Today is my husband’s 75th birthday, and he requested “his girl, Rachel’s” enchiladas. We have made many of your recipes, and have loved every one of them. I only began cooking during the pandemic, and still am very much a novice. I really appreciate the care you take to explain each step. You’re an excellent teacher. Also-my husband and I say, “Just like that!” to each other constantly. We think you’re adorable! x
Rachel, it is the next evening and I made this casserole for dinner. I am telling you that this is absolutely one of the most delicious dishes I’ve ever prepared for us myself. Rachel, your cooking reminds me of a sweet neighbor I had in Arizona. She loved to cook, and to share her meals with loved ones. I was lucky enough to be able to buy the ingredients, she had fixed income, and she would do the cooking. As I had 2 jobs, I am retired RN, it was a wonderful trade. She would have a meal waiting for me on my "Friday", even if it was a Monday! So many happy memories of her cooking. And, because made with love, you also know her secret. Thank you for sharing. I am trying this soon. My neighbor has passed on, but her memories will always bring a smile.
Oh, yeah! There's a pretty authentic Mexican restaurant a few blocks away, but I would LOVE to have ANYTHING they have on the menu cooked at home by an old lady who's been cooking it her entire life.
Update: I made this for dinner tonight and my husband orbited the moon in delight, using the descriptors “rich texture, great flavor, delectable dinner” and “oh, wow!” as he wrapped himself around two hearty servings. K....so I made this Sunday, I thought my husband was going to eat the whole thing. We both loved this dish! The next day he scrambled some eggs and heated a small amount of this dish and rolled the mixture in a flour tortilla and wow what a great breakfast wrap! Love ALL your recipes and thanks for walking us through the steps....I feel comfortable reproducing your wonderful creations.

I lived in the Rio Grande Valley in Texas for most of my adult life. My kids were born there and my family came to love authentic Mexican food from the local restaurants. After I retired from teaching we moved to Arkansas. I am so glad I have found your channel so I can try to bring a bit of south Texas cuisine to our table here. When I was in Kindergarten (1968), my family moved from Southern California to Virginia. (Dad was military). I remember my mother making California Tahhh-Koos (hamburger, Lettuce, tomato, Longhorn Cheese) for guests and they were amazed. My mom had to buy her corn tortillas in a can at the military base. Today, we have such wonderful Mexican Food and it’s great that our entire society has embraced it. Food truly unites us.
You remind me of, and miss greatly, my parents. From Ark 1914 & 1920, came to Alaska in the 50s. Her recipes and stories from their generation, love that. I was so excited about making your sauce for this. I took your sauce & let it sit for 2 days in the fridge, letting the flavors marry real well. I seared some chuck roast cubes then added your sauce to it, simmered 45 minutes on low stirring often. I use the street taco tortillas with extra sharp shredded cheddar. It was amazing !!!
OMG Rachel! I made this dish tonight and it's so delicious. It was a hit with my family! I added refried beans in layers also. Then we topped it with shredded lettuce, tomatoes, diced avocados, sour cream, and more cheese. Highly recommended!!!

I have never found a food cooking show that I have enjoys as much as yours… I made this dish (I live alone) and was hoping it would last several days…. On the third day I had a small amount left.. I ate it for lunch and dinner …. You are SO TALENTED !!!!❤

I’ve never seen anyone use two spatulas before. (Course I’ve just been cooking since pandemic.) I use two now when the pan is particularly full. Keeps me from fling the contents everywhere. 😊
Hi Rachel! I followed your direction to the T and this dish came out so DELICIOUS! My family flipped out! It's also very addictive! I have never made homemade red enchilada sauce and it came out so perfectly flavorful! The only variation was I used ground Turkey bc ground beef is hard on my stomach. I also used grated cabbage instead of lettuce to top it. Btw, you're a very good and thorough teacher. You make it easy to follow. Thank you, sweet sister, for all your fantastic recipes! This is the very best chili sauce I have ever used for enchiladas. It is also very inexpensive. I use both beef and cheese in my enchiladas and they are better than any served in any Mexican restaurant around here. This recipe is better than any served anywhere, I live near San Antonio, Texas. We have eaten at the most famous restaurants, the most celebrated restaurants, the most humble restaurants in and outside of Texas, and I can truthfulls say Rachel's recipes are all the BEST!

I just made a casserole very similar to this last week to take to friends. They loved it. I'm going to try Rachel's version though, because I think her enchilada sauce will be much better than mine. Rachel, I love ALL your recipes, but this is my favorite because enchilada casserole is my favorite thing to eat. The only change I make is by adding a can of sliced black olives, because I like them in and on just about everything. I have a casserole in the oven right now - can't wait to eat it in a little while! Thanks for sharing your amazing recipes with us!
I cannot wait to try this! For years my mom rolled her enchiladas. Then she found a similar recipe to this, but with canned sauce. It was so much faster to make than rolled ones but still tasted great. I plan to make yours soon. The only change I will make is to add black olives. My mom (gone 21 years now) always added them and they taste so good with them!
I agree about the black olives. My Nana was from Sonora and raised us because mom had to work.I had made them and taught my girls.. that was what they wanted for Birthdays. And now that I am 88 they treat me. I have made this casserole at least 3 times. My family and friends love it! I'm trying to cook more meals without meat and today I made the same recipe except I used homemade refried beans in place of the meat. It is so satisfying and we did not miss the meat at all! Thank you Rachel!
I made this. OFF THE CHARTS DELICIOUS! Followed your directions to the tee and it turned out perfectly. I used a 9x13 baking dish as I did not have one size of yours. I think I baked it almost 40 minutes before bubbly, but could be temperature change of ovens too. As a side I made your Mexican rice, AND your refried beans. Needless to say A HIT!! You are my new go to for any types of recipes. I look on Rachel Cooks With Love first. P.S.: I also made your sugar cookies at Christmas. Best I’ve ever eaten, tasted like they came out of a bakery. Rachel, I’ve never made my own enchilada sauce ever-always bought the kind in cans. You made it seem rather simple. So I gave it a try and made it tonight, and I loved it! More importantly, my husband really loved it and went back for a second helping. There is just the two of us here so I split the recipe into two small pans and froze one for another meal. My best friend from 5th grade through high school was Mexican and both of his parents were fabulous cooks. I could smell the cooking in this video thinking back to having dinner at their house countless times. I prefer real enchiladas but make enchilada casserole more often simply because it tastes the same but so much easier. I've never made sauce from scratch though. Going to try this. Great video.

I just made this and I’m ashamed to say, I ate the whole thing by myself lol. I just kept going back for seconds and couldn’t stop myself!! It was SO good. Just as good as any Mexican restaurant and healthier imo because I could control the amount of sodium. Next time I’m going to have to buy Gebhardt’s chili powder though.

Gebhardts has always been the best. If I can’t find it I use Ancho powder, Guajillo powder and maybe some chipotle. Watch out for those jars of "Chile Powder" that have LOT of salt and other spices.
I made this tonight for my family and it was a hit! The look on my husbands face let me know it’s a keeper! I hated that I couldn’t eat as much because of food allergies but may be a good thing because I would have eaten this until I was sick! Oh my goodness, Ranchel…I am 77 years old and I have been making this casserole since I was 10… I do add some chopped jalapeños because I have a family that loves the “hot”…love to watch you cook. I have been cooking Mexican what seems like forever…I make my own tortillas quite often…nothing more “FAMILY” then good Mexican food …or Italian. You are a doll.

Rachel! This Beef Enchilada Casserole is absolutely fabulous!! I made it for the first time today. It really was quite simple and has just the right blend of spices and ingredients. I used the Colby Jack cheese too. I served it with shredded lettuce and chopped Roma tomatoes. My husband had seconds! We are using leftovers as enchilada dip with unsalted tortilla chips. A very good recipe! I have made it twice. Each time, great results. I used Mexican oregano and my own homemade tomato paste. I especially appreciate Rachel's concise written recipe and instructions. There's just one thing missing from the written instructions, though. Please add the oven temperature, 375 degrees Fahrenheit to the written instructions for future Rachel followers. I am a new fan and a forever Rachel Follower!

I only said that because my youngest son could eat Mexican food everyday of his life. Even tho Ive had to stop most of my cooking I cant' thank you enough for posting this wonderful recipe. I only wish I could cook half so good as you, but I am looking forward to trying many of your recipes. I’m an old granny who lives alone now, but I can always divvy it up and freeze what’s left over. I’m afraid that there won’t be much left over, though, I’m going to get fat as a pig! But I will do so happily! :)
I also live alone and that's what I do ... eat one portion the day I prepare it, save another for the day after and divvy up and freeze for later enjoyment. And my freezer is full of such meals ready to defrost and enjoy.

I absolutely ADORE your cooking videos! You are a wonderful teacher! I made this beef enchilada recipe which was DELICIOUS although I did make some mistakes which I'll recount here to help others. I mistakenly added all of the chicken broth at once to the roux so my sauce wasn't was thick and velvety as yours. Also, I used a 13" x 9" dish which was too big. I learned that 11" x 7" is the proper size. To avoid these mistakes in the future, I'll copy/paste your ingredients onto a document and then type in the instructions below so that I'll know that the chicken broth is 3 cups, DIVIDED, and that they should be added one at a time. Although you clearly demonstrate this in the video, it's hard to watch the video while cooking at the same time. Also, I found that it's necessary to measure all of the spices out ahead of time as you do since it's too rushed to try to measure while the sauce is in progress. I'll make a note of all of these tips in the instructions when I type them up and print out to have next time I make it. THANK YOU for your fabulous instructions and for all that you do to bring these videos to us!!!! You are AMAZING!!!!
It's all about PREP! If you get everything ready to add or mix before you begin you will find cooking so much more enjoyable. Clean as you go. Another invaluable tip. One more...sharp knives. When I go to cook at a friend's house, I always take my own knives. It makes it so much more fun to cook with the RIGHT tools for the job! I do mean sharp!

Hi Rachel, I too have gone the casserole route with my enchiladas as well. What I have found that works best for the tortillas is to just cut them in half. This way you always have a straight edge for your dish, but not as much overlap in the middle.

Made this again and ran short of chili powder, so I added a touch of cayenne powder. I may continue to add a pinch in the future, it added just a little kick. Excellent. I taught my granddaughter how to make this.

Rachel, this is amazing!! My family loves enchiladas but mine are usually too heavy so we tend to get them out. I watched this video three times and took notes. I just knew these were going to be good. I made them exactly like you did (thanks for your explanations and tips). I usually tweak a recipe after making it once. I will make these exactly the same. Everyone said these were better than they’d ever had anywhere. My adult daughter said she could eat these once a week. Two of three grandkids are picky eaters. They ate every morsel. Rachel, your cooking reminds me of a sweet neighbor I had in Arizona. She loved to cook, and to share her meals with loved ones.
I was lucky enough to be able to buy the ingredients, she had fixed income, and she would do the cooking.
As I had 2 jobs, I am retired RN, it was a wonderful trade. She would have a meal waiting for me on my "Friday", even if it was a Monday!
So many happy memories of her cooking.

K....so I made this Sunday, I thought my husband was going to eat the whole thing. We both loved this dish! The next day he scrambled some eggs and heated a small amount of this dish and rolled the mixture in a flour tortilla and wow what a great breakfast wrap! When I was in Kindergarten (1968), my family moved from Southern California to Virginia. (Dad was military). I remember my mother making California Tahhh-Koos (hamburger, Lettuce, tomato, Longhorn Cheese) for guests and they were amazed. My mom had to buy her corn tortillas in a can at the military base. Today, we have such wonderful Mexican Food and it’s great that our entire society has embraced it. Food truly unites us.
You remind me of, and miss greatly, my parents. From Ark 1914 & 1920, came to Alaska in the 50s. Her recipes and stories from their generation, love that. I was so excited about making your sauce for this. I took your sauce & let it sit for 2 days in the fridge, letting the flavors marry real well. I seared some chuck roast cubes then added your sauce to it, simmered 45 minutes on low stirring often. I use the street taco tortillas with extra sharp shredded cheddar. It was amazing !!!

OMG Rachel! I made this dish tonight and it's so delicious. It was a hit with my family! I added refried beans in layers also. Then we topped it with shredded lettuce, tomatoes, diced avocados, sour cream, and more cheese. Highly recommended!!!

The only variation was I used ground Turkey bc ground beef is hard on my stomach. I also used grated cabbage instead of lettuce to top it.

This is the very best chili sauce I have ever used for enchiladas. It is also very inexpensive. I use both beef and cheese in my enchiladas and they are better than any served in any Mexican restaurant around here. This recipe is better than any served anywhere, I live near San Antonio, Texas. We have eaten at the most famous restaurants, the most celebrated restaurants, the most humble restaurants in and outside of Texas, and I can truthfulls say Rachel's recipes are all the BEST!

I just made a casserole very similar to this last week to take to friends. They loved it. I'm going to try Rachel's version though, because I think her enchilada sauce will be much better than mine. Rachel, I love ALL your recipes, but this is my favorite because enchilada casserole is my favorite thing to eat. The only change I make is by adding a can of sliced black olives, because I like them in and on just about everything. I have a casserole in the oven right now - can't wait to eat it in a little while! Thanks for sharing your amazing recipes with us!

I cannot wait to try this! For years my mom rolled her enchiladas. Then she found a similar recipe to this, but with canned sauce. It was so much faster to make than rolled ones but still tasted great. I plan to make yours soon. The only change I will make is to add black olives. My mom (gone 21 years now) always added them and they taste so good with them!

I have made this casserole at least 3 times. My family and friends love it! I'm trying to cook more meals without meat and today I made the same recipe except I used homemade refried beans in place of the meat. It is so satisfying and we did not miss the meat at all! Thank you Rachel!
I made this. OFF THE CHARTS DELICIOUS! Followed your directions to the tee and it turned out perfectly. I used a 9x13 baking dish as I did not have one size of yours. I think I baked it almost 40 minutes before bubbly, but could be temperature change of ovens too. As a side I made your Mexican rice, AND your refried beans. Needless to say A HIT!! You are my new go to for any types of recipes. I look on Rachel Cooks With Love first.
P.S.: I also made your sugar cookies at Christmas. Best I’ve ever eaten, tasted like they came out of a bakery.

Rachel, I’ve never made my own enchilada sauce ever-always bought the kind in cans. You made it seem rather simple. So I gave it a try and made it tonight, and I loved it! More importantly, my husband really loved it and went back for a second helping. There is just the two of us here so I split the recipe into two small pans and froze one for another meal. My best friend from 5th grade through high school was Mexican and both of his parents were fabulous cooks. I could smell the cooking in this video thinking back to having dinner at their house countless times. I prefer real enchiladas but make enchilada casserole more often simply because it tastes the same but so much easier. I've never made sauce from scratch though. Going to try this. Great video.

I just made this and I’m ashamed to say, I ate the whole thing by myself lol. I just kept going back for seconds and couldn’t stop myself!! It was SO good. Just as good as any Mexican restaurant and healthier imo because I could control the amount of sodium. Next time I’m going to have to buy Gebhardt’s chili powder though.

Gebhardts has always been the best. If I can’t find it I use Ancho powder, Guajillo powder and maybe some chipotle. Watch out for those jars of "Chile Powder" that have LOT of salt and other spices.
I made this tonight for my family and it was a hit! The look on my husbands face let me know it’s a keeper! I hated that I couldn’t eat as much because of food allergies but may be a good thing because I would have eaten this until I was sick! Rachel! This Beef Enchilada Casserole is absolutely fabulous!! I made it for the first time today. It really was quite simple and has just the right blend of spices and ingredients. I used the Colby Jack cheese too. I served it with shredded lettuce and chopped Roma tomatoes. My husband had seconds! We are using leftovers as enchilada dip with unsalted tortilla chips. A very good recipe! I have made it twice. Each time, great results. I used Mexican oregano and my own homemade tomato paste. I especially appreciate Rachel's concise written recipe and instructions. There's just one thing missing from the written instructions, though. Please add the oven temperature, 375 degrees Fahrenheit to the written instructions for future Rachel followers. I am a new fan and a forever Rachel Follower!

Hello Ms. Rachel, Just watched your beef enchilada. recipe. It looks devine. Im 80 years old and am losing my eye sight also can hardly stand up at all because of a very bad back. I only said that because my youngest son could eat Mexican food everyday of his life. Even tho Ive had to stop most of my cooking I cant' thank you enough for posting this wonderful recipe. Im subscribed to your channel now and will start looking thru it to find other wonderful dishes that I can make. So happy I found your channel, Rachel! When I saw that can of HEB green chilies I knew you were the real deal, and you are! I only wish I could cook half so good as you, but I am looking forward to trying many of your recipes. I’m an old granny who lives alone now, but I can always divvy it up and freeze what’s left over. I’m afraid that there won’t be much left over, though, I’m going to get fat as a pig! But I will do so happily! :)
I also live alone and that's what I do ... eat one portion the day I prepare it, save another for the day after and divvy up and freeze for later enjoyment. And my freezer is full of such meals ready to defrost and enjoy.

I absolutely ADORE your cooking videos! You are a wonderful teacher! I made this beef enchilada recipe which was DELICIOUS although I did make some mistakes which I'll recount here to help others. I mistakenly added all of the chicken broth at once to the roux so my sauce wasn't was thick and velvety as yours. Also, I used a 13" x 9" dish which was too big. I learned that 11" x 7" is the proper size. To avoid these mistakes in the future, I'll copy/paste your ingredients onto a document and then type in the instructions below so that I'll know that the chicken broth is 3 cups, DIVIDED, and that they should be added one at a time. Although you clearly demonstrate this in the video, it's hard to watch the video while cooking at the same time. Also, I found that it's necessary to measure all of the spices out ahead of time as you do since it's too rushed to try to measure while the sauce is in progress. I'll make a note of all of these tips in the instructions when I type them up and print out to have next time I make it. THANK YOU for your fabulous instructions and for all that you do to bring these videos to us!!!! You are AMAZING!!!!
It's all about PREP! If you get everything ready to add or mix before you begin you will find cooking so much more enjoyable. Clean as you go. Another invaluable tip. One more...sharp knives. When I go to cook at a friend's house, I always take my own knives. It makes it so much more fun to cook with the RIGHT tools for the job! I do mean sharp!

Hi Rachel, I too have gone the casserole route with my enchiladas as well. What I have found that works best for the tortillas is to just cut them in half. This way you always have a straight edge for your dish, but not as much overlap in the middle.

Made this again and ran short of chili powder, so I added a touch of cayenne powder. I may continue to add a pinch in the future, it added just a little kick. Excellent. I taught my granddaughter how to make this.

Yes... no, this not Mexican recipes... I’m sure it’s tasty but not even close...when I saw chili powder and flour for the sauce.... If your family is heavily Mexican and are very traditional to cooking believe they will be appalled at this sauce

I LOVE Enchiladas!!! I like the idea of making them in a casserole, instead of rolling them in the baking dish. You could even make a day ahead so the flavors can meld.

Rachel, this is amazing!! My family loves enchiladas but mine are usually too heavy so we tend to get them out. I watched this video three times and took notes. I just knew these were going to be good. I made them exactly like you did (thanks for your explanations and tips). I usually tweak a recipe after making it once. I will make these exactly the same. Everyone said these were better than they’d ever had anywhere. My adult daughter said she could eat these once a week. Two of three grandkids are picky eaters. They ate every morsel.
