Hi Rachel, writing from Yosemite. We were supposed to have a snowstorm that did not materialize, which is why I planned this specific meal. I am over 70 and have been cooking since I was 12. Love your videos and the variety of meals you make! Today I treated my family to your pot roast. Because I had done large Sunday breakfast then dinner, it felt like I was cooking all day. Fortunately, there were cooking gaps in this recipe, so I could rest then. I loved it and my family (all men) loved it too. It was totally worth a day in the kitchen making your wonderful pot roast and mashers. Thank you for the way you present your recipes. Keep 'em coming!

@@maryere6278 - it looks to me as though the only bit that is fried is using a bit of oil to sear the surfaces of the meat - you can use any oil you like, and (at least in my experience) it only takes a quarter cup of Crisco, butter, schmaltz, tallow, or whatever other type of fat you have on hand. It's not remotely finished cooking at that point; the real cooking happens while it's in the oven. The searing is only to give it a browned surface and to seal in the juices so the meat doesn't get dry or stay tough.

When it came time to skimming the grease, I discarded the veggies and poured the gravy into my gravy separator; find it easier than spooning. I added baby yukon potatoes to the roast. Rachel, you make your's similar to mine ! Except in the beginning, I dredge with flour in a plastic bag, carefully getting all sides of the meat, then shake off the excess before I brown it in my Dutch Oven. I use a combination of olive and regular cooking oil. I use Beef Stock, not Chicken. Thank you for this delicious recipe. You are a fantastic cook and your kitchen is so clean and cozy.

Just turn ur ur burner down to super low and cook till falling apart. Or bake as she did, till falling apart.

I live in Fort Worth, Texas and am about to retire. Sure would like to find a cooler place to spend the summers! Thank you for all these wonderful videos and I look forward to watchin many more of them. Would love to hear the story of how you and Ron decided to move to Texas from Ohio for the winters and why you went so far south?? We all hated the horrible winter storm we had back in February with no power and water but hopefully that will not happen again in 2022!! Take care, stay safe and healthy. Hi Rachel I used to cook my pot roast like that when I first got married and that is like 56 years ago I stopped putting flour on my pot roast because of the extra calories. But I'm going to go back to doing that again I've never put tomato paste or tomatoes in my pot roast but I'm going to try that I'm 77 years old and I still like to cook and cook big meals it's just me and my landlady she doesn't cook she always bought fast food all the time on our way home from work, so now I do all the cooking and everything else she has she has Parkinson's so now I do it, but I still make her do stuff to keep her going I have loved all of your recipes that I have seen I think they're awesome and especially the Mexican food and I want to try that what you have made in the past and I would love those roll recipes as well thank you and have a wonderful day God bless Sharon J.
