Crockpot Chuck Roast with Potatoes & Carrots Recipe

    Season a 2-4 pound chuck roast with:
    2 tsp onion powder
    2 tsp garlic powder
    1 tsp salt
    1/2 tsp black pepper
    Rub top, bottom and sides with seasoning
    In a skillet with 2 TBS olive oil, brown all sides of roast.
    Remove from skillet
    In the same skillet add one cut up onion. Cook until soft and slightly browned.
    Then add:
    3/4 cup beef broth
    1 TBS Worcestershire Sauce
    2 TBS tomato paste
    1 TBS brown sugar
    1 TBS honey
    Bring back to a simmer and let cook 1-2 minutes
    Combine:
    1 TBS corn starch
    2 TBS cold water
    Add to the skillet and simmer for 1-2 minutes until slightly thickened
    Place roast in a crockpot. Add potatoes (cut up), carrots and the liquid and onion mixture.
    Cook on high 4-5 hours or low 6-8 hours.
    The last hour of cooking, add 1-2 TBS Ketchup to the crockpot!
    Enjoy!

    I love a good pot roast, and this looks like a good one! I've had success browning the tomato paste a bit before mixing it in. Gives dishes like this a little extra very slightly smoky flavor.

    I followed the recipe except omitted the cornstarch and just added a little more tomato paste. The tomato paste is enough of a thickening agent and the pot roast was delicious!

    I’m new at this but question don’t potatoes take longer to cook then carrots won’t my carrots be mushy when done?? Should I place the carrots later than the potatoes??

      It depends on how big or small you cut your potatoes. If you are using fresh carrots they also take a while to cook. I always put them both in at the same time and have not had a problem with mushy carrots. Hope this help! Thank you for watching!

    This looks yummy, but I'm curious - what (besides sweetness) does the brown sugar and honey do to the liquid? Also, why add the ketchup during the last hour? Just curious what these additions do the the flavor. In the meantime, thanks so much for your recipe!

      I think this has just the right amount of spices, and they aren't from McCormick or Lipton soup mixes like most recipes. This is more natural spices that are in your cupboard. If you think there are too many, just mix it up the way you like. If you want the recipe to be quicker, you can omit the browning and the skillet steps of adding onion and the broth and just put the roast directly into your crockpot. Many cooks feel that by searing the pot roast, that the move of the flavor is sealed in. I do my roasts both ways, and honestly I can't taste the difference.
