Looks pretty tasty, especially with the Hatch! For anyone who might want a slightly healthier version, rather than frying the tortillas in oil, I usually dip them in the chicken broth, heat them in a pan for a few seconds per side, then wrap in a towel to keep warm. They stay pliable, retain their shape after baking, and it adds flavor!

I miss Albuquerque so baaaaddd! I lived there for 53 years before moving to Wisconsin in 2020. There is no real chile here! Mexican food is really different. The first time I went to the store I asked for fresh chile. They took me to the bell pepper section!!!!! After a year here Walmart started selling the 505 green chile. Not as good as fresh..but better then nothing. I'll be using that when I make these! Thanks!

    • @marcyinspired1442
      @marcyinspired1442  11 месяцев назад +2

Bell peppers!?! I feel your pain. It's hard when you move away. I've become a fan of that 505 Southwestern and have a jar in pantry on standby, for when I run out of my own green chile and don't want to thaw another bag from my freezer. It definitely will do the trick for this recipe. Hope it brings a little taste of New Mexico to you in Wisconsin.

Wow! That's so nice to hear! Where in Texas are you, and what's the name of your business? Just an FYI, last year I had them peel my chile after they roasted it. (They shoot water into the same roasting drums.) And while it saved me tons of time from having to peel them myself, the pressure damaged the chile. All the stems broke off and the chile wasn't as meaty. I wasn't able to make a single relleno with them. Just something for you to think about, because I didn't realize until after I got home. Of course, I was also there during the festival when there's so many people, so it could be that they were in a hurry and turned the pressure up too high.

I mix the shredded chicken, shredded cheese, diced onion, (and I also add a small can of "Rotel tomatoes with lime juice and cilantro".) in the same bowl, then use a tablespoon to load up the tortilla. I also add 4oz of diced green hatch chilies to the sauce. Then add shredded sharp cheddar all over the top after adding the sauce.

I never grew up eating tingas, but that's a great suggestion. I'll put it on my list of recipes to work on and share if I like it. As for Miley, she was a 13"-15" beagle and I miss her more than I can say! I came home from work yesterday, sat in my car and had a cry-fest because I knew she wouldn't be greeting me when I walked through the door. It kind of hits me in waves, but I'm doing a lot better overall. Darby O'brien, now that's a great name!

    Thanks Marcy.

I'm trying this recipe today. It looks like great comfort food.
Would you fry flour tortillas like you did with corn?

I've never used flour tortillas for enchiladas, so I have no idea how that would taste. I definitely would recommend corn over flour.

    Those look incredibly delicious. I’m
Curious though why there’s no Mexican flavor inside the enchilada. I would assume something with the chicken and cheese inside the tortilla, such as a little bit of cumin, or something like that.

Marcy do you have your own recipe/s for zucchini, I remember my mom making zucchini with diced tomatoes, onion, and possibly cheddar cheese served as side. Thanks for the recipes.

I don't put diced tomatoes in mine, but a lot of people do. I put corn and cheese, and sometimes a little green chile. There's variations, but here's my basic recipe for Calabacitas: ruclips.net/video/0ecjLjMQ6-Q/видео.html

So my fav part is that instead of crema I can use yogurt for those of us who are lactose intolerant

I'm thinking I can add the chicken to the sauce along with the other ingredients, and pour it over spaghetti pasta. First I'll try the enchiladas. I don't like red sauce. Thank you 😊

    Hello Marcy,
I have to share something with you. My daughter and I attended a I church potluck gathering last Saturday and one of the ladies made again ( and again) a very poor copy of your recipe.
Indeed looked almost like yours, but the taste and the texture simply would not do your recipe justice, it had basically the same ingredients but I think she musted added skim milk to the mixture or something else that made it taste weird and at the bottom was so soggy as always. It was terrible poor thing. She meant well as always. I know she shared it and made with love and sadly it was the only dish left after the gathering as always.
I then remembered I had your recipe saved in my favorite Tex-Mex recipe file, I looked it over and made it at home, soooo different, if people follow your recipe to the "T" will end up with a most delicious and perfect ingenious recipe, it is sooo good, thank you for sharing.
On a last note, I must tell you I printed your recipe with this you-tube link address and gave it to her on Sunday after Holy Mass and a full casserole with your Sour Cream Chicken Enchiladas with Hatch Green Chiles for her and her family to taste. She was so nice and grateful, she told me that she thought she was making your recipe, she is one of your faithful followers here in You-tube.
She is probably reading me here. She has a humble and kind nature and I know ( known her for over 15 years) she is ok with the truth and loves to learn. Next day she phoned me and told me that she loved them and that she served them at her family gathering last Sunday after Church ( the one I made for her) and they loved them and so did she, she thanked me and now she will be making them exactly as you showed it here in this video, thank you so much for sharing this incredible deliciousness, blessings!!🥰😇💖🙏🕊
