I really feel like I’ve learned as much from Kent as some of those fancy French chefs. Literally just the bit about shredding the chicken long, but then cutting it into bite size pieces so you don’t pull out the whole thing from the back… That’s a 5 star tip. I’ve been to “fancy” restaurants that neglect that part.
Your video comes out on a Wednesday but I save it for watching on a Friday night after work and it's my highlight of the weekend in seeing what flavours you bring us Kent. I have to say, seeing you walk up that dirt road brought back so many memories of where I grew up in Canada and gave me a lump in my throat. I too was a dirt road scholar. Kent, you got me hooked on Hatch Green Chiles about a year ago. Imagine my pleasant when I found out that a local supermarket had FRESH Hatch chiles. They only had them for about three weeks at the end of August into early September, or thereabouts, and I bought several bags, roasted them, peeled the skins off, and then put them in the freezer. I'm sure I will run out by spring, but having them was not only convenient, but a real pleasure. Thanks for turning me onto them.

Funny story, I was ready to make this just needed tortillas. My grocery delivery arrived in time for dinner and no tortillas, the stores are COMPLETELY wiped out. :O Running out of time, I found a just-in-case box of Jiffy cornbread mix so I layered my enchilada mix with Jiffy, poured the enchilada sauce on top, and baked it. It was a huge hit with the family. Hopefully next time we can get the tortillas, but it was still fine dining. :D

It took me a little searching to find this recipe but I'm sure it's going to be hit. I mean, who doesn't like cheese? Folks, I have NEVER had one of Mr. Rollins' recipes not turn out absolutely delicious. He is the be all and end all of cowboy cooking. I sure am glad to see their coffee shop open and congratulations to them. Its a great idea to bring people together. We're heading up to Kansas in 2 weeks and we'll be making a detour to go by there. If it's Kent and Shannon's you know the food is amazing and the coffee is smooth. It must be darn near spectacular.

I wanted to take a moment and Thank you for helping me finally hop that cast iron fence I'd been sitting on for years. My husband and I have 4 boys and we look for ways to make money stretch and sound investments and Cast Iron just makes sense. We also get sides of beef and hog and I cant wait to see how much difference is in the taste. Im gonna keep my eyes open and thrift stores and your videos are great for learning what to look for and how to restore old cast iron. Thank you and God Bless.

My wife makes her chicken enchilada casserole with corn tortillas instead of flour. She deep fries 'em before adding the filling, etc. One of my favorite dishes. The corn tortillas add a flavor and dimension that flour tortillas seem to lack. Just my two cents. But there's no denying that Kent's dish looks fantastic and I'm sure it tastes just as good. Oh y’all! When making those tortillas, grind up some rosemary or thyme or oregano real fine and mix it into the flour! THEN use that bacon grease! Your tongue and family will be very impressed! One more thing- cockle burrs are frequently confused with porcupine eggs by city slickers! I encourage perpetuating the confusion!

This another A+ recipe from Kent. Made it for dinner tonight, just wonderful. Even used my new Cowboy Kent spatular which works extremely well with cast iron. Thanks again to Kent and Shan!
I was out in the kitchen making plain cheese enchiladas and ding here pops up a Chicken Enchiladas video, this looks good I may try this version. I always shred up my chicken for tacos and enchiladas, nothing worse than having a empty piece of tortilla. I'm cooking for a 3 year old and a Vegetarian so I can't make them spicy for the little one, but I can always shake a little hot sauce on mine. If I can use spicy I add a small can of those cut up green chilis too. My cats RIP, used to come and help me cook especially if fish or poultry was on the stove, critters make a house a home. I always try to make extra enchiladas but they disappear by the next morning, I think a few of my family members sneak them out for lunch the next day, I take that as a compliment. BTW I do believe our pets are better at judging people and food than we are.

I was out in the kitchen making plain cheese enchiladas and ding here pops up a Chicken Enchiladas video, this looks good I may try this version.
I always shred up my chicken for tacos and enchiladas, nothing worse than having a empty piece of tortilla. I'm cooking for a 3 year old and a Vegetarian so I can't make them spicy for the little one, but I can always shake a little hot sauce on mine. If I can use spicy I add a small can of those cut up green chilis too.
My cats RIP, used to come and help me cook especially if fish or poultry was on the stove, critters make a house a home.
I always try to make extra enchiladas but they disappear by the next morning, I think a few of my family members sneak them out for lunch the next day, I take that as a compliment.
BTW I do believe our pets are better at judging people and food than we are.
They do have a keen eye for food and folks
