Cool in the fridge -Cheesecake- Ingredients - 200 g cream cheese - Sugar - 30 ml milk - Gelatin - Water - Lemon zest - Juice of 1/3 lemon - 200 ml heavy whipping cream - Mango puree - Mango compote and blueberries for decoration Directions 1. Stir together 200 mg cream cheese and 30 g sugar in a large bowl 2. Add 30 ml milk and 5 g gelatin to a small bowl 3. Set the small bowl over boiling water and stir the gelatin mixture 4. Add the gelatin blend into the cream cheese mixture. Stir. 5. Add lemon zest and juice of 1/3 lemon. Stir. 6. In a separate large bowl, add 200 ml heavy whipping cream and 20 ml sugar. Beat with an electric blender until soft peaks form. 7. Add this into the cream cheese mixture and fold gently until incorporated. 8. Separate 150 g in another bowl, Saran Wrap it, and set aside. 9. In the original cream cheese bowl, add 60 g mango puree. Fold into mixture until well incorporated. 10. Add this mixture over the crust, smooth over, and cool in a freezer for 20 minutes. 11. Take out the cake. Take the the 150 g cream cheese mixture that was set aside and smooth over the cake. Cool in freezer for 20 minutes. 12. Add 30 ml water and 2 g gelatin together. Warm over bowl of hot water and stir. Add 10 g sugar and 40 g mango puree. Cool to room temperature. 13. Take out the cake. Pour mango gelatin mix over and smooth. Cool in refrigerator until firm. 14. Wrap a wet warm towel around the mousse pan and remove the cake. 15. Decorate with mango compote and fresh blueberries.

Hi hi, made this for the second time yesterday and the taste is absolutely amazing. Just to check if you’re using heavy whipping cream or thickened cream for the mousse part? Tried both but it quickly melt the minute I take the cake out from the fridge. Is there a specific time I need to put it in the fridge before removing from mould? I’m feeling so helpless on the melting mousse :(
low fat / low carb / vegetarian version was amazing. Replaced gelatine with Agar Agar and the Cream Cheese with Greek Yogurt and more Mango puree for sweetness. Still not vegan but at least Gelatine and sugar free :)

I used heavy cream and left the mousse part in for about 8-9 hours. Maybe you could try that because mine did not melt
