I will NEVER buy bottled enchilada sauce again. This recipe is delicious and watching the video..a few times before starting gave me the confidence. The beef enchilada had such great flavor. I topped mine with avacado. Ive already eaten 1-1/2 and am heading back for more. Thank you Rachel.

Your directions are so easy to follow! I quadrupled the recipe and made 20 beef and 24 cheese enchiladas. I decided to use 32oz of mild cheddar that I grated in the food processor. Everything turned our wonderfully. Your recipe will be my go to from now on! No more canned enchilada sauce for us! Thank you!!!

I cook 7 days a week and I use your recipes at least 5 of those days. I live in Dallas, and of course, we love TexMex. But also your meatloaf, apple fritters and soups are always favorites with my family. My sisters ask me to make them your meatloaf for their birthdays. Keep up the good work! Hello Ms. Rachel , i just got thru with this recipe , i couldnt get the 10th in the dish, so i eat it for lunch , as a sample , mercy !! Taste great too , Thank You !! I will be putting those in the oven later for supper , when my wife get in from work. The main course is ready , doin rice & beans later . Thanks !! My wife said my refried beans were better, than the Local restaurants , i told her was following your recipes !! Thanks Again !! i am retired now so , i have time to cook , and we both Love Mexican food !!
Beautiful dish. Easy method of cooking everything. I'm gonna tell my wife to make these very soon. It's just TOO EXPENSIVE to eat out now, because Restaurants want $20 a plate. And, I am a Teacher, and I just can't afford that. So, we are gonna learn to make it at home. EVERYTHING -- let me say again, EVERYTHING. So, thank you, @RCwL, for helping us do that.

Rachel, you are my "go to" for any recipe. You explain every thing so well and the details you give on times, temps etc. are right on. I cook 7 days a week and I use your recipes at least 5 of those days. I live in Dallas, and of course, we love TexMex. But also your meatloaf, apple fritters and soups are always favorites with my family. My sisters ask me to make them your meatloaf for their birthdays. Keep up the good work! I make your enchilada sauce once a week!

Rachel, please, please, please write a cookbook. You are the best Mexican food cook online! Start with the basics; refried beans, rice, etc. Then your sauces and salsas. Then fabulous dishes like this. Why you're not on PBS, I don't know. Other home cooks have done it.
