I add the kitchen sink to mine. Lol😂 I even use canned chicken and also put in corn, black beans or any of your favorite beans, Rotel, green chilies, green oinions, black olives, of course enchilada sauce and cheese...YUMMY!! It's packed with flavor!! If ya don't want to layer it, just dump everything together, combine and top with more cheese and black olives! For no oven heat in this hot weather, use a crockpot, so easy!! For a twist, use rice instead of tortillas for an awesome Mexican rice casserole. I've even added left over rice in with the tortillas too, just add more enchilada sauce to keep it saucy, not dry. Like I said, add the kitchen sink!😂 It's so versatile, easy and hearty! 😍

I made this last night and I did change it. I added a small can of diced peppers. I also only added 1/2 cup of sour cream and added a can of cream of chicken. It was delicious! I love your recipes.

I’ve made this recipe with my leftover turkey and it came out really good. Also I added green onions to the top of the casserole. And put it back in the oven for a few more minutes.

I love spicy, I made mine hotter🔥🌶a lil more by adding a chopped jalapeno & can of green chiles to the sauce, and then added chopped green onion to the top after it came out of oven. I love this!! This is similar to my chicken enchilada casserole that I have been making for over 20 years. I have never used that green enchilada sauce. I will have to try it. I use, cream cheese, sour cream, and condensed cream of chicken soup with mild salsa verde. I remember making the actual the rolled enchiladas 31 years ago when when my son was 2 years old and he loved it. Now I just make the casserole with rotisserie chicken instead of cooking it myself. Now that I'm older I'm all about saving time and it's still delicious! I'm saving your recipe and trying the triangle cut tortillas.

It looks amazing. You have to watch the heat on the sauce. I bought hot by accident. Wow it was hot. I add black olives and corn to mine. There is just the two of us. I make the casserole in aluminum bread pans. I cook one and freeze the other 3 or 4 bread pans full. We always have a meal ready to stick in the oven.

As many times that I have made this, I love the idea of cutting the corn tortillas into wedges. It sure beats having to cut up a tortilla round so you can serve it. Thanks for the great suggestion!

Hi Catherine, I live in McKinney TX and love your channel. I have been making this recipe for about 30+years and my mom made before me. We do just a little different if you want to try. I add 2 small cans of diced Green Chilies and 1 reg size can of Cream of Mushroom Soup with the water to your cream mixture. My family LOVES this recipe. My daughter even wants me to make it on her birthday!!

I make something like this only you don’t cook anything before putting it together. I cut up flour tortillas into strips. I put the green enchilada sauce and cream of chicken soup (lg can) into a big bowl and mix together. Add 2 cans hot green chilies chopped and 1 tsp of dehydrated Pueblo chilies, mix then add shredded chicken, tortillas and cheese. Pour into 9x13 pan add cheese to the top and bake until bubbly. It is yummy. In the city I live in the Mexican restaurants outnumber all the others. We have a weekend chilie festival. All the farmers that grow Pueblo chilies come and roast them for you. Great weekend.
