BEEF LOVER ENCHILADAS ❤

  • These BEEF ENCHILADAS, are amazing, very TEX-MEX, just like my mom taught me, I have made some adjustments according to my taste, and I think they are super delicious, easy and will have you begging for more. One good thing about these BEEF ENCHILADAS, is you can make them with just cheese or you can make them with beef (both are delicious) the sauce is the one that shines in this recipe, and it is made to perfection. you can use mild cheddar cheese or American cheese which is my favorite, this recipe can make 8-10 enchiladas just depends how full you stuff them.
    INGREDIENTS
    1 LB. ground beef 80/20 (drained)
    2 & 1/2 tbsp melted butter or oil
    2 Tbls flour
    2 Tbsp chili powder (I made my own, but you can use Gebhardts or other) look for Gebhardts
    1 Tbsp paprika
    3 C. Chicken broth
    1 tsp onion powder
    2 tsp garlic powder
    1 tsp cumin
    1/2 tsp sugar
    1 tsp oregano
    1 tsp chicken bouillon
    pepper (to your liking)
    salt (to your liking) CAREFUL DON'T OVER DO IT
    8 corn tortillas
    veg oil for frying tortillas
    • pat dry tortillas of oil before rolling

    I’m an 83 year old lady that has cooked all her life. After my husband passed, I stopped cooking and mostly eat out. I found Rachels site and she inspires me to want to cook again. I have printed out many of her recipes and plan to try them.

    Ms. Rachel - This evening I made these exactly by your directions - for my 87 y/o dad who's eating has been 'slow'. He ate two 'chubby' enchiladas with fixings and rice - said he really, really liked them ... which means a lot to me because he grew up in Phoenix in the 40's & 50's with a lot of 'authentic' flavors - so I told him about your channel. Thank you not only for a great meal, but another great evening cooking with and for my Dad. *hugs*

      Does this recipe call for regular Oregano or mexican Oregano? Are the flavors very different? Making this today 😋😋😋😋

      @@blancavela7531 yes there is a difference between Mexican oregano and regular oregano. Depending on where you live Mexican oregano can be hard to find.

      I know!! Me too. I do the typical dry red chile pods, but this is so diffrent I would never had thought to make it by using dry spices and letting the flavors bloom in a pan. But yes amazing sauce!!!!!

    I am in my kitchen with my apron on and I just licked the sauce spoon. It is SO delicious that I am feeling truly emotional because I am an anxious fretful cook who has failed all my previous enchilada attempts. You teach old-school style without a bunch of editing so I followed along like I was right there. I don’t know how to say thank you enough. I can’t believe I did this and I was soooo relaxed the whole way! 🖖

      Ms. Rachel reminds me of a most kind, gentle woman I knew from Guatemala, Julia. She was so giving of her time with me. I was born and raised on southern country style cooking. When I moved to CA, I tasted things I didn't know existed. I had a lifetime of new dishes I wanted to eat and Julia patiently taught me some of the new cooking skills required to create them. Luckily, I found Rachel to help me to round out my skills even further.

    Hi Rachel! Now I have never ate these before but you made them look so delicious! I think I will make them, exactly like yours! I’m 69 years old and my husband is 74, hopefully he’ll like them and I have lots of health problems and my husband has Dementia plus many other things but I sometimes I still love to cook when I’m not in too much pain! I used to cook 9 course meals, when our three Daughter’s lived at home! Unfortunately we lost our oldest daughter 6 years ago, and lost our youngest daughter 2 years ago, and I miss them terribly, I just lost my oldest, granddaughter in July, she was 30 years old! I just can’t seem to find myself anymore, and I lost My Precious Mama 12 years ago, and I miss her more and more everyday! I don’t even know who I am anymore and I’m grieving for them badly! But I try to do the best as I can do, but it’s very difficult especially with me suffering with three chronic pain’s and everything else! I apologize for explaining how I feel, I guess I needed to talk to someone since I don’t have any friends, since they’ve all gained their angel wings! Thank you so much, for your cooking channel and I just love you ❤

    Those beef enchiladas look so good and cheesy that’s how I like them but I use sharp cheddar cheese and a bit more onion. Rachel you are by far my favorite cook on the internet. It shows that you love to cook, the way you add your seasonings to bring the flavor to your dishes is so authentic…like watching my aunts or nana cooking and explaining in a down to earth way. Im currently teaching my two teen granddaughters this way too. We are making your Puffy Tacos this weekend, but I may also make a batch of these enchiladas too.     I made your cheese enchiladas with the made from scratch red sauce recently and I was mind blown! Amazing is an understatement. My husband does not like any type of food like that but he absolutely loved your cheese enchiladas. I'll say it again, as I have in another post, you would be the aunt that I never had!     Rachel I wanted to write and say thank you for showing everyone step by step how to make the most delicious enchiladas. I made these last night and for the first time in my cooking life (about 45 yrs) I actually was able to make enchiladas that didn't break. By following your directions they turned out fabulous. I ended up with a 9x13 and a 8x8 as I was very careful not to crowd the pans. I will be making these often and my next recipe of yours I want to make is tamales. Tamales have been requested by my son for his birthday in July.

    Yesterday was Sunday and I love to cook for our family and children who are grown and live on their own. My husband and I cooked together and had so much fun watching you and following your instructions while we made the cheese enchiladas, refried beans, and your rice. All of the family LOVED everything. Honestly, they were the best enchiladas I’ve ever had. But most of all, my husband and I made a wonderful memory together. Excited to try this recipe this week.     First video of yours I’ve seen and you knocked it out of the park. Those look so good and your sauce is like my mother used to make hers. Now maybe I can make a good enchilada sauce. Thanks so much.
    And those big corn tortillas, definitely hard to find around here (Austin). I get so fed up with what they call enchiladas in the restaurant these days. Everything is microwaved. Seems the only baked enchiladas I can find are out of my kitchen… and they’re pretty great.

    I love watching your videos from Holidays past, your home feels exactly the way my home with my Parents would feel when I was younger. Those cold nights but lots of warm foods cooking inside, with lots of voices and music playing, people running around. Nothing beats these beef enchiladas, I’ve made them so many times now.     Using a mixture of your recipe and my late mother’s recipe I made beef enchiladas for my cousin’s birthday. She’s actually going to be 81 tomorrow and she’s actually old enough to be aunt. Last time I was over at her house she said how much she enjoyed my mom’s enchiladas. Like most women of Mom’s era the daughters learned from watching the mother’s. Yes I learned from Mom but as an adult I usually took short cuts an used canned enchilada sauce. Well with the supply chain being what it is I have to make it from scratch. It’s beautiful and I’ll bake in the morning. Thanks for the inspiration.

    I have cooked your cheese enchiladas and the family loved them. I told them they MUST give you credit (I only followed your instructions). Now I'll try these because my Lou loves beef enchiladas.     I make my enchiladas just like you do. I was sitting here watching and I was stunned that everything you do is what I do. I never worked with a recipe. I just bought some enchilada sauce one day and followed my instincts. Delicious!
    I eventually tried my hand at making my own sauce and needed a recipe for that. I've been making my own sauce every since the first time I tried it.
    What I love most about you, Miss Rachel, is that you give your viewers, (I refer to us as students 😁), the freedom to do what we find tastes best to our individual taste buds. I am like you however, I love cheesy, saucy, overfilled dishes. Burritos, tacos, enchiladas, even my flautas are over stuffed with all the deliciousness of the filling.

    Ok….you’ve done it. I followed your recipe step by step yesterday. I made them for my sons and their families. NOW I am expected to make them every week. One of the teenagers, who doesn’t care for onions or anything that looks like a vegetable, ate so much that I was embarrassed for him. I can’t tell you how proud I was of myself with the fact that I made my own enchilada sauce. I doubled the recipe and there was nothing left. Next time I will make a little more sauce. Thanks so much for sharing your recipes and your step by step instructions. I have always been a little intimidated by Tex-Mex cooking but not any more. Again thank you.     Rachel, I am really impressed by how much you touch your do if anything that you're making. You want us to not crowd things in the dishes you want us to make sure measure if necessary for trying to get like the cinnamon rolls all the same size. But you take care of your do it as though it says you're changing a baby's bottom and I am so impressed with that. I am also impressed that you mention why we use ingredients.

    I’m new to your channel Miss Rachel and I love the way you teach how to cook. I was never taught how to cook and have always been afraid to try new recipes, with all that said you give me hope that I can be successful with your encouraging nature and you wonderful teaching style. I love that you give all the measurements for all your dishes and show every step along the way.     Hi Rachel….I just found ur channel the other day….watching u make these enchiladas reminded me of my Mama making them for us growing up. She did not know how to make her own sauce….she used the canned enchilada sauce….but if she was alive today….she would definitely make this recipe of yours.

    I keep coming back to your recipe and it’s December this month and I love that you had Christmas music in the background but make no mistake this is the best recipe and I love that I found you on you tube. Today I’m making the beef enchiladas because I was craving them and I love that I now don’t have to buy the enchiladas sauce at a store. If I lived near you I’d be hugging you for being a great cook! I’ve learned a lot from your videos. I’ve even shared recipe to sister from afar but not sure she’ll make them she’s not keen on spices but I told her they aren’t it base on how much spices you decide but I’ve made these so far several different times and they come out great each and every time. Thanks again for sharing and we hope you have a great holiday. When you take that taste test I’m salivating and can’t wait til it’s morn to make my dish. I do love love love them!!!😊

    A very good cook told me long ago that when making a roux…even a very light one….that when the roux starts smelling like baked pie crust, all the raw flour taste has been completely cooked out and it’s safe to introduce your liquid. This little trick has served me well.
