To give extra flavor, I sauté the onion and garlic right after I seared the meat. Then I deglaze the pan with the broth. I normally use homemade bone broth. This extra step gives SOOOO MUCH FLAVOR!!!

This recipe was so tasty, everyone in my family raved about how flavorful and tender the meat was! I added the veggies to the bottom, I subbed green pepper for celery. I didn’t have wine so I used a 1/4 cup tomato sauce with a 1/2 cup diced tomatoes and a little extra broth. I used two onions one raw and one chopped, the other I caramelized in the pan after searing the meat. I put that on top of the roast with the tomato sauce ,then added the rosemary, thyme and bay leaves. I also added garlic powder, paprika and celery salt since I ran out of celery. This is bookmarked, it’s delicious!!
Love this for every veggie available for the veggies late in my CSA & greenmarket, October thru March: parsnip, turnip, fingerling, shallot & certain beets.
shall I ask for more slow cooker recipes with garbanzo beans, lentils and any other beans of your liking? I find them so comforty and hearty in the winter. And leaving them in the pot in the morning and finding such a goodie to eat when you come back home to warm you up in the evening is just marvelous.
Made this tonight and it was delicious. I consider myself a talented home cook, and this was the best crockpot pot roast I've ever had or made. It was not greasy at all and full a au jus. I decided to put this over mashed potatoes so I loaded the crockpot with carrots and celery. I was out of fresh herbs and used a sprinkle of dried rosemary and thyme. I used chicken stock instead of beef broth (as shown in video) and wine as indicated in recipe. I started late and cooked a 4.25lb roast on high for 5 hours and low for 2 , 1 extra would have been sufficient. The meat was melt in your mouth tender. OUTSTANDING! Just something about this combination was perfect perfect perfect.
I have a lot of food allergies and Celiac's diease so I cannot eat in resturants and many recipes i am unable to make. I really really appreciate how many of yours contain whole foods and have substitutions :)
See, this is why I love my Cuisinart 4-in-1 slow cooker -- it allows me to sear, brown and saute ingredients in the same pot as I will slow-cook the final recipe in. I love not having to use separate pans and end up with oily splatter all over my stove.
Honestly, that chuck looks amazing. I'm on my first ever crockpot right now, which is simply minced beef, bacon, tomatoes and some veggies. This is without searing. I've already prepared my next pot, which is going to be a whole, well seared, cut up, chicken with root veggies, mustard and green lentils. WIsh me luck!

I cooked a Chuck Roast in the oven a few days ago. It was so tough that some areas couldn't even be sliced with a sharp knife. As you can imagine, chewing it was impossible. After this disaster dinner, watching you prepare that Roast on a platter for serving brought tears to my eyes! 😢 I'm gonna dry my eyes and go buy another Chuck Roast, but THIS Time, I'll be using the Crock Pot! 😉

Great recipe. Followed every step. Added two items. About 14 baby Portabella mushrooms sliced and lightly saute' in olive oil, parsley and garlic, which I added to the mix as well as degalzing the pan. Also added a can of low fat cream of mushroom soup which I added to the beef broth and red wine in a large bowl and mixed well before pouring over the ingredients in the slow cooker. A great cool weather dinner.

I make this regularly. It’s a hit! And I can morph the leftovers into other dishes during the week. I add the herbs to the skillet when I deglaze the pan with wine and add the beef broth. Then pour into the crockpot. Yum!

Yes! Thank you for this video! One of my biggest problems that hold me back from making a pot roast is what type of meat and how to cook it because for some reason I never been good at cooking beef (except for ground beef of course, which I have used a lot!). The only thing now is I don’t have a cast iron skillet so what can I use instead? I have a stainless steel and a “nonstick”.

You could add some quince jam after cooking.

Your meant to cover the chuck with foil and leave some butter in there let the moisture cook inside
