One of the tricks with five guys is there are some things you just can't order on their burgers unless you're eating it in the store and getting it out of the wrapper as soon as possible. Mushrooms and grilled onions are great on their burgers, but those two drench the buns if you take more than like 5 minutes to get it out of the wrapper.

I don't really mind a soggy bun if I'm getting a takeout burger cuz it sort of just comes with the territory. I do agree with Josh though that those patties are begging for some S&P
Fun facts about Five Guys: I worked at 5 guys for 2 years. We smash all our patties in house. We don't season any of the meat. We use kosher hotdogs and slice them before the grill. Every patty is between 6-8oz per bc we ball them first and weigh them then smash them. Do NOT get a cheese burger. The upgrade isn't worth it because the most inexpensive ingredient at 5 guys is actually the cheese slices. It's not worth the extra 2$ for a cheeseburger. Every burger at 5 guys is a "double" unless you specifically get a "little" cheeseburger. Also for the fries. We cut them and shift them through a 10k potato cleaner around 4 to 6 times in water until the water runs clear. All potatoes are hand cut in a slicer not by a machine. Usually there's a designated slicer for the morning shift to cut all the potatoes for the day. For every bag we cut is roughly 3 gallons of cut potato fries. On busy days we might cut 12 bags a day. We have to cut it, fill the tank up, filter out starch and shift it then turn the shift machine off drain it and do that about 3 more times. Then do that for every bag. Then fill up buckets and put the fries in that buck and put them in the cooler walk in. Every fry you eat is cut that day in house. As fresh as it gets. The area we get the potatoes from is written on a dry erase board every few days after we get a new batch. We do have a secret menu item. The grilled cheese burger. Yes exactly as it sounds. 2 grilled cheese that make the buns then the actual burger with cheese and whatever else you want on it. Food hack. Bring the fries home and use the air fryer to reheat them and it's perfect. Use HIDDEN VALLEY RANCH. For dipping. There is no ranch at five guys but it's by far the best thing for them. One more thing. To cook the fries they "precook" them by feel. We squeeze the fries right out of the fryer with a gloved hand to feel the texture of the outside. Then they cool for minimum 5min before making the final cook where the inside is soft like mashed potatoes. There's not a single timer it's all based of feel by the fry cook that day so every batch of fries you get is special. They have a standard for a perfect fry every day because it's so important to them. Rant over. Enjoy your 5 guys

I've been watching this channel for a while now and now just realized that two days before this video uploaded I'd just bought a 1/2'' piece of steel plate for the BBQ and that changed this year's BBQ game!! Since then, everything gets cooked in the charcoal BBQ and stuff like the onions and mushrooms really do get their time to shine on the hot plate!! Meat is also amazing! I heat up the cast iron ribbed plate over the charcoal and just mash the patties with it on the plate, they sear instantly and you get all the beautiful tasties from the stuff you cooked just before... Beautiful!!!!!!
There is a reason a lot of fast food chains under season their foods. fries and patties mostly. They then include some extra salt packet along with your serviette. And when looking at the health or nutrient specs, your meal is super low in sodium, while the chain knows you just going to add the extra salt anyways. As long as they do not add it to your food, they do not have to declare the sodium intake as part of the product.
putting the mayo at the top makes it so it hits your tongue first when you bite, it's part of their flavor profile, having it on the bottom will make the flavor apparent after a couple chews which you can work with, but you would have to switch some stuff up. It sounds crazy, but people get paid to develop this kinda stuff
I think my main issue with 5 guys (other than the price) is that even when you order to eat in, the foil the burger is wrapped in makes the bun all soggy. I'm not a fan of wet bread.
Hell yeah ive been requesting this for soooooooooooo long (as a five guys employee myself) also the reason we dont season the beef is because corporate claims it "takes too long" because we only get 7 minutes to get an order out starting at the moment the ticket is printed i personally think that's bull and I can easily think of several ways to season the beef and still have enough time
dude what shitty 5 guys are all ya'll working at? "takes too long" is definitely not a corporate reasoning, it sounds like a bullshit, horrible management decision that if discovered would result in an immediate reprimand or someone no longer having a job. there's a reason they have you sit, your first 2 to 5 days watching videos and taking quizzes before they even let you touch any product. report your manager.
I need a bloopers reels or like a behind the scenes like side show with episodes. Something where we get more Josh and the crew involved. Big fan and love what yall do!!
Idea for a next Bit Better: make your version and wrap it, go to the place whose item kn the menu you tried to improve, order it and then try both of them. This way you won’t have the advantage of making something fresh and not having to drive it around town wrapped in foil :)
My first Five Guys experience that I can recall was in Cedar Rapids IA. Pretty sure they even had their own building, no strip mall. Lovely burger, delicious fries and shakes. I'm glad you like it too, and moreso that you still did a But Better challenge with them. Well done on the burger too.
Exact same problem I've got with them as well, just season the damn patties already! To counteract the blandness, I always ask for some cajun seasoning on the side, then sprinkle a generous amount on the bottom patty which makes it sooo much better.
This is what I do as well 😅 Except I sprinkle some before every bite. I may try asking them to put cajun seasoning on the patties instead of doing it myself.
I manage a five guys here in Tennessee, and you can order seasons on your burger. Salt pepper and even Cajun. You can even tell us where you want it And when. On the patty before we cook it or after. Or on the veggies
As someone who works at five guys I will never understand why people love five guys. There’s no seasoning at all the food isn’t frozen in store but comes to us frozen (meat and bacon) also a note five guys uses protabella mushrooms. I always season my burgers before break and yes salt the tomatoes lol. Love the video
Here are some fun fact about five guys: 1.Five Guys started in Arlington, VA, in 1986. It's a family-owned business. Four brothers, along with their parents Jerry and Janie Murrell, started it from the ground up. Years later, a fifth brother was born - hence the name. 2.The family strives to keep a mom-and-pop feel to it. In a video interview with Forbes, Five Guys CEO Jerry Murrell said, "I've always noticed, in every small town, there's always a place where you can get a good burger; usually a mom-and-pop place. I thought, 'Just have a place like that.'" 3. Five Guys uses fresh ground beef with an 80/20 ratio (lean meat to fat ratio) for its burgers, and employees form the patties by hand every day. 4.There are no freezers in Five Guys locations. 5.Five Guys only uses peanut oil.
Mom and Pop places don't usually don't cost near as much for a burger and fries in small towns, and its really hard to pretend its that when you have a cross country franchise.
I've tried making homemade burgers with both pickle chips and pickle slices, and i think i prefer pickle chips. The heterogeneity of the pickle chips really improves the unique-ness with each bite, giving a slightly different flavor profile as you get different amount of pickle due to their positioning
Possibly controversial opinion, but...if you're going to make a big burger it should be bigger around, not taller. Your burger looks amazing dude, but I'd have to unhinge my jaw like a freaking snake to eat it. Obviously I'm still going to make it though.
Just ordered a cast iron grill presser or whatever it’s called and love using it. Also use it to cover small pans or pots to keep things warm or melt something
I love Five Guys, and yes, I love the thin slightly squished bun. What I don't like are thick burgers. Two thin or smashed burger patties are perfect for me. But yes, it HAS to be seasoned. Lettuce, tomato, mayo, bacon and jalapenos... Occasionally BBQ sauce or hot sauce. ok, now I have to go to Five Guys...
You are my absolute hero! I love how you always skillfully make these things better. I am a bit disappointed though that almost always “better” for you seems to mean “bigger”. Waaay bigger. I think your stuff is always perfect enough that you don’t have to turn this into car sized portions. I mean … who can eat this mountain of a burger. I think you don’t need size as a parameter for “better”.
Yeah, honestly... in case of doubt, the better burger for me is the one i can actually get into my mouth. Which, in Josh's case, excludes about 100% of every single burger he makes.
I’m a manager at a five guys here in the UK our service is simple, simple menu, simple operations. We season our grill in the morning using a patty, the buns are new atm we are currently trialling a few recipe not sure if it’s the same in the states tho. As you know everything is fresh never frozen so quality is assured. I hope everyone does enjoy the experience when you go into a five guys as we pride ourselves with the customer experience. A little secret too if you’re still hungry we’ll happily give you more (usually fries)
i stand by five guys is one of very few fast food chains that actually has a burger that is simply good, its not just fast or convenient but something you can actually enjoy for the flavor
Ya know... as somebody who worked in the restaurant business, it makes me happy to see the AMG behind this guy's head. Well deserved, been watching since the beginning.
I was in a burger argument with some friends (like you do) and my contention with 5 Guys was that 1. it's really expensive 2. but most importantly, every single time I've gotten it the burger has been unseasoned. Feeling much vindication now.
i used to walk by a five guys that exhausted the grills to the sidewalk every day and it smelled so amazing. About once a month I'd say "Damn I am absolutely craving that" and every month I would crumple up that foil in disappointment that all those nice ingredients just taste like cardboard :\. Let it never bee said I didn't give 5 guys enough of a chance
Hey Josh. Love your channel. Have cooked many things your way, and also I purchased your book "Unapologetic" (Great Value). Please do some stuff on slow cookers/multicookers/pressure Cookers and also more about fish especially baked fish Thank you!
Our seasoning is the mushrooms and onions that get grilled on the grill, that's the natural seasoning for the Five Guy's burger, we're not allowed to put requested salt, pepper, or Cajun seasonings on patties when on the grill, only after due to the fact that not all customers want that on their burgers to so many personal preferences and we don't wanna fully clean the grill nor have the time to in between orders. Our beef is always 80/20. They are also only between 3.6-3.9 oz per patty. Just a few things you should know before judging or assuming what Five Guy's does or can do.

I don’t know anyone else’s opinion about this, but something we do at the restaurant I work at, is put any cooked toppings like onions, mushrooms or eggs underneath the cheese before we melt it, so that way it’s nowhere near as messy. Ever since I started working there, It’s how I always do my burgers
Same! I live in Germany and pretty much every local burger place makes their buns that way. They're even drier than the regular American ones bc the dough is really dense. Kinda like regular German bread and t doesn't work for a burger. The fact that they barely add any sauce doesn't help. I don't understand why they're so popular literally to the point where they taste the same everywhere.
As someone who worked at five guys and worked the grill to be specific I can confirm that no seasoning is used on the meat it’s just straight up 80 20 beef smashed into a patty
Maybe I'm in the minority, but I actually like the soft bun... mooshy and wet, no... but I much prefer a soft slightly squishy bun to a thick firm 'fancy' bun. Also Five Guys cajun fries are the best.
It's too damn tall by far. I suggest removing 33% of the bun's height (simply make the bun flatter). If it's still too tall, make these meat patties - which are fairly thick, considering there are two of them - flatter and wider, even if it means one side is less well seared (or put it in the fridge prior to searing, so it won't get over cooked). If even then it's too tall, chop up that slice of tomato and mix it with the onion.
Yep, too tall. I hate the monster burger; Very unpleasant to eat. Also, what's with 1/2 burger being the default now? And Josh's recipe calls for up to 10 oz. of burger. To me, 2 - 3 oz. burgers with American Cheese, on a standard bun is the perfect ratio.
What people seem to forget is that five guys is a "Fast casual" restaurant, not a "fast food" place. You get your food after like 8 minutes also they don't have drive thrus. The food is also reportedly fresher than say McDonald's and they cut and cook their fries fresh on site all of which explains the increase in price. They also don't have any freezers on site
Hey Joshua, you should make a series called "basics" or something and tell us the basics, like, why you punch dough after it rises, why bakers use chocolate bars instead of chocolate chips, and really just anything that you know that a home cook does not know. Thanks.
@@TheGrassman12 Did he specifically state using normal oil though. Because normal oil could be olive or vegetable oil and I heard neither of those two words. He might have just forgotten to say peanut before oil.

I love there soft buns, they compensate for the thickness of the burger, I had to feed one of these to someone with limited mouth mobility and I could legit press it into a pancake it’s so tender
I've never been a fan of Five Guys' burgers - especially for the price. It's just a burger, bleh, and the buns are always soggy. But their fries are my favorites, so that keeps me going back once in a while.
Hey, papa Would you ever consider doing a “but easier” series for people that are really new to cooking, or people that can’t afford/don’t have access to some of the ingredients or supplies needed? Also can I get a kiss from papa?
You forgot the most authentic part of a Five Guys experience, cook the burger until it is so well done, that it resembles a hockey puck. Make sure to serve with over seasoned fries.
Hey Joshua. Really big fan of your delicious 😋 cooking *even though I'm yet to taste*. I think it would be awesome if you could do a Collab with You Suck At Cooking. It would be really fantastic as you have different styles of delivery.
Only been to Five Guys once, I was disappointed. A burger and fries, at a "fast food" place, cost over $15. I could have gotten a meal at any other fast food place for around half that. The burger was okay, the fries were okay, the cost because of the hype is far too much.
Josh, you're a god. Cheese snobs! You can't judge American cheese until you've gone past the Borden, Kraft, store brand, etc... Singles! Go up to your deli counter and ask for a premium American cheese. My go-to is Cooper's Sharp American, others like Boar's Head, I'm sure there's other brands around the country of which I'm unaware but, even if you DO like American cheese, all the more reason to spend a couple extra dollars for top shelf. You'll love it.
you can ask for salt and pepper on your burger when i used to work there we would add the little packets we had for customers that requested it. that was about 5 years ago dont know if they are still willing to do it or not
As some one that works at five guys and has been for the past 3 years we are not able to season our meat, also the ketchup, mustard, grilled onions and grilled mushrooms have go go on the bottom bun and the mayo, lettuce pickle blah blah have to go on the top because it's the five guys way 🙌. All of our ingredients are made freshly in house everymorning like the lettuce, tomatoes, fries, meat etc... patties are 3.6 oz each as we have to weigh every single one and on average my store individually preps around 1200. It's a lot honestly lol.
Various cooks/chefs season their burgers only with salt and pepper. A family trick that we do, is we ALSO season it with garlic powder, or replace the salt with garlic salt.
I work at five guys and we hand roll and small our patties daily in the morning for the day and we don't season them because the owners/creators wanted people to taste the flavor of the meat. You can ask for salt and pepper and season yourself though
I can tell you why so many restaurants won't use salt or use minimal salt. Yes, it's great for flavor, but it's a health hazard actually. People with high blood pressure and other medical issues that require a diet of minimal salt/sodium run into issues if the restaurant uses too much salt. And since high blood pressure is pretty common in the U.S. along with people not having enough time to cook... Well. Think you can guess the rest. Some people are also just really sensitive to salt too, so it very much also helps with taste preferences. I do actually appreciate the conscious effort to give that option to people who need or just want it, as salt is easy to add and typically offered. Of all the burgers my mom and I have tried out, her favorite has been Five Guys because of the freshness and her sensitivity to salt, lol.
Hey Joshua, you should start a series called „essentials“ (or a video) where you teach cooking essentials ex: you show how to dice an onion or cut paprika.
To make a great burger add minced garlic, finely diced onion, House of Parliament( HP) Sauce, Worcheshire Sauce, salt and pepper to the ground meat ...
Josh, I'm a long time viewer. First time commenter. I'm a home cook/avid smoked meat cook. Been buying alot of nice knives lately. What chef knife do you use, length, style handle, steel type, etc.?
i know you have probably not tasted it, but Hesburger (its a finnish burger chain) is in my opinion by far the best. I dont know if you can find them outside of Finland, but its by far the best taste in any fast food burgers out there.
I'm not a fan of wet bread.
true, if the price was lower it would be perfect
I love wet bread
my main issue with 5 guys is that shake shack is just 5 times better
and yes I hate the soggy bread as well
then take the foil off before it gets to that point 🎪
You can also get it without condiments that make it not so soggy
Hell yeah ive been requesting this for soooooooooooo long (as a five guys employee myself)
also the reason we dont season the beef is because corporate claims it "takes too long" because we only get 7 minutes to get an order out starting at the moment the ticket is printed
i personally think that's bull and I can easily think of several ways to season the beef and still have enough time
dude what shitty 5 guys are all ya'll working at? "takes too long" is definitely not a corporate reasoning, it sounds like a bullshit, horrible management decision that if discovered would result in an immediate reprimand or someone no longer having a job. there's a reason they have you sit, your first 2 to 5 days watching videos and taking quizzes before they even let you touch any product. report your manager.
Cooked mushrooms on a burger is underrated. Gonna have to make this one myself. 👌🏼
Beat it punk
I need a bloopers reels or like a behind the scenes like side show with episodes. Something where we get more Josh and the crew involved. Big fan and love what yall do!!
Idea for a next Bit Better: make your version and wrap it, go to the place whose item kn the menu you tried to improve, order it and then try both of them. This way you won’t have the advantage of making something fresh and not having to drive it around town wrapped in foil :)
Keep up the amazing work. We love seeing you creating lots of new stuff. Keep up the amazing work, Joshua Weissman.🙂
I like the fries.
Personally I'm a fan of how soft Five Guys' buns get, as dense as the burger is it's still easy to bite into.
Delicious!
I love the soft bun myself since it's easier for me to eat.
Here are some fun fact about five guys:
1.Five Guys started in Arlington, VA, in 1986.
I thought, 'Just have a place like that.'"
3. Five Guys uses fresh ground beef with an 80/20 ratio (lean meat to fat ratio) for its burgers, and employees form the patties by hand every day.
4.There are no freezers in Five Guys locations.
5.Five Guys only uses peanut oil.
Nice Ad bot, its fast food worse thing you can get
Lmao I’m allergic to peanuts so I’ve never had it, from what I’ve heard it’s shit though
@@Mustafa-nr6ps no one says that it's healthy
Mom and Pop places don't usually don't cost near as much for a burger and fries in small towns, and its really hard to pretend its that when you have a cross country franchise.
Another fun fact, the reason it is called 5 guys is because after you pay you feel like 5 guys beat and robbed you. So expensive for what you get.
Looks delicious! I love a really flat burger though, I always smoosh my burgers down 😅
yes bigger burger should be wider not higher. its annoying to eat.

I love Five Guys, and yes, I love the thin slightly squished bun. What I don't like are thick burgers. Two thin or smashed burger patties are perfect for me. But yes, it HAS to be seasoned. Lettuce, tomato, mayo, bacon and jalapenos... Occasionally BBQ sauce or hot sauce. ok, now I have to go to Five Guys...
the bun makes a huge difference when it comes to presentation for any burger. Your buns just look way better 😉

I mean to be fair, what he made is what 5 guys usually promotes, they just make the patties smaller and stuff probably for profits or whatnot? Idk
Everything's bigger in Texas
But I do agree with you.
You need a better hero

Can you also do the Cajun fries from Five Guys? They’re too good

i stand by five guys is one of very few fast food chains that actually has a burger that is simply good, its not just fast or convenient but something you can actually enjoy for the flavor
Ya know... as somebody who worked in the restaurant business, it makes me happy to see the AMG behind this guy's head. Well deserved, been watching since the beginning.
I was in a burger argument with some friends (like you do) and my contention with 5 Guys was that 1. it's really expensive 2. but most importantly, every single time I've gotten it the burger has been unseasoned. Feeling much vindication now.
Yes, same for me. Had it twice, each time I had a burger severely lacking in flavor. Couldn't believe it.
i used to walk by a five guys that exhausted the grills to the sidewalk every day and it smelled so amazing. About once a month I'd say "Damn I am absolutely craving that" and every month I would crumple up that foil in disappointment that all those nice ingredients just taste like cardboard :\. Let it never bee said I didn't give 5 guys enough of a chance
I worked there, we don’t season the meat at all!
ur suppose to ask for salt and pepper just like you ask for everything else on the burger

I've never wanted a burger so bad in my life! 🤤
Who else has been been mouthwatering for the last 4 minutes and desperately wants to eat a burger now?
I don’t know anyone else’s opinion about this, but something we do at the restaurant I work at, is put any cooked toppings like onions, mushrooms or eggs underneath the cheese before we melt it, so that way it’s nowhere near as messy.
Ever since I started working there,
It’s how I always do my burgers
Josh can sure steam a good ham!
I personally like Five Guys soft buns. I do not like it when places toast their buns so much to the point that the bun is dry and hard
So, who are these "Five Guys" that have majestically *soft* buns; you like😏
I always they thought what made the patty good is that they added sirloin to the chuck, but definitely trying this
I’ve heard this too!
If even then it's too tall, chop up that slice of tomato and mix it with the onion.
agree, too tall
you have to eat it !!
@@boblehmann1644 Having two thin is tastier than one thick one, especially if you grill them over flames.

The no seasoning thing isn’t really surprising. It’s just consistency although a weird one
Thanks.
wow he can cook a burger better than a burger made by 5 guys hes so good at cooking
5 guys signature taste comes from the peanut oil they cook everything in…. How was this not incorporated?
It might have been peanut oil. Did he ever say what kind of oil he was cooking everything in? I don’t remember him saying anything about it.
@@LJ-ox2tt he mentioned nothing of peanut oil. He used regular.
@@TheGrassman12 Did he specifically state using normal oil though. Because normal oil could be olive or vegetable oil and I heard neither of those two words. He might have just forgotten to say peanut before oil.

I've never been a fan of Five Guys' burgers - especially for the price. It's just a burger, bleh, and the buns are always soggy. But their fries are my favorites, so that keeps me going back once in a while.
Hey, papa
Would you ever consider doing a “but easier” series for people that are really new to cooking, or people that can’t afford/don’t have access to some of the ingredients or supplies needed?
Also can I get a kiss from papa?

Hey Joshua. Really big fan of your delicious 😋 cooking *even though I'm yet to taste*. I think it would be awesome if you could do a Collab with You Suck At Cooking. It would be really fantastic as you have different styles of delivery.
i agree
You'll love it.
you can ask for salt and pepper on your burger when i used to work there we would add the little packets we had for customers that requested it. that was about 5 years ago dont know if they are still willing to do it or not
As a Englishman, being called a wanker during your video made my heart melt. Thank you......
You can ask for salt and pepper and season yourself though
really enjoyed your content, instantly subbed.

you should do a series called ‘but healthier’ where you make healthy versions of fast food for us folks that are dieting
Another masterpiece
I followed the instructions from this video and the website. Got ten nice burgers and buns. Yup, it’s 5 guys but better. Good job and thank you.
9:06 👏👏👏👏 congrats on coming out!

i know you have probably not tasted it, but Hesburger (its a finnish burger chain) is in my opinion by far the best. I dont know if you can find them outside of Finland, but its by far the best taste in any fast food burgers out there. Like for context there are about 4 times more Hesburgers in Finland than McDonalds
