Potato bread is one of the most underrated foods in the world. It’s so good even not toasted with some butter on it. Makes a great late night munchies snack
It is unobtainable where I live. As is the famous 'Hawaiian' buns you hear about, They just don't exist here. We do get really good buns that are called kaisers but which are not especially crispy crusted and not chewy at all. Their only drawback is they are 6" across, so your burger cannot be two patties lest you actually die trying to eat it. They toast beautifully, and can be found with poppy seeds, but not usually sesame seeds. they bear very little resemblance to actual kaiser rolls, which also exist here, but they sure are delicious. Biggest problem with them is they are like baguette in that they are stale in 12 hours.
I'm going to have to try it for my next burger. I'm not ashamed to say every time I go past potato bread at the supermarket I simply ignore it 😬 Never tried it, and it looks like I should! 😯
I've been going down a Motz RUclips wormhole the last 3 to 4 weeks. I've probably had smash burgers at home 6 times in that time....everything from the slugo, to the OK fried onion, to the ridiculous green chili burger. To see JW and George work together during this culinary phase of my life is OUTSTANDING. Loved this video! Now, get Josh with Aaron Frankin or Johnny (Jirby) White and we'll have a culinary BBQ explosion on the RUclipss.
I like that you discussed the top options for each factor. It started to give me ideas on different combos, like pretzel bun with smash burger and provolone for a random different flavor combo when I want something less traditional
Nice demonstration showing that less toppings and sauces can sometimes deliver more flavor. Thank you both for this experience backed, terrific tutorial!!
I add a chestnut duxelles to my burger meat. It does three things for me 1. You get mushroom, garlic, shallots, and a nutty flavor that adds to beef instead of overpowering it 2. The duxelles will absorb some of the fat which makes it nice and juicy. 3. I get a uniform bite without toppings going all over the place.
That’s why I like watching Marco Pierre White’s cooking videos. He uses real world ingredients a lot, and isn’t as snooty as some chefs are these days, though he could afford to be.
George is a freaking legend! Met him when he did a pop up in Manhattan a few years ago and had the best burger of my life. Very chill and down to earth dude to boot.
This was great! I completely lost it with the sort of record skip moment when George had the sauce, but he quickly said I wouldn’t put it on my burger though (even though he absolutely loved it ). Hahah. Seems like Josh learned a lesson in this video too! Almost less is more. Well done on this video!
I agree that a simple burger with minimal ingredients is best. Cheap potato bun, 80/20 ground chuck, American cheese, grilled yellow onion, dill pickle, and a few dots of classic yellow mustard on the patty while cooking. Viola! The perfect smash burger.
Thank you for the video! Learned a lot actually in 20 minutes and there was a great balance between the two speakers! Happy to know the differences in textures, juiciness and sauciness!!
My favorite is also variation of the Oklahoma smashburger. Bottom bun, spread of caramelized onions, bottom smash patty, cheddar cheese, top smash patty, american cheese, pile of stringy grilled onions, yellow mustard, top bun. Making proper caramelized onions is time consuming, so I make them in relatively large batches and freeze them in ice cube trays. I add a little beef broth so they come out of the trays easier when frozen.
Quick search revealed this is legit and caramelized onions do freeze well, what a game changer 🤯 I'm going to be so happy after I stock up!! Thanks for the tip
I like a little ketchup, even though I hate mayo I can live with a “burger sauce.” Most restaurants just drown it in sauce though, I just need the bun to be a little moist so it goes down easier.
Have you considered doing more shared critique vids? It is a fun format that leads to surprises for both parties. I always remember the Chef Netflix series where Favreau and Roy Choi make kimchi (I think) and Roy likes Jon's better, but Jon says, "Chef, this is YOUR old recipe." Either way great vid!
I am convinced that there is not a SINGLE perfect burger, but there are best in class for the different patties. Both of yours look fantastic, and I will have to try to make them both.
So first off, if you are a burger person and not just that chicken nugget at Chilis kid who only eats one thing, you know there are different perfect burgers. Some burgers are AMAZING with cheddar cheese. Jack n the box puts different "color" cheeses on their burgers and they're pretty great. Different burgers for different situations.
Fully agree. Sometimes you want the greasy almost no toppings smash burger, sometimes a thick medium cooked patty with all the toppings and sauce. Sometimes raw onions, sometimes caramelized. In the end a burger is a sandwich and more of a concept than a specific dish.
This kind of editing is really jarring, and it makes you look like you just have George motz to stand there and look pretty while you just do your standard video. Why even have him on when you cut 90% of what he says and piece together a few words every now and then in between your constant jumpcuts? This is such a shame
For my burgers i go with whatever bun i can find. Something brioche adjacent prefeerably as low on sugar as posible. For the sauce, i go with ketchup, but a very small amount, add a little touch as in your mixed sauce, but without the other things. Now, the meat... It's very rare to find fatty beef in my parts, it's always lean veal in our butchers and grocery stores. So i have to go with what we have, i do add some butter or extra virgin olive oil to the pan, and i like them thicker. For the cheese, i go with a combination of provolone for the meltiness and aged cheddar for flavour. For toppings, i tend to skip them, but when i don't it's sliced tomato and/or a fried egg.
You can't go wrong trusting a man with Wolverine level sideburns. Also, it's hard to believe that the word "bacon" was never uttered once in this video.
You bring up a really excellent point here. I live in NYC and I’ve been to Hamburger America a few times - - it really is pretty spectacular. It’s like having a burger that’s just what a burger IS. And what I realized is that bacon is a crutch. Bacon is just great on its own, and covers up a lot of mistakes in cooking. That’s why the fast food chains are all so bacon crazy, it’s covering up the fact that their burgers themselves are pretty terrible.
This is why George is the goat. Cool, calm and collective. Letting Josh find his own way to the truth. This is why its ok the Josh was the one talking. The master allows the student to find the path himself.
You invited a man who is "expert" in hamburgers just to stand and taste stuff with you. Where the expert stuff, the information, the demonstration, the wisdom????
George comes on screen for the first time at 0:08 anf the first time he speaks is at 0:51 - thats 43 seconds from introducing him before he is allowed input. I know its your show, Josh, but maybe the script of the introduction or explanation of the concept could have been split up better.
Weird to see Motz's perfect burger at the end. My favourite fast food burger at the moment is from a place called Freddy's (not a massive player in the market, I don't believe...). Their basic double which is what I get is simply: two smash burger patties, american cheese, pickles, onion, mustard...and a normal (potato?) bun. They serve it with a drink and excellent thin fries for $9...which is a reasonable price for what you get. They have sauce on the side called fry sauce (the jalapeno version is excellent). It's amazing that the simplicity won me over. It's just a good burger without being fancy/crazy/etc. I know they sell other burgers, but their basic double is just excellent every time I've been.
Of the drive-thru chains Freddy's Frozen Custard & Steakburgers is my favorite too but for about the same price I can go to Texas Roadhouse and get their lunch special (mine opens at 3pm M-F but 11am weekends). More meat and thick fat steakfries (skinny or fat I don't think there is such a thing as a bad french fry). I can sit down at a nicer table and get served instead of standing in a line of parents with screaming kids or in my car breathing the exhaust fumes of the car in front of me. Relaxing if I'm there when they open, before they get crowded.
Before I make this comment. I will say, I absolutely loved this video. However, Joshua, you dropped the ball on this one. George is a master of burgers, and as several other people said, you basically talked the entire video, and in my opinion did not take much consideration into George opinions. I will say, you started and continued with through-out the video saying, “my ideal burger” so, with that being said I do understand. I just personally feel like your ego really showed.
Pretzel potato bun, smoked gouda and muenster, two smash patty OKC style, with round pickles, spinach, hot pepper relish, and a touch of mayo. Chefs kiss*
I agree with everything - with one exception: the addition of Hatch green chiles (or jalapenos in a pinch). I absolutely love green chiles on a burger. If I'm hung over, give me a runny egg as well.
I love that Josh pushes texture over taste over and over and over, he even REFERENCES HIS BOOK, but then chooses smashburger over thick for the flavor😂 CMON JOSH. I love both styles tho
You’re one of my favourite RUclipsrs, I’ve been here since 40k subscribers I’m so proud of the evolution ❤. Wanna help me pay my fine so i can still watch you instead of going to jail LMAO?
Georges burger, No cheese on the top pattie. i flip the top bun after being toasted to toast the top of the bun. That is when I put the second slice of cheese on the top bun to seal the toasted inner keeping the sauce from soaking into and sogging the bun. 80/20 with a razor thin slice of onion under the cheese on the bottom pattie to keep it from sliding around. (Plain unseasoned typically, but will occasionally mix Montreal Steak seasoning into the beef) My sauce is a 50/50 mix of Heinz Ketchup and Gulden's spicy brown mustard! With Doritos' Sweet and Spicy (purple bag). Lemonade or Dr. Pepper! Perfection.
For everyones information: Cheddar does not melt, it sweats. The oil it secretes is the flavor of the cheese, but that's okay on a burger you just have to know what you're doing. By merely allowing the cheddar to sit briefly on the cook surface atop the patty the cheese will soften, you'll see the edges dip, and that's perfect. The oil will have sweated but it won't escape the burger Josh fucked up the cheddar by melting it, a LOT of the flavor is going to end up running out of the cheese and across the cook surface if you melt it under a bowel (aka the flavor). This is why when we make mac and cheese we melt the cheddar into a medium (usually creme) to capture that oil and all that flavor that the cheddar has.
My burger of choice is cheeseburger with mayo, pickle and onion. That's it. If I happen to go to Wendy's, I will put the chili sauce on it to add a little flavor. The simpler, the better! George was awesome.
I'm Australian. Pickled eetroot on a burger is really good. So best burger. Tomato sauce, bacon, onion, burger, beetroot, fresh tomato and lettuce. Add cheese if you must. Add an egg if you like. Some people like "the lot" and add pineapple in addition to the aforementioned! But burgers are really changing in Australia. Lots of aioli, Americal cheese and pickles. MacDonalds have a lot to answer 18:21 to!
It feels like Josh was focused on elevating the burger to another level while George wanted to distill the burger to its purest form
Very nice, concise summary of the video. Nice!
I just wonder why he didn't grind various beef cuts (like short rib, brisket and maybe bone marrow) for an even better tasting perfect burger.

If the perfect burger needs bacon, it has failed.
This is one of your best episodes! I loved the feedback from the expert.
This was a great video! We love a George Motz Burger.
bro i love watching food videos, for some reason, so satisfying 🤣
You bought him to make the perfect burger and you didn't even ask him before deciding on the best burger ingredients
He agreed to each ingredient like did you watch the video
Shut up, we want to hear George talk lol He’s just standing there awkwardly. 0:48
Wow, when I saw the Kaiser roll I almost had to gasp. I never thought that they make it so far and are known outside of Austria or central Europe.
Were you listening to him at all?
George comes on screen for the first time at 0:08 anf the first time he speaks is at 0:51 - thats 43 seconds from introducing him before he is allowed input. I know its your show, Josh, but maybe the script of the introduction or explanation of the concept could have been split up better.
He doesn't script his vids
@@TherealbeastgohanI can tell lol
I’m not a fan of smash burgers, but to each their own. I like a nice thick patty that’s a little red in the middle.
You guys were very entertaining to watch together! Also love your videos!
George comes accross as one of the most genuine people you could meet. No wonder he is so succesfull.
the pretzel bun looks like the one u get for 50cents in germany at ur nearest ALDI
I hate what happened to your thumbnails
It got beastified
Same
Mr breast lookin ahh
Is probably what Mr beast has said about thumbnails, that thumbnails like this one generate more clicks and etc but same
What happened to the thumbnails?
13:35 I'm not a little baby, K?
The editing on here is fantastic
Pretzel potato bun, smoked gouda and muenster, two smash patty OKC style, with round pickles, spinach, hot pepper relish, and a touch of mayo. Chefs kiss*
I saw this while eating McDonald’s.
Too much camera movement and cuts, makes me dizzy 🤷
Don't watch it then, baby

Joshua taking a page out of Andrew Schulz's book to not let the guest speak, Got annoying as soon as I noticed it
How do you not even give pepper jack cheese a thought!?!? It’s hands down my favorite slice of cheese to put on burgers and samiches
Josh made the burger he thought he wanted. George made the burger Josh actually wanted.
Glad people are waking up to how insufferable josh is most of the time
no views in 10 seconds unc fell off
Bot ahh
I can't wait for this meme to fall off
NNNNNNNOOOOOOOOOO NOT JOSH 😢 😱😭
I agree with everything - with one exception: the addition of Hatch green chiles (or jalapenos in a pinch). I absolutely love green chiles on a burger. If I'm hung over, give me a runny egg as well.
George is right on the money. I love these videos!
You didn’t in fact create the perfect burger, Josh. The cohost did. The title should have said “we” created the perfect burger.
cooked patch on one side is pure genius. I've watched so many smashburger videos.. How have I never seen that before?...
Agree with American cheese, but half Swiss / half blue cheese is amazing on a thick grilled burger.
In Germany, you can find really nice Laugen buns in supermarkets, and they are my go-to for smash burgers.
That basically happens with any melted cheese unless it is processed. That is why American cheese is so good for burgers.
This is what I have been waiting for, the Collab of the century !!!
lovely duo guys, hopefully you will appear together in more videos in future
George is the burger god. You had no chance of beating his best burger.
My burger of choice is cheeseburger with mayo, pickle and onion. That's it. If I happen to go to Wendy's, I will put the chili sauce on it to add a little flavor. The simpler, the better!
George was awesome.
Excellent video.
Josh, please don't let anyone, even George, guilt you away from a good amount of sauce.
Josh wanted a perfect flavourful mix of wonders while George just wanted a burger with no complications.
George Motz is a national treasure
