I made it for my mum's bday! The cake was very delicious. I used a 7inch springfoam pan and also did a mini single serving bowl so I increased to x1.25 of the recipe. I also increased the Gelatin powder to one more gram seeing most comments to increase it. My layers came out perfectly and in shape as I used acetate plastic sheets to secure around the inner pan. My layers did not leak. I also placed a round Baking paper underneath the crushed Biscuits so I can easily remove the cake later on using the help of 2 angled spatulas. I also froze the cream cheese layer for 1hr. And the berries layer I left it overnight in the Fridge and did the lemon Jelly layer the next day and left it overnight again. I reduced sugar for the Jelly layer as I wanted a bit Sourish taste. Overall the taste complemented each other! Salty biscuit, sweet cream cheese n strawberries and sourish-sweet lemon jelly. Everyone loved it!!

No-Bake Strawberry Cheesecake Cheesecake (6-in round cake mold): • 100g biscuit (Japanese butter cookies) • 30g melted unsalted butter • 200g cream cheese • 90g cup sour cream • 30g sugar • 30g milk • 6g gelatin • 80g strawberry puree • 200ml heavy cream • 15g sugar Strawberry Puree • 220g strawberries • 30g sugar • 10g lemon juice Strawberry Jelly • 150g strawberry puree • 35g water • 5g gelatin Lemon Jelly • 200g water • 10g lemon juice • 40g sugar • 7g gelatin • Strawberries Shopping List (US amounts needed): • At least 3.5 oz cookies (homemade or store bought) • Sugar • Whole milk • 2 TB unsalted butter • 1 package cream cheese • Sour cream (about 1/3 cup) • 1 box Knox gelatin packages (or anything more than 0.65 oz unflavored gelatin) • 1-2 lemons for juice • 8 oz heavy cream • 2 pints strawberries of uniform size (maybe organic) Directions: Line a 6” cake mold with acetate (taller than the mold). Place on a flat surface. Crush cookies, combine well with melted butter. Press evenly into the bottom of the mold. Stir sour cream and cream cheese together. Add sugar and mix to combine. In a small bowl, add 6 grams of gelatin into 30 grams of milk and soak. Place the bowl into a shallow bowl of warm water (do not let water into the gelatin mixture), and stir to dissolve gelatin. Once the gelatin is dissolved, add it to the cream cheese mixture and stir. Make the strawberry puree - Rinse all the strawberries in water and cut off the stems. Chop 220 grams of strawberries. Place strawberries into a small saucepan with 30 grams of sugar and 10 grams of lemon juice. Heat level is not specified; I would use medium-low heat and stir occasionally to prevent the bottom from burning. Once the strawberries give up their water, blend the mixture to make a puree. Measure out 80 grams of the strawberry puree, stir into the cream cheese mixture. Let the remaining puree cool. Add 15 grams of sugar to 200 grams of heavy cream. Beat on high until soft peaks form. Stir whipped cream into the cream cheese mixture. Pour into the cake mold over the cookie mixture. Freeze for 1 hour. Meanwhile, make the strawberry jelly. Soak 5 grams of gelatin in 35 grams of water. Dissolve by placing the bowl into a warm water bath in a shallow bowl. Once gelatin is dissolved, stir into the remaining 150 grams of strawberry puree. Once the cheesecake has set in the freezer, pour the strawberry jelly on top. Spread evenly. Chill in the refrigerator for 1 hour. Make the lemon jelly - Soak 7 grams of gelatin in 100 grams of water. Put a separate 100 grams of water into a small saucepan with 40 grams of sugar and 10 grams of lemon juice. Heat until almost boiling, remove from heat. Add the gelatin mixture and stir to dissolve. Cool the gelatin mixture by placing the bottom of the pan into an ice water bath. Cut enough strawberries in half to arrange in the outer circle (cut sides facing the outside of the cake mold). Place remaining whole strawberries, cut side (where the stem was) down, on the inside of the circle. Pour half the lemon jelly on top of the strawberries (adding only half prevents them from floating). Chill in the refrigerator for 30 minutes. Add the remaining half of the gelatin mixture to cover the strawberries completely. Chill for 2 hours before removing cake ring and acetate. Notes: *From the looks of the video, there was not enough lemon jelly to completely cover the strawberries, but then the finished product shows them covered. I would keep extra ingredients on hand or make extra lemon jelly just in case. *In the video, she uses a cake pan with a removeable bottom from Amazon’s Japan website. I found comparable pans, even in sets of different sizes, on Amazon by searching “6” cake pan with removeable bottom”. Make sure the pan has straight sides. I don’t know what material she is lining her pan with, but acetate should work. To remove the cake from one of those pans, just push up from the bottom carefully, then peel off the acetate. I plan to try an adjustable cake ring lined with acetate on a flat surface (cake board or serving platter) first. Either of these should work. *I started doing conversions for the metric weights listed, but they don’t convert precisely to US standard measurements. I suggest using a kitchen scale set to grams for accuracy. Use a liquid measure with ml markings for the water. *The “biscuits” or “cookies” mentioned look to me like Japanese butter cookies, which can easily be made at home with a few ingredients. I think crushed graham crackers would also work, but may lack the delicate flavor and texture of a butter cookie.
y’all i made this the other day it’s DELICIOUS. for anyone making this, i made the mistake of putting the gelatine in cold water, it makes it grainy. also let the jelly cool down completely before adding it. good luck to anyone trying this :D
Also use the smallest strawberries for the top. Mine were too big and heavy that I needed to add double the amount of lemon jelly. In the end it was so heavy that the cheese portion was bulging under the weight after I took the paper off. But it still tasted good!
i tried making this yesterday and it turned out amazing!! i made it in a 11inch mold so i doubled everything there are few things to keep in mind: - i used acetate paper instead of parchment paper so that the jelly layers doesn't leak - made sure that my cream cheese is at room temp ( so that it won't clump!) - for the lemon jelly layer I multiplied the ingredients by 4.5 , because it wasn't enough to cover the strawberries (so 200g of water became 900 ) - I made sure to cool the layers for more than 2hrs, and let it chill in the fridge after finishing for 2hrs too - Add half the lemon jelly then wait for 30 minutes before adding the rest so that the strawberries don't move around btw there's a comment below that explained the steps in the video if you prefer to read
Hey so I attempted to make this, and while the whold thing is currently chillin in the fridge while I write this, I feel I need to add a a few disclaimers should anyone else try and make it: 1. If you're making a cheesecake, you will need a spring lock pan to get the cake out of it nicely. 2. If your in the states (can't speak for elsewhere) your pan will likely be a larger in diameter and circumference than Op's pan. Des that matter? Yes. Means your cake is going to be shorter overall, you'll need more gramcrackers to make the crust base, and your lemon jello will likely not cover the tops of your strawberries. Or be as close to covering the tops of them as seen in the video. 3. I didn't make the strawberry pureed cus im scared of the blender noise but I just mushed em up real fine after cooking them on the stove and it stil ended up ok. The puree middle section is just a lil weird 4. This is more common sense than anything but make sure you've got a flat surface to chill the cake on. In your freezer esp cus if it ends up lopsided you are goofed from the start. Itll still taste fine but the appearance will be a lil lopsided. Learn from my mistakes
I made this cheesecake, minus the top jelly layer and my family finished the whole thing! It's such a subtle flavour and perfect sweetness. It didn't set as well as hers, had a softer texture, but I suppose we all loved that. This is the best Asian cheesecake recipe out there. Definitely recommend this! Edit: I added a few more grams of gelatin the next time and it set perfectly! Moreover, I have made this cheesecake with cherries, pomegranate etc and it turns out amazing every time. Best cheesecake recipe!
I tried making this yesterday, a few tips: 1) wait 2-3 hours between each layer - my strawberry jam got completely dissolved in the lemon jelly after waiting for 1 hour, which created a mess. 2) add more gelatin than you think you need 3) keep it in a VERY cool place

I made this for my family yesterday as my Christmas gift to them. First time baking on my own and the recipe is great for beginners who aren't confident in the kitchen. I bought all the ingredients and I sadly didn't have enough. We stupidly got a cake pan with a diameter too big so I had to triple the base, and double the rest of the ingredients 😅. Most of it turned out really good up until the top. I ran out of strawberries so I substituted them for bananas. Thanks to an old injury, it left me with a lot of back pain and sore limbs to the point I was crying and could barely stand. But, thankfully, it came out looking really good and my mom and dad loved it. I can't begin to describe how happy it makes me that they really appreciated what I made for them. This time I'm crying happy tears. ❤
i have tried making this cheesecake and it was SOOO GOODDD! Honestly i really respect and admire how she makes the cake look so effortless and simple. When i made this cake, i spent 3-4 hrs with my sister to complete this strawberry cheesecake.

I made this cheesecake and it was really delicious. I don’t eat pork so I used beef gelatine instead and added a few extra grams of gelatine each time. My cheesecake batter was really lumpy and looked really lumpy but it still tasted great. Also make sure you add your lemon jelly in two stages otherwise the strawberrys will float. I also refrigerated/froze it for double the amount of time the recipe says.

I actually did this with a friend of mine for mother’s day. It was really delicious, not too sweet not too plain. The look of the cake wasn’t so pretty, but it was super great! My mom also liked it too:) Edit: Keep in mind that you’ll probably change some parts of the recipe and that strawberries won’t all be the same size. Make sure to have the wax paper secure and tight or else the gelatin and everything else will come out a bit. Also at the end, keep it in the fridge for a longer time, or I also used the freezer to speed it up a bit. Also, while pouring the GELATIN, don’t pour it all in, i did half then waited and poured the other half afterwards so the strawberries don’t float. :)
I actually gave a try to this recipe. Here is how it went (including my own modifications and little mistakes) First, I used a 10cm stainless steel baking ring because I am just me so I wasn't sure I could eat a whole 15cm cake. Second, I used my parchment paper which was a big mistake because as it was wet, my cake was a little deformed. Third, I put too much sugar in my cream cheese so I just had cream cheese and it went well. I, then, put much more lemon juice in my strawberry puree and the strawberry jelly was higher than how it is in this recipe. I also used an already whipped cream I bought in my local supermarket. I didn't do the lemon jelly because I am not a real fan of jelly. Finally, the cake was really delicious and I appreciated it. Unfortunately, I am a student who lives far from her family so I could not share it with them but I showed them and they said it was quite pretty. I will make some for them when I will see them again. Anyway, thank you so much Hidamari cooking for coming up with this recipe. I'm not a big fan of jelly either but gave it a go, I would say it's definitely better with jelly in this case, gives the cake a lot more texture and definition.

ok so i tried this... I had a 9 inch pan instead, so i converted the measurements to fit mine. The crust didn't hold at all, it crumbled, and I added a lot of butter too. I forgot to add the heavy cream and sugar mixture -_- I chilled the cake for an hour and began to put my strawberry jelly and it ripped through. ( thank god it was jelly) My lemon jelly didn't set even after 4 hours, it was still partly liquid, and I had to cut the "cake" for my brother's birthday so I put it in the freezer ( you're not supposed to but I had no choice) When i took it out, I really thought that it would be good. I never would have thought that my crust would fall apart. This was my first time making a cake, and I really messed up. But it tastes good.
Hmm I tried this and it ended up pretty well. For my crust, I actually did use oven, cooked at 325 for 10m, then let it cool for 30m, it'll harden a lot more. Also before the oven, make sure you compress it, maybe with the bottom of a cup. For the crust I used, search "Adam Ragusea Key Lime Pie" on RUclips, a bit of cinnamon and molasses help a lot too. For the cheese mixture, the cream is definitely important, also note that it says "freezer 1 hour", whereas the jelly is "fridge 1 hour". I think freezing is crucial for the cheese mixture to hold. Also chilling the jelly mixture so it's not hot helps too. My lemon jelly set in an hour, that's very strange, did you put enough gelatin, and properly dilute it in hot water, then chill the container in ice water?

Line a 6” cake mold with acetate (taller than the mold). Place on a flat surface. Crush cookies, combine well with melted butter. Press evenly into the bottom of the mold.
Stir sour cream and cream cheese together. Add sugar and mix to combine.
In a small bowl, add 6 grams of gelatin into 30 grams of milk and soak. Place the bowl into a shallow bowl of warm water (do not let water into the gelatin mixture), and stir to dissolve gelatin. Once the gelatin is dissolved, add it to the cream cheese mixture and stir.
Make the strawberry puree - Rinse all the strawberries in water and cut off the stems. Chop 220 grams of strawberries. Place strawberries into a small saucepan with 30 grams of sugar and 10 grams of lemon juice. Heat level is not specified; I would use medium-low heat and stir occasionally to prevent the bottom from burning. Once the strawberries give up their water, blend the mixture to make a puree.
Measure out 80 grams of the strawberry puree, stir into the cream cheese mixture. Let the remaining puree cool.
Add 15 grams of sugar to 200 grams of heavy cream. Beat on high until soft peaks form. Stir whipped cream into the cream cheese mixture. Pour into the cake mold over the cookie mixture. Freeze for 1 hour.
Meanwhile, make the strawberry jelly. Soak 5 grams of gelatin in 35 grams of water. Dissolve by placing the bowl into a warm water bath in a shallow bowl. Once gelatin is dissolved, stir into the remaining 150 grams of strawberry puree.
Once the cheesecake has set in the freezer, pour the strawberry jelly on top. Spread evenly. Chill in the refrigerator for 1 hour.
Make the lemon jelly - Soak 7 grams of gelatin in 100 grams of water. Put a separate 100 grams of water into a small saucepan with 40 grams of sugar and 10 grams of lemon juice. Heat until almost boiling, remove from heat. Add the gelatin mixture and stir to dissolve. Cool the gelatin mixture by placing the bottom of the pan into an ice water bath.
Cut enough strawberries in half to arrange in the outer circle (cut sides facing the outside of the cake mold). Place remaining whole strawberries, cut side (where the stem was) down, on the inside of the circle. Pour half the lemon jelly on top of the strawberries (adding only half prevents them from floating). Chill in the refrigerator for 30 minutes. Add the remaining half of the gelatin mixture to cover the strawberries completely. Chill for 2 hours before removing cake ring and acetate.
Notes:
*From the looks of the video, there was not enough lemon jelly to completely cover the strawberries, but then the finished product shows them covered. I would keep extra ingredients on hand or make extra lemon jelly just in case.
*In the video, she uses a cake pan with a removeable bottom from Amazon’s Japan website. I found comparable pans, even in sets of different sizes, on Amazon by searching “6” cake pan with removeable bottom”. Make sure the pan has straight sides. I don’t know what material she is lining her pan with, but acetate should work. To remove the cake from one of those pans, just push up from the bottom carefully, then peel off the acetate. I plan to try an adjustable cake ring lined with acetate on a flat surface (cake board or serving platter) first. Either of these should work.
*I started doing conversions for the metric weights listed, but they don’t convert precisely to US standard measurements. I suggest using a kitchen scale set to grams for accuracy. Use a liquid measure with ml markings for the water.
*The “biscuits” or “cookies” mentioned look to me like Japanese butter cookies, which can easily be made at home with a few ingredients. I think crushed graham crackers would also work, but may lack the delicate flavor and texture of a butter cookie.

Also use the smallest strawberries for the top. Mine were too big and heavy that I needed to add double the amount of lemon jelly. In the end it was so heavy that the cheese portion was bulging under the weight after I took the paper off. But it still tasted good!

i tried making this yesterday and it turned out amazing!!
i made it in a 11inch mold so i doubled everything
there are few things to keep in mind:
- i used acetate paper instead of parchment paper so that the jelly layers doesn't leak
- made sure that my cream cheese is at room temp ( so that it won't clump!)
- for the lemon jelly layer I multiplied the ingredients by 4.5 , because it wasn't enough to cover the strawberries (so 200g of water became 900 )
- I made sure to cool the layers for more than 2hrs, and let it chill in the fridge after finishing for 2hrs too
- Add half the lemon jelly then wait for 30 minutes before adding the rest so that the strawberries don't move around

Hey so I attempted to make this, and while the whold thing is currently chillin in the fridge while I write this, I feel I need to add a a few disclaimers should anyone else try and make it:
1. If you're making a cheesecake, you will need a spring lock pan to get the cake out of it nicely.
2. If your in the states (can't speak for elsewhere) your pan will likely be a larger in diameter and circumference than Op's pan.
Des that matter? Yes. Means your cake is going to be shorter overall, you'll need more gramcrackers to make the crust base, and your lemon jello will likely not cover the tops of your strawberries. Or be as close to covering the tops of them as seen in the video.
3. I didn't make the strawberry pureed cus im scared of the blender noise but I just mushed em up real fine after cooking them on the stove and it stil ended up ok. The puree middle section is just a lil weird
4. This is more common sense than anything but make sure you've got a flat surface to chill the cake on. In your freezer esp cus if it ends up lopsided you are goofed from the start. Itll still taste fine but the appearance will be a lil lopsided.

I made this cheesecake, minus the top jelly layer and my family finished the whole thing! It's such a subtle flavour and perfect sweetness. It didn't set as well as hers, had a softer texture, but I suppose we all loved that. This is the best Asian cheesecake recipe out there. Definitely recommend this!
Edit: I added a few more grams of gelatin the next time and it set perfectly!
Moreover, I have made this cheesecake with cherries, pomegranate etc and it turns out amazing every time. Best cheesecake recipe!

I tried making this yesterday, a few tips: 1) wait 2-3 hours between each layer - my strawberry jam got completely dissolved in the lemon jelly after waiting for 1 hour, which created a mess. 2) add more gelatin than you think you need 3) keep it in a VERY cool place

I made this for my family yesterday as my Christmas gift to them. First time baking on my own and the recipe is great for beginners who aren't confident in the kitchen. I bought all the ingredients and I sadly didn't have enough. We stupidly got a cake pan with a diameter too big so I had to triple the base, and double the rest of the ingredients 😅. Most of it turned out really good up until the top. I ran out of strawberries so I substituted them for bananas. Thanks to an old injury, it left me with a lot of back pain and sore limbs to the point I was crying and could barely stand. But, thankfully, it came out looking really good and my mom and dad loved it. I can't begin to describe how happy it makes me that they really appreciated what I made for them. This time I'm crying happy tears. ❤

I made this cheesecake and it was really delicious. I don’t eat pork so I used beef gelatine instead and added a few extra grams of gelatine each time. My cheesecake batter was really lumpy and looked really lumpy but it still tasted great. Also make sure you add your lemon jelly in two stages otherwise the strawberrys will float. I also refrigerated/froze it for double the amount of time the recipe says.

I actually did this with a friend of mine for mother’s day. It was really delicious, not too sweet not too plain. The look of the cake wasn’t so pretty, but it was super great! My mom also liked it too:) Edit: Keep in mind that you’ll probably change some parts of the recipe and that strawberries won’t all be the same size. Make sure to have the wax paper secure and tight or else the gelatin and everything else will come out a bit. Also at the end, keep it in the fridge for a longer time, or I also used the freezer to speed it up a bit. Also, while pouring the GELATIN, don’t pour it all in, i did half then waited and poured the other half afterwards so the strawberries don’t float. :)

This Cheesecake is MORE FANCY & Beautifully Crafted than ANY dessert in Any Fancy Restaurant!
I actually gave a try to this recipe. Here is how it went (including my own modifications and little mistakes)
First, I used a 10cm stainless steel baking ring because I am just me so I wasn't sure I could eat a whole 15cm cake.
Second, I used my parchment paper which was a big mistake because as it was wet, my cake was a little deformed.
Third, I put too much sugar in my cream cheese so I just had cream cheese and it went well.
I, then, put much more lemon juice in my strawberry puree and the strawberry jelly was higher than how it is in this recipe.
I also used an already whipped cream I bought in my local supermarket.
I didn't do the lemon jelly because I am not a real fan of jelly.
Finally, the cake was really delicious and I appreciated it. Unfortunately, I am a student who lives far from her family so I could not share it with them but I showed them and they said it was quite pretty. I will make some for them when I will see them again. Anyway, thank you so much Hidamari cooking for coming up with this recipe. I sent the link of your video to my mom and she enjoys watching your baking videos and said she would also give them a try. I love your videos so muuuch!

I made some change that I add some raspberries into the puree so the color is deeper and the flavor is richer with a bit of sweet and sour. This has been my favorite. Enjoy watching your video.

ok so i tried this... I had a 9 inch pan instead, so i converted the measurements to fit mine. The crust didn't hold at all, it crumbled, and I added a lot of butter too. I forgot to add the heavy cream and sugar mixture -_- I chilled the cake for an hour and began to put my strawberry jelly and it ripped through. ( thank god it was jelly) My lemon jelly didn't set even after 4 hours, it was still partly liquid, and I had to cut the "cake" for my brother's birthday so I put it in the freezer ( you're not supposed to but I had no choice) When i took it out, I really thought that it would be good. I never would have thought that my crust would fall apart. This was my first time making a cake, and I really messed up. But it tastes good.
Hmm I tried this and it ended up pretty well. For my crust, I actually did use oven, cooked at 325 for 10m, then let it cool for 30m, it'll harden a lot more. Also before the oven, make sure you compress it, maybe with the bottom of a cup. For the crust I used, search "Adam Ragusea Key Lime Pie" on RUclips, a bit of cinnamon and molasses help a lot too.
For the cheese mixture, the cream is definitely important, also note that it says "freezer 1 hour", whereas the jelly is "fridge 1 hour". I think freezing is crucial for the cheese mixture to hold. Also chilling the jelly mixture so it's not hot helps too. My lemon jelly set in an hour, that's very strange, did you put enough gelatin, and properly dilute it in hot water, then chill the container in ice water?
