in high school, I had an agricultural science class where we made ice cream using two metal coffee cans. You'd but a small can inside a big can, surround the small can with ice and rock salt, and then put your ingredients in the small can. And then we rolled it back and forth for about 10 minutes. The ice cream was delicious. 😋

He knows the point of fast food is for convenience, he’s doing this to show you how to elevate things at home. We as Americans spend so much money on food that’s pretty much tasteless, and makes us fatter unless we are an active person. The point of these videos is to show you that you can indeed make these things at home and it actually have flavor. He has all of these nice tools that we can afford because he has built it up. Where do you think he started?
there is a ripoff oreo from biskwi that is far better than the original. every time whoever i'm telling thinks i'm wrong but then once they try it they admit im right. The vanilla ones are bad though only the original is better.
I make home-churned ice cream with eggs and heavy cream pretty often, I use lactose free cream and xylitol due to diet restrictions. It turns out amazing and it's safe for me to eat so I love making my own ice cream. I usually do a heated cream+sweetener plus whisked eggs+sweetener and temper my yolks before adding them back to the heated cream... but now today I learned I can just add some of the heated cream to the eggs with no need to whisk them first, which saves me so much of the work! Thanks!

Its almost like 1 of those parties is not going to put as much love into each individual milkshake and instead choose to make them cheaper so more people can have them. Whether or not he's a good chef if he was mass producing anything the way McDonald's is he would change it up

I put the mix in a KitchenAid mixer and pop it in the freezer and every couple hours pop it in the KitchenAid and give it a mix until it's to a desired texture. Since most people that cook use a KitchenAid already, it's free and it works like a charm

As a Dutch person I have to comment about the bland seeming stroopwafel waffles. I think you missed the spices in there. I know for sure there is at least cinnamon in there. (That makes them so much better)
Love your channel, but as for me, I will get a quart of the best ice cream I can find, let it soften, mix with my favorite toppings in the food processor and drizzle with your homemade caramel sauce. YUM!
Josh I enjoy your videos, the recipes are great, the editing is funny and you have a great personality. But at 3:32 you imply that people asking you how to make ice cream without an ice cream maker is somehow a slight against you. The reason people ask for that, I'm guessing, is because they can't afford all the kit you can, so they are unable to make ice cream in your preferred way. I would assume someone with your culinary knowledge and public internet platform would do their best to find the most accessible way for your audience to make your recipes. For you to essentially say "ugh I guess I'll do it the hard way, without the machine" is a dick move. Not everyone has the ability or the funds to get the right kit to do this. I'm glad you showed us the way to do it with the ice bowl, salt and whisking technique but I don't like that you did it because you felt pestered into doing it. I don't want tell you how to run your channel or make your videos, but as a member of your audience I feel I need to tell you when you are being patronising, at least to me.
Agree with what you are saying but people are never completely happy with what they get. I just read a comment of a person complaining that they can't get a bowl that big to mix the ice cream (when you can easily make multiple batches) or the vanilla bean (when Josh has always said you can easily replace it with vanilla extract)
So I learned a trick from America's Test Kitchen on this. Pour 1/2 of a cup of the ice cream base into a glass bowl, cover with plastic wrap, and then freeze solid in your freezer. Meanwhile let the remaining ice cream base sit in your fridge, covered. Now stir the frozen ice cream base into the liquid ice cream base until it melts. You now have an ice cream base at exactly 33-34°F. It literally takes just 1 minute of stirring in an ice cream maker (or bowl of ice and rock salt) to get it down to freezing. With this process, there is basically ZERO ice crystal formation and the ice cream has the consistency of Haagen-Daz. It's simply amazing.
For anybody else watching, you could also do the double bowl churning method with a hand mixer, goes by much quicker and it's much easier on your arms!

Add enough water to the ice/salt so that it just touches the metal bowl with ice cream mix in to get better thermal transfer. Will save you whisking for as long. You are welcome.
And to clarify, you missed: chicken ballotine, red wine sauce, cuts of veg, balsamic caviar, eggs benedict, chicken saute, classic tomato soup, honey lime and sesame chicken.... it just so happens that nearly half of my videos are larder and half pastry.
I can’t quite put my finger on why these videos are compelling. His recreations aren’t cost and/or time effective. He’s just a guy with an alright personality that’s flexing. Maybe we’re just holding out hope that he’ll do one that truly hacks the system?
If you’re trying to find cost and/or time effective recipes this isn’t the place to go. If you’re looking for that stuff I might suggest a RUclips named “Adam ragusea”
Josh's videos are aspirational and that's part of their appeal. We wish we had the time, money and motivation (and sometimes equipment) to make these things at home knowing they would likely be super delicious. I'm sure some people are inspired to make some of his recipes for things that they really love to eat or to impress others. The rest of us watch to be entertained and appreciate his skills in the kitchen. I think people like Josh because he doesn't talk down to us viewers and really believes we can all be successful in the kitchen with a little bit of effort.
of course the original foods are quicker and cheaper, it's literally called fast food it's food that's fast and cheap, it just isn't that good and that's an understandable trade-off. The point of this series I think is to show that if you put in the time and effort you can make stuff that actually tastes great. Are his recipes 'better'? again I think it's a trade off. Also, I don't really feel like he is flexing, he puts out great recipes, listening to viewer requests and for the most part uses ingredients which are highly available. If you are looking for quick easy and practical recipes there are a lot of great creators like Adam Ragusea doing just that, Josh brings in his background in fine dining so he puts more emphasis on making stuff from scratch and seeking perfects results with recipes that are more time and effort consuming. In my opinion it's amazing that we have different kinds of creators in the cooking section of youtube and there is place here for all sorts of styles, so when I have time and want a cooking or baking challenge I know I can always turn to Josh and end with an incredible result.

Thank you Josh! I've been going to McDonald's twice a week for 2 weeks now only trying to get a mcflurry and every single time without fail the machine is down. Times have changed.
I only mean this to clarify some of the complaints, I am not trying to be passive-aggressive, aggressive, or rude. I apologize if I come across as such. A consideration to make is the access to food everyone has. You used vanilla beans in your base ice cream recipe, which is cool. However, they aren't accessible to everyone (e.g. in the rural area I live in, we've got one family-owned grocery store that doesn't sell the beans). It's also not clear if any substitutes can be used (if it is said, my apologies). So, even though it's simple, it's not fully accessible. Likewise, an ice cream machine is an investment which is why many may feel hesitant to buy one. If you make lots of ice cream, then shelling out ~$70 (according to google, which this is on the lower end of prices I found) is fine. If you don't make a lot of ice cream or if you're strapped for money, then $70 for an ice cream machine is a lot. Again, I'm not trying to be rude, I'm just trying to share another perspective on some of the reasoning behind the complaints. Except for some of the troll complaints, those are troll complaints.
@@yerinlee211 that's true. For the vanilla sugar, that could just replace the sugar in the recipe. However, doesn't vanilla sugar require vanilla beans anyway? I think that would put us back at square one. For the extract, I'm not 100% sure what that conversion would be. It would also depend if it's extract or imitation extract (or at least, I imagine it would).

You actually mix your icecream to get it softer. If you get it in the tub, just mix it coarsely and it gets softer.

Trust me, I have had homemade ice cream, and it is a world of a difference better than store-bought ice cream. I was literally astonished the first time I tried it. And it was not just me, my whole family was amazed at how much superior home made ice cream is, so much that we all went out and bought our own ice cream makers afterwards.
The only reason why the guy can't taste much of a difference, is because the candy ground up inside of it is masking the taste, and bringing it down to the level of the normal store-bought stuff. If he was tasting unadulterated homemade ice cream versus store bought ice cream of the same flavor, it would be no contest.

The hard part is having enough ice, a $7 vanilla bean, a place to store a huge metal bowl, etc. The McDonald's drive through is 4 minutes away from my house. Really, I can get two McFlurries and enough gas for my car for less than the price of a vanilla bean, and have it back at my house in 15 minutes.

When I was in high school, I had an agricultural science class where we made ice cream using two metal coffee cans. You'd but a small can inside a big can, surround the small can with ice and rock salt, and then put your ingredients in the small can. And then we rolled it back and forth for about 10 minutes. I make home-churned ice cream with eggs and heavy cream pretty often, I use lactose free cream and xylitol due to diet restrictions. It turns out amazing and it's safe for me to eat so I love making my own ice cream. I usually do a heated cream+sweetener plus whisked eggs+sweetener and temper my yolks before adding them back to the heated cream... but now today I learned I can just add some of the heated cream to the eggs with no need to whisk them first, which saves me so much of the work! Thanks!

I put the mix in a KitchenAid mixer and pop it in the freezer and every couple hours pop it in the KitchenAid and give it a mix until it's to a desired texture. Since most people that cook use a KitchenAid already, it's free and it works like a charm

Josh I enjoy your videos, the recipes are great, the editing is funny and you have a great personality. But at 3:32 you imply that people asking you how to make ice cream without an ice cream maker is somehow a slight against you. The reason people ask for that, I'm guessing, is because they can't afford all the kit you can, so they are unable to make ice cream in your preferred way.
I would assume someone with your culinary knowledge and public internet platform would do their best to find the most accessible way for your audience to make your recipes. For you to essentially say "ugh I guess I'll do it the hard way, without the machine" is a dick move. Not everyone has the ability or the funds to get the right kit to do this. I'm glad you showed us the way to do it with the ice bowl, salt and whisking technique but I don't like that you did it because you felt pestered into doing it.
I don't want tell you how to run your channel or make your videos, but as a member of your audience I feel I need to tell you when you are being patronising, at least to me.

So I learned a trick from America's Test Kitchen on this. Pour 1/2 of a cup of the ice cream base into a glass bowl, cover with plastic wrap, and then freeze solid in your freezer. Meanwhile let the remaining ice cream base sit in your fridge, covered. Now stir the frozen ice cream base into the liquid ice cream base until it melts. You now have an ice cream base at exactly 33-34°F. It literally takes just 1 minute of stirring in an ice cream maker (or bowl of ice and rock salt) to get it down to freezing. With this process, there is basically ZERO ice crystal formation and the ice cream has the consistency of Haagen-Daz. It's simply amazing.

Josh's videos are aspirational and that's part of their appeal. We wish we had the time, money and motivation (and sometimes equipment) to make these things at home knowing they would likely be super delicious. I'm sure some people are inspired to make some of his recipes for things that they really love to eat or to impress others. The rest of us watch to be entertained and appreciate his skills in the kitchen. I think people like Josh because he doesn't talk down to us viewers and really believes we can all be successful in the kitchen with a little bit of effort.
of course the original foods are quicker and cheaper, it's literally called fast food it's food that's fast and cheap, it just isn't that good and that's an understandable trade-off. The point of this series I think is to show that if you put in the time and effort you can make stuff that actually tastes great. Are his recipes 'better'? again I think it's a trade off. Also, I don't really feel like he is flexing, he puts out great recipes, listening to viewer requests and for the most part uses ingredients which are highly available. If you are looking for quick easy and practical recipes there are a lot of great creators like Adam Ragusea doing just that, Josh brings in his background in fine dining so he puts more emphasis on making stuff from scratch and seeking perfects results with recipes that are more time and effort consuming. In my opinion it's amazing that we have different kinds of creators in the cooking section of youtube and there is place here for all sorts of styles, so when I have time and want a cooking or baking challenge I know I can always turn to Josh and end with an incredible result.

Stroop is pronounced like strope, the vowel sounds like "o" as in "over", so basically "strope" in English understanding
Its hard when there’s a psychological test called the stroop task. Which I always pronounce wrong 😂. Also missed cinnamon in the “stroop”

I only mean this to clarify some of the complaints, I am not trying to be passive-aggressive, aggressive, or rude. I apologize if I come across as such.
A consideration to make is the access to food everyone has. You used vanilla beans in your base ice cream recipe, which is cool. However, they aren't accessible to everyone (e.g. in the rural area I live in, we've got one family-owned grocery store that doesn't sell the beans). It's also not clear if any substitutes can be used (if it is said, my apologies). So, even though it's simple, it's not fully accessible. Likewise, an ice cream machine is an investment which is why many may feel hesitant to buy one. If you make lots of ice cream, then shelling out ~$70 (according to google, which this is on the lower end of prices I found) is fine. If you don't make a lot of ice cream or if you're strapped for money, then $70 for an ice cream machine is a lot.
Again, I'm not trying to be rude, I'm just trying to share another perspective on some of the reasoning behind the complaints. Except for some of the troll complaints, those are troll complaints.
For the vanilla beans you could substitute that with vanilla sugar or vanilla extract.

@@yerinlee211 that's true. For the vanilla sugar, that could just replace the sugar in the recipe. However, doesn't vanilla sugar require vanilla beans anyway? I think that would put us back at square one. For the extract, I'm not 100% sure what that conversion would be. It would also depend if it's extract or imitation extract (or at least, I imagine it would).

@@yerinlee211 and that's great! but part of my point is that not everyone has the same access to the same ingredients. our grocery store has vanilla extract and imitation vanilla extract and that's it. we don't have vanilla sugar, vanilla beans, or vanilla paste. so, what works for one doesn't work for everyone.
