    Thank you for inspiring my 15 year old son. He made smash burgers for our family tonight, together with the sauce you made from Chick-Fil-A, & they were such a hit. Best burgers ever! Because I love to cook, he was the one who introduced me to your videos.

      I mean it’s not a weird method it’s just like deep frying chicken. It’s not the method that’s weird, deep frying is normal, it’s just the meat, cause deep frying beef is kinda weird.

    Man, I Never had any interest in cooking… but then I came across your channel and really saw the value in the art of making my own food. When I saw your book on the internet for the first time, buying it became my number one objective, but here in Brazil it was VERY FLIPPING EXPENSIVE, but yesterday, my lovely girlfriend gave it to me as a gift and told me that she saw how important your videos became to me.
    All I wanted to say is that you’re an amazing guy, keep up the good work, and you should be aware of the help you gave me and a lot of other people, because my depression was shoved down the trash can along with every bad dish I made before knowing you.

    Frybread, in South Africa we call it Vetkoek, (directly translated, fat cake). It's very popular and served with chicken mayo or savory mince (amongst many other variations). The burger idea is an interesting one, one difference, the Vetkoek is cooked beforehand and ingredients added afterwards.

      During my childhood in Australia we were doing it tough and one of my favourite foods (that was very cheap) was "bread and dripping".
      Precooked bread fried in fat.
      I know it is depression food and I'm not that old ( 65 ) but it still tastes good.
      These days the bread is two slices with butter and cheese in between but the frying is still in dripping.

    Even though it was a simpler version that only used ground beef I was very happy to see a frita cubana on here. I understand that for the challenge it was just hamburgers but fritas usually do have chorizo, pork, and beef. It really depends on what you have at home when you make it

    For the patty melt I also recommend trying it on sourdough bread, and for the onions I recommend caramelized onions. In terms of sauce 1000 island or basil pesto are good options

    I've never once heard the rule on Jucy Lucies not allowing any other fixings. Not shocked it didn't perform well without some sauce. I also get the feeling that the Smash Burger would have done better if it were a double patty, the texture of a double patty double cheese Smash Burger is extremely hard to beat.
    That said, a Smoked Steakhouse Frybread burger... yeah I can understand why that's the holy trinity. I want to try that now.

    I really like the specifying of specific kind of meat, bun, etc. As it keeps everything fair and balanced. Then if people would like to use an alternate bun or something like Chorizo patty, they have 30 methods to decide which they want to use. Props to pappa for sticking to the "method" being the key difference and allows all the trends and variations to be applied on their own.

    Considering he did the Texas toast one with 2 patties I feel as though he should have done 2 patties for all of the smash burgers too because he himself said he does his smash burgers with 2 patties and all of their ratings were consistently lower due to not having enough meat and tasting too much like bread

    I love how you were adamant about the 75/25 beef, absolutely no 80/20. When I was a kid I would have given my key arm for 80/20 because my parents always got 93/7. Essentially when i was in control of buying my own hamburer it felt like absolute luxury to be able to get 80/20. But now 75/25 intrigues me.

    1. Use the same buns on every burger, and make the testers eat 28 burgers.
    2. Watch your testers mark the two burgers that didn't use the same buns the highest - not for the burger, but for the bun.

      I know this is late but I imagine these videos are made over the course of 2 months because I can't imagine making someone eat that many bites of a burger in one day or even in a week. People would get so tired of eating the burger that the taste would become gross not long after.

      That is more than a few chefs (most) I could name but I think Uncle Roger has 8.8 million still second/third place is not bad. He does not have TV shows but I do think he has learned from Nigel that humor helps.
      One of the most under valued channel if Chef JP as well as Vincenzo's Plate. One is about teaching how to making good home food and the other is about Italian food with plenty of Uncle Roger type of silly reaction videos. Oh and James "many many years" Makinson, he explains why others react the way they so and sometimes tests recipes but only watch if you actually want to be chef.

    I grew up with Vetkoek (fry bread) and I am 58. We have made it every way possible. The vetkoek burger, the vetkoek hotdog, you name it. But just fry it plain, fill with filling of choice (chicken mayo, curry mince, whih is the traditional South African thing to fill it with), or with jam or golden syrup. Make small finger food vetkoeks and fill with pastry cream and a drizzle of glazing. With Vetkoek in your repertoire you are never at a loss what to feed people.

      It’s hard to beat the smash burger if you get the meat ratio right. Which again is probably why every burger after it that didn’t specify to do it some way other than a smash burger was pretty much a smash burger.

    Lovely! The fried bread - we call it vetkoek (fat cake). I prefer to use yeast. You can proof it longer or shorter or proof twice to get different results. I've tried the wrap before fry, but I prefer to add the patty after making the vetkoek. It's nice with savory, but butter, apricot jam and cheddar on a fresh, crispy vetkoek is hard to beat.

    Sous vide burgers are legit the best burgers I've ever made at home. The real perk is they can be as thick as you want. Super good.

      @@bananeeek8376 I've done them either way, but the better result was to let them temper/refrigerate, Then unpack/dab the surface with a paper towel, then salt/pepper and sear.
      Treat it the same as you would sous vide a steak. Ensure correct hygiene practice and never exceed over 2 hours > weight to cook time does vary.

    The fry burger reminds me of one of my favorite foods ever, from Trinidad & Tobago (super popular as a beach food ): shark and bake! Basically, instead of a burger patty inside its fried shark (its called bake bc the "bun" is called fried bake). It is incredibly delicious.

    I first time I saw the Luther burger was in the Boondocks animated series. I then found out it was also the origin of the burger. Grandad’s version was far more indulgent and when people ate it they would get a food coma prompting the restaurant to get beds instead of tables.

      People worked a lot more than, we have become coddled by tech. It is a lot easier to eat a slightly burger when you do manual labor instead of sit on a chair and type all day. When I get out I do 15000 to 20000 steps a days not 500.

    Hello, thank you for the video!
    I would have liked to see the judges try the ultimate burger to see how they'd rate it.
    I would also have liked their reasoning for their ratings, especially Kendrick, who seemed to have low ratings for a lot of them.
    I wonder if the judges eating burger after burger affected the ratings at all?
    Kendrick with his "everyone is so creative" got me laughing so bad I choked.

    In regards to the Fry Bread Burger,
    Out here (Navajo Nation & probably most other Reservations) we form the dough like a tortilla, and fry it like that. We fold it over, and it's really good with green chile. Ideally Hatch Chile since we're in the southwest, but regular Anaheim peppers are good too. I personally like it with lettuce, and tomato, because I think the sweetness compliments to the sweetness of the chile, but a lot of folks eat it with just the meat, cheese, and chile. Our communities have flea markets with food vendors, and it's really good to get everything fresh, and straight off the grill.

    Great episode. I take exception to your patty melt. I grew up in Southern California, and there a patty melt is made with a generous helping of caramelized onion and served on grilled (for the melt part) rye bread. I sure would like to try the smoked steakhouse frybread burger.

It got popularized when it appeared on "The Boondocks" back in 2006, a little less then a year after Luther's passing. There is another claim that it came from a bar in Decatur, Georgia

      The fry bread is actually also a very traditional and popular dish in South Africa coming from the Afrikaans culture and is called vetkoek here translated directly to fat cake. It is made exactly the same as in the video but is fried without any stuffing just the dough itself

    The ‘fry bread’ you made has a local name in South Africa. It’s called vetkoek (fat cake) here.
    It’s very popular in SA served with a curry mince. I’ve never tried it as a burger. So I’ll give it a try. 😊

      "fry bread" in the US is a First Nations cultural centerpiece (it is a problematic thing but nonetheless important), I don't know if it has any FN names possibly not since it came about after colonization. Anyway it's fantastic and is particularly good for making tacos. I feel like he probably didn't use a good recipe here though, I've never made it myself but I think that it should have some sugar in it because every time I've had it there is a slightly sweet flavor to the bread that adds to the uniqueness you are experiencing.

      Having worked in the catering kitchen at a convention center, I can attest that during the big intertribal events that we sold a ton of fry bread with absolutely zero hyperbole.
      The bread may or may not of had sugar depending on how sweet it was. Without added sugar in the dough, they still get a hint of sweet from the starch carbs caramelizing on the surface. That said, I have also seen them with enough added sugar to compete with King's Hawaiian lol.

    I know y'all didn't have a lot of time because you did so many methods but it would have been cool to hear what each one tasted like and why they gave the scores they gave.

      I agree I think they could've made the video a bit longer to include more info on the results. I thought it felt really rushed having 30 different cooking methods in 23 minutes. Didn't leave room to expand on... well anything frankly

    Can you try a bone marrow burger? Not drizzling it on, but incorporating it into the burger itself? I've seen ribeye + rump + bone marrow run through a grinder, but I'd love to see your take on it.

    I haven't made a burger in instant pot but if I was going to, I would use saute or if steaming was your goal, use a tray to keep meat out of the water. You did a great video. I really enjoy them. You got me into fermenting.
