I made this tonight! I used 3 boneless skinless chicken breasts. I boiled them and used the broth to make your enchilada sauce ~ wonderful! a little work, a little extra time, but worth it! Thank you so much. I'm a loyal follower! I like your mexican and tex-mex recipes very much!
I was looking for a chicken enchilada recipe and Rachel was my first thought! I made this recipe EXACTLY as she suggested including the American cheese (I use Monterey Jack in my cheese enchiladas). These are EXCELLENT! I was not disappointed with American cheese. And the enchilada sauce is beyond 5 star! I could see using it with tamales, on huevos rancheros, etc. it’s perfect! Don’t change a thing. Low and slow is the way to go! You won’t be disappointed.

These are very similar to how my mom would make them and I use her recipe and add a little of my own twist. My mom was born and raised in Mexico and had to teach herself how to cook she taught me as the oldest of 9 I have all recipes in my head my daughter tells me I need to write them down but mom never used measurements just a pinch and a handful of love in all her cooking.
Just made these enchiladas, have made green chile sour cream chicken enchiladas for years as i could not find the perfect red sauce. This one was it! Made it for Sunday's extended family dinner, 2 pans, it was demolished and i got many compliments. This is a keeper!
