I miss Albuquerque so baaaaddd! I lived there for 53 years before moving to Wisconsin in 2020. There is no real chile here! Mexican food is really different.The first time I went to the store I asked for fresh chile. They took me to the bell pepper section!!!!! After a year here Walmart started selling the 505 green chile. Not as good as fresh..but better then nothing. I'll be using that when I make these! Thanks!
Bell peppers!?! I feel your pain. It's hard when you move away. I've become a fan of that 505 Southwestern and have a jar in pantry on standby, for when I run out of my own green chile and don't want to thaw another bag from my freezer. We’re going to the Hatch Chile Festival in September for the First Time. I’m going to bring several cases of Roasted Chile back for my freezer. We love all your recipes, they are so delicious. I have used several of them in my Food Business in Texas and I get the best compliments from my customers!! You’re the Best!
Wow! That's so nice to hear! Where in Texas are you, and what's the name of your business? Just an FYI, last year I had them peel my chile after they roasted it. (They shoot water into the same roasting drums.) And while it saved me tons of time from having to peel them myself, the pressure damaged the chile. All the stems broke off and the chile wasn't as meaty. I wasn't able to make a single relleno with them. Just something for you to think about, because I didn't realize until after I got home. Of course, I was also there during the festival when there's so many people, so it could be that they were in a hurry and turned the pressure up too high.

I made this recipe yesterday and my husband couldn't stop saying how delicious it is! He doesn't like sour cream, so I didn't tell him it was in the recipe. The only thing I did different was I also added hatch chile to the chicken mixture as well, and a little saute onion to both the filling and the sauce. It will be on my rotation from now on! I mix the shredded chicken, shredded cheese, diced onion, (and I also add a small can of "Rotel tomatoes with lime juice and cilantro".) in the same bowl, then use a tablespoon to load up the tortilla. I also add 4oz of diced green hatch chilies to the sauce. Then add shredded sharp cheddar all over the top after adding the sauce.
My mom grew up partly in NM and made lots of New Mexican food for my family, and I'm finally living near a Sprouts that sells hatch chili! I followed your recipe for red and now I'm gonna make your green enchiladas 😄

I adjusted seasonings to my taste and added 1/2 c freshly canned roasted tomatillo salsa verde instead of the hatch Chiles Swapped garlic pwd for onion and voilà perfect for my tastes 😊

I make some enchiladas almost like this but instead of chicken I use crab sautéed with baby bell peppers and for the sauce I use heavy cream mixed with green salsa and cheese. I just love enchiladas doesn’t matter why kind you make 😊

Hello Marcy, I have to share something with you. My daughter and I attended a I church potluck gathering last Saturday and one of the ladies made again ( and again) a very poor copy of your recipe. Indeed looked almost like yours, but the taste and the texture simply would not do your recipe justice, it had basically the same ingredients but I think she musted added skim milk to the mixture or something else that made it taste weird and at the bottom was so soggy as always. It was terrible poor thing. She meant well as always. I know she shared it and made with love and sadly it was the only dish left after the gathering as always. I then remembered I had your recipe saved in my favorite Tex-Mex recipe file, I looked it over and made it at home, soooo different, if people follow your recipe to the "T" will end up with a most delicious and perfect ingenious recipe, it is sooo good, thank you for sharing. On a last note, I must tell you I printed your recipe with this you-tube link address and gave it to her on Sunday after Holy Mass and a full casserole with your Sour Cream Chicken Enchiladas with Hatch Green Chiles for her and her family to taste. She was so nice and grateful, she told me that she thought she was making your recipe, she is one of your faithful followers here in You-tube. She is probably reading me here. She has a humble and kind nature and I know ( known her for over 15 years) she is ok with the truth and loves to learn. Indeed looked almost like yours, but the taste and the texture simply would not do your recipe justice, it had basically the same ingredients but I think she musted added skim milk to the mixture or something else that made it taste weird and at the bottom was so soggy as always. It was terrible poor thing. She meant well as always. I know she shared it and made with love and sadly it was the only dish left after the gathering as always.
I then remembered I had your recipe saved in my favorite Tex-Mex recipe file, I looked it over and made it at home, soooo different, if people follow your recipe to the "T" will end up with a most delicious and perfect ingenious recipe, it is sooo good, thank you for sharing.
On a last note, I must tell you I printed your recipe with this you-tube link address and gave it to her on Sunday after Holy Mass and a full casserole with your Sour Cream Chicken Enchiladas with Hatch Green Chiles for her and her family to taste. She was so nice and grateful, she told me that she thought she was making your recipe, she is one of your faithful followers here in You-tube.
She is probably reading me here. She has a humble and kind nature and I know ( known her for over 15 years) she is ok with the truth and loves to learn.
