Delicious Dates & Walnut Moist Cake Recipe

- Red Dates & Walnut Moist Cake - This cake is super moist, amazingly. The fragrant is phenomenal as you can smell it from the oven and when the cake is out, the room is filled with such pleasant smell. I got hungry and couldn’t wait to dive in. Love the texture of the cake. The dates made it a little chewy and crunchy at the same time with the walnuts. I love coffee and adding into the cake is just nice for me but you can definitely leave it out by just adding hot water. I made the eggless version as well. Honestly I can’t tell the difference. Now it’s your turn to give it a try. Let me know your feedback in the comment box down below. Enjoy!

Ingredients:
I used a loaf pan of 20 x 10 x 7.5cm
250g [2 cups] red dates
85g [1 cup] walnuts
60g [¼ cup] butter
6g [1 tbsp] espresso coffee OR 6g [2 tsp] instant coffee (optional)
120g [½ cup] hot water
4g [1 tsp] baking soda
150g [¾ cup] castor sugar
1 large egg OR 60g [¼ cup] plain yogurt
225g [1¾ cup + 1 tbsp] self-raising flour
¼ tsp salt
Instruction:
1. Preheat oven at 170°C/340°F.
2. Lightly chop the dates and walnuts. Set them aside.
3. Brew some espresso coffee with hot water. You can also use instant coffee powder for your convenience or preference. You can also omit the coffee totally if you don’t desire coffee.
4. In a large mixing bowl, add in the chopped dates, baking soda, butter and sugar. Add in the hot water espresso mixture. Mix until the butter is melted. Set aside for cooling.
5. In another bowl, sift the flour and salt.
6. Back to the dates and coffee mixture. The mixture should be cooled by now. Add 1 egg into it. Mix until well combined.
Egg substitute: add in the plain yogurt instead. Mix until well combined.
7. Add in the sift ingredients in 2 batches. Mix until combined, do not over mix.
8. Add in the walnuts.
9. Transfer the batter into the prepared pan, greased and lined with parchment paper.
10. With a spatula, spread the batter evenly. Add some chopped walnuts on top.
11. Bake in preheated oven at 170°C/340°F for 50-60 minutes. If you notice the top start to crack, you may turn down the temperature to 160°C/320°F (depending on individual oven).
12. Remove cake from the pan, let it cool completely before slicing.

How much baking powder to be used....since I don't use self raising flour
I make date and Walnut cake so often...but this is the first time I have seen coffee added to it...I so curious to know how it tastes...will surely try it soon...
Wow
Looks delish. Wanna try. But we don't have good self rising flour. Can you give breakdown using baking powder and all purpose flour please
Thank you very much for the recipe 😊 Can I please ask how to substitute Self raising flour. I don't get self rising flour in the country I live in.
Hi Fiona lovely recipe
What is the difference between all purpose flour and self rasing flour
Thanks so much Fiona for fulfilling the request for dry cakes. What is self rising flour? Is it similar to cake flour?
Hi dear. Self-raising flour is a mixture of all-purpose flour plus baking powder. If you do need have, just use all-purpose flour or plain flour and add ½ tsp of baking powder. That's it! Hope you'll give it a try ☺️
By the way, there should be a couple more dry cakes. Stay tuned! ☺️
@@gracioustreatz7231 Thanks for the reply Fiona :) Can't wait to try this soon
Hi mam,how are you? Thank you so much for the recipe.mam I want ask if we don’t have self raising flour then how much cake flour and baking powder should be added?plz reply
So yummy, I love your recipes. Can I replace self raising flour with wheat flour for a healthier version of the cake?
Yes, but you must add some baking powder to make it rise.
Glad you use butter and not sunflower, canola or vegetable oils which are bad.
Hi Fiona, thank you for sharing the recipe!! Is it ok to use normal dates like medjool dates instead of red dates? Thank you in advance!
Hi dear. Yes you can use any dates, normal or black or red or even prunes ☺️
@Gracious Treatz That's great, thanks so much for your reply, Fiona! Have a great weekend!
Can you plz make a video on baklava 💕
Can I use non rising flour?
hi if we omit coffee totally than we just add hot water to the mixture
Hi Fiona. Can i bake this at 180?
I recently baked a fruit and nut cake at 160 for 55 minutes, and it didnt turn out too fluffy as my cakes usually are.
Hi dear. You can try baking at 180. Since the baking time is quite long. You can do 180 for first 30 minutes, then lower temp to 170 for the remaining time. Yea, that's better. It's quite a long bake, cake might be a little dry for 180 throughout. Hope this helps ☺️
How to make selfrasing floure
Hot water can replace hot milk ?
Can I use all purpose flour instead of self rising flour??
Any new thing do I need to add if using all purpose flour???
সুন্দর
What is weight of sponge after baking???
Any recommendations for dates substitute?
You can also use raisin, mainly dry ingredients. In fact you can basically use any dry ingredients like raisins, dried figs etc. ☺️
Hey Fiona if we to use All purpose flour can we? N should we use hard dates for this cake right
Yes all-purpose flour can do too. You can get the dates from dry food area or they are usually displayed together with nuts and dry fruits ☺️
@@gracioustreatz7231 thank you Fiona, so if using All purpose flour is der anything I gotta add like baking powder or sumthing coz self raising flour has already added to it so was a bit confused?
Were those Chinese red dates? Can I use AP/cake flour+baking powder to substitute self raising instead? If can- to use AP or cake flour? What's the amount for baking powder?
Hi Cheng. Yes I believe they are similar to Chinese red dates. I bought these at the supermarket at the baking ingredients section, they are slightly coated with syrup (unlike the dry type).
Yes you can AP + ½ tsp baking powder instead of self-raising flour. AP is good enough ☺️
Please you share more cookies recipe
Which oven is best for baking cookies cakes please tell and people also can tell who watching this please I want to buy and make cakes for my son please please tell I'm from Goa mapusa
How much baking powder should we use if we don't have self raising flour?
1 tsp baking powder and mix with 225g amount of all-purpose flour in this recipe. Mix together well
Thank you so much... Love your recipes. ❤
Can I exclude baking soda?
It shouldn't be a problem. Bear in mind, you'll need self raising flour. If you're using other types of flour like all-purpose flour, you'll need to add ½ tsp of baking powder. Hope this helps ☺️
Your cakes is very nice but please make plum cake 30 or 50
Hi, first comment ❤️
You are my favourite
I tried it but I think the measurements are not accurate . My batter was like a dough. Had to add a lot of warm milk to make it into a batter and the result was a hard and flat loaf😢
Self raising flour???
Because I know may people who making cakes and I asked them but they are not ready to tell😭😭😭
