Honestly you are one of the most underrated cooks on RUclips. You can make things from scratch but also know how to make things good when you’re in a pinch. As a Mexican American who never learned how to cook a lot of food, I always love watching your channel, your food reminds me a lot of my grandmas. Buen provecho 😋
SAAAAME!! I now live in the UK and have to really be creative when I cook Mexican food but with her tips i've been able to pull off some really great dishes.
Try using bone in , with skin chicken. Not as dry and the flavor is fabulous. Also try a can of Campbell’s Cream of Mushroom Soup in the salsa verde. Talk about a creamy addition. Mmmmmm. That’s a fabulous taste as well. Love watching you. I was in the business from 1967 to 2007. Cooking is my life even in retirement and senior age.
La Costena makes the best store bought green salsa! Not that others are bad, but they aren't as good as La Costena in my opinion. I use it to make spinach and mushroom enchiladas for my husband's breakfast. We also prefer Verole crema, but I think that's more of a Mexican sour cream than a table cream. You have inspired me so much with your videos! You make everything look so easy. I appreciate you making them.
I personally am not a fan of Herdez brand...to me it seems to lack the tomatillo tang. To me that tang adds a ton to the final dish. Other brands have more tang!
Last night I cooked your beef taco & hash brown casserole, and my family LOVED IT! I used ground turkey and they didn't even notice the difference! Thank you so much!!
I followed your recipe for the enchiladas and my kids LOVED them. My son was never a fan of green salsa, of any kind, but this he loved. Great Sunday dish. Thank you!
Oh my goodness... I have this on my menu this week, but instead of chicken I'm gonna chunk up a pork loin and sear, then put salsa Verde over it with a little chicken broth... Simmer for couple hrs.. Then shred and stir and have Pork salsa Verde tacos with fresh tortillas and rice of course😍 Thank you Angelica for your everyday use of easy ingredients and making it taste amazing! I'm your biggest fan. I have cooked so many recipes now and have had them many times. My family knows you and your voice...lol! I have your cookbook too! Simply a wife and Mom killing it in the kitchen girl with your recipes😋🤗 keep doing you bc you are awesome!!
I'm so glad I found your channel I love, love to watch you cook these recipes in a simple way, and easy for me to cook the food that I love. I am an African American 60 year old woman and I am excited to have a go to channel when I want to try and make food I love your simple way. thank you so much!!!
So cool. I thought they had to be baked after assembly. Maybe that's why mine always turn out soggy. I gave up on enchiladas years ago, but I'll give this recipe a try.
I've typically seen enchilada recipes call for baking, but I also don't see any reason not to do it her way, just assemble with the ingredients freshly cooked. If your enchiladas turn out soggy, maybe less liquid or take any cover off for a longer part of the baking time, or bake less? -- I've only tried making enchiladas at home once. I had too much sauce (from a store-bought brand) and it was too hot/spicy (caliente) for me, and should not have been. But it seemed doable!
So when doing your enchiladas, be sure that you don’t over warm your tortillas or add to much sauce.. when baking it’s to warm up and melt the cheese only.. when buying your tortillas be sure it doesn’t say extra soft ! Don’t give up just try my way mixed with her way and your way will be amazing!!! I personally like the el Pato enchilada sauce in the can , but it’s to your liking and what’s available. I also like to use a Mexican blend of shredded cheese inside enchiladas with chicken and on top after smothering with sauce. Don’t bake over 10min on 350.. let cool for 4-5 min before serving 👏🏼🇲🇽❤️😊
@@Fading_with_beautythank you! I need to make ahead in large baking dish and warm in oven to make my life easier with my two boys and husband who have big appetites.
Looks good. One thing I would change is, I don't like the extra oil on the tortillas. I will warm then in the microwave to get them soft and pliable. Also, not sure where you are located, but Las Palmas enchilada sauce is also very good. I use the Herdez sauce as well, sometimes both. Thanks for sharing.
I made this last night and it was a family win! 🎉 All three of my picky kids gobbled it up with verbal praise and the hubs too. Thank you!! One question to help me next time… how do I keep the rice light? Mine always turns out soggy and heavy.
I absolutely love you and how you cook! I’m Cuban but grew up in Vegas/Cali con mis Mexicanos, para decirte, nada más increíble que la comida Mexicana amor!!! I’ve been to Mexico so many times as well and the extensive cuisine is unbelievable! Si la gente supieran! 😍👏🏼😂😘😘 New subbie! 🥰💞 and much success to you Reína! 😎🙏🏼😘
As I've mentioned before in the comments one reason I love your channel so much is because I'm of Mexican heritage and my kids are half Asian. I noticed you use long grain rice. I do as well because I usually buy the giant bags at the Asian markets. Maybe it's why I can never get my stove top Mexican rice right😅 What I do instead is I toast my rice like normal then throw it in my rice cooker using the same 2:1 liquid to rice ratio. Comes out perfect every time.
I made these….. delicious and can’t tell the difference from made from scratch sauce. I even used prepackaged shredded chicken and seasoned it well. I added a Chunk of onion and cilantro to cook with the sauce
I liked that you can use bought salsa when you don't have the time or some ingredients to make the salsa best wishes from Edcouch Texas Familia Aguila ♥
I like that recipe I'm going to try it 👌 this week I like the way you cook you cook good and you make it simple and easy for your viewers thank you stay blessed 💚🌷💚
You are such good teacher! You make everything look easy! I used to be that way with my grands! Now they are often better than me! I love it! I try to watch every post but occasionally I will miss one and have to look! It’s no wonder your channel has exploded! Congrats!
This looks like a great and easy recipe. Thank you for the grocery store clip @simply mamá cooks 😉 I appreciate it 👍I adore visiting the supermarkets when we're in the US 🇺🇸 . Our grocery stores in 🇨🇦 are similar, but a little less variety - still good though.
I really appreciate your videos. I’ve learned a lot from you. Thank you for doing these. When I make shredded chicken for tacos, I will buy a package of boneless skinless thighs put them in the slow cooker and just dump one jar of salsa Verde in it and let it cook for five or six hours and then I shred it after it’s all done, it makes the best tacos. I’ve never added chicken bouillon to it. I’m going to try that next time. Thank you .
After seeing that recipe I was ready to eat. I bet your kitchen smells amazing. Never knew to make enchiladas with hot sauce like that. I want to try making them. Great chef.
Just made this for dinner tonight. So much fresher and lighter tasting than ooey gooey cheesy enchiladas. Perfect summer dinner and the family loved it! Rice was amazing and surprisingly easy. Using that chicken stock is a great touch! I love all your videos and can't wait to try some more of your recipes. Thanks for sharing!
I CHEATED !! I make my Verde w end of season GREEN TOMATOES.. everyone loves my Verde and they don't knowww I couldn't afford the real Tomatillos... they think I'm RICH !!!😳 but I'm not. Muuuwahahahaha !!!.. im creative, I get it from my mother. 😉👌
Thankyou for this recipe. I was asked to make this with dairy free cheese for a party and it turned out really good. The only thing I do different when I make enchiladas is I use a little bit of the sauce to soften the tortillas instead of oil.
I loved watching your quick version of what we call Salsa Verse Chicken in my house. We do the chicken in our crockpot with the salsa, garlic powder, onion powder, bullion. It is so crazy simple and delicious! I loved your Mexican rice!
Could you please name (speak) the ingredients in the grocery run, so we know the ingredients' names, brands or alternatives, and size or amount? -- I'm vision-impaired, so until you named them when in the kitchen, I could only guess what you were getting from the store shelves. :) This recipe looks easy; I'd just need some more in my pantry and freezer. Personally, I go for mild heat, no tán caliente. I'm Texan, so I may have an average heat/spicy tolerance, while my mom and great-grandmother were chili-heads, basically. :D -- One thing: during the pandemic lockdown and still after, I was dependent on friends or things like Amazon, with my local grocery stores' websites often out of stock and Amazon often out too. I can get most ingredients from my local store, but some from Amazon, while Amazon is weird about whether it has anything from common cooking things everyone uses, to specific Latino or other regional ingredients. I don't get that; they want to sell everything on the planet, so why are some things not available, even usual national brands, and definitely ethnic specialties. But even now, my local store's website is iffy about several things that ordinarily, they would keep in the store, and thankfully, they have a pretty good selection of things for Mexican / Latino and a few other cuisines because my city is so diverse, so many people from all over the planet. So when any of these are out of stock or show unavailable, it's really annoying. -- I am way too new at home-cooking and having recipes for Mexican and Latino food, even Tex-Mex, because I used to be able to go out more easily and get it from local restaurants. Now I keep finding I need some good home-cooked or locally-prepared restaurant food. Again, Texan, so I grew up with things, but I'm Anglo, so I don't know as much as I think I know about it, haha! Love your channel. You do a great job of explaining and showing things, and it's easy to do; I will be trying out things as I go.
I love your recipes. I grew up near Laredo and I miss the type food I grew up eating. When we were in Illinois I struggled getting ingredients to make some of my favorite dishes. Thanks for sharing.
They always have the Verdez brand red and green salsas at my local Dollar General if anyone needs help finding it. Dollar Tree has a similar version but it’s a different brand.
Try salsa ( homemade or jar) in the rice. The spicy flavor is delicious. My mother in law gave me her rice recipe, it is a big hit at my house. Looks good.
This looks delicious yum. Thank you for sharing with us. I am going to make tomorrow for sure. It doesn't take much ingredients. I can already taste it yummy. Can't wait to try it.

They have decent salsas, period. And Herdez, and El Pato.

Me too! We ate it all up. 😀
I made that recipe last week and my family really loved it
Love 💞how you make cooking easy and stress free. And I love that you don't waste anything. I like that a lot.

your presentation is stellar your boys are so lucky to have you and I love when you talk about them and your grandparents
👍🏿Your family is BLESSED with a wonderful Mother and cook.👍🏿
🙏🏿All the BEST to you and yours!🙏🏿

I love her cookbook too!
Pick your favorite green salsa or a roasted and do exactly what you said in a slow cooker and bam. It's great. You can do it with a chuck roast too
Love how you shredded the chicken! I have a shredder just like that, but mine is vintage! LOL!
hahahaha mine too!
I use my kitchen aide mixer. Works well.
I love the way you cook, especially how accessible and simple it can be. Looks so delicious💗
Wonderful dish. You make it so easy. Keep on cooking.
So easy to do. I like the grocery store trips too. This is definitely on my list! 😋
👌

I love the Herded salsa verde. Your recipe looks delicious 😋
The Herdez brand salsa verde is amazing in my opinion! I like to dip regular deli Turkey meat in it.
😂😂😂😂 seems random but I completely understand! I make quesedillaz with turkey meat and dip it yummmyyyy
Thank you for reminding me it’s ok to use jarred salsa. It looks SO good and simple!
I like this meal with refried beans also for extra hungry people. Yummy meal. Thanks for the recipe & demo!
I made this last night and it was a family win! 🎉 All three of my picky kids gobbled it up with verbal praise and the hubs too. Thank you!!

I absolutely love your channel, cookbook, and all the options/variations you give us! Thank you!!

I would love to see more of these short cut meals! Since moving away from San Antonio, it gets hard to find all the fresh ingredients sometimes.
I love who you cook from scratch. But also have recipes that use store bought items that you doctor up.

The rice was perfect and I loved this simplicity of the enchiladas ❤

Cooking along with you right now!!!! My rice came out perfect!!! Thank you! I’m making beef enchiladas topped with Cacique Queso blanco!
Wonderful! 👏🏼🙌🏼
Looks delicious. I love seeing how different people make their enchiladas. Such nice plating too! Thank you!
I like that recipe I'm going to try it 👌 this week I like the way you cook you cook good and you make it simple and easy for your viewers thank you stay blessed 💚🌷💚
Now that's how you cook at home....The chicken broth for the rice was smart.
Delicious food quick and easy dinner keep them coming
Herdez green sauce is a staple in my house. I add it to scrambled eggs and whatever else I'm doing. Will use this recipe for sure.
What do you call that egg recipe in Mexican. My friend made some eggs w can salsa, can't remember if she added fresh tomatoes
Is it chilaquiles?

I like to dice/chop my chkn instead shred .it has a better tender texture.cuz if you shred its on the grain.so you chop opposite the grain.
Looks delicious and easy, thanks for sharing!
You changed that was your husband helping you. You are one lucky lady. A lot of men never help in the cooking department.
This guy has culinary arts degree in both baking an kitchen management.
I thought times changed and men are in the kitchen more than ever? 🤔
I cook in the kitchen most of the time and clean up.
My God that delicious and it doesn't look hard to make 🥰
After seeing that recipe I was ready to eat. I bet your kitchen smells amazing. Never knew to make enchiladas with hot sauce like that. I want to try making them. Great chef.
This is the only salsa Verde I buy from the store...I like Herdez.

Herdez is my go to salsa
Looks so delicious 😋
Yes! I'm going to try these! I don't typically like enchiladas because the tortillas get soggy when it's baked in the sauce.
I remember when you couldn't buy Herdez salsa in Los Angeles. I used to bring back cases of the little cans from Mexicali every time I went to visit.
Thank you. My simply mama cooks, book just arrived. I'm reading it now. Thank you again.

That looks so delicious, I must give them a try. Trader Joe’s has a really good salsa verde too. Thanks for sharing your recipe.
We made this and it was so good, thank you.
I've used Hill Country Fare Green Chile Mild Enchilada Sauce 15 oz. That works really good. I serve it with white rice and borracho black beans.
I love that brand of salsa, I love the roasted red salsa they make!!
Try salsa ( homemade or jar) in the rice. The spicy flavor is delicious. My mother in law gave me her rice recipe, it is a big hit at my house. Looks good.
