CHEESE PASTRY - Flaky Delicious!

  • Today baking is again simple CHEESE PASTRY Flaky Delicious! Still similar to the previous recipe but this time uses cheese as the filling.

    Cheese Pastry
    Dough Recipe :
    75 grams (1/3 cup) caster sugar
    5 grams (1 1/2 tsp) active dry yeast
    250 ml (1 cup) warm milk
    375 grams (3 cups) of all-purpose flour/plain flour ( per cup = 125 grams)
    55 grams (1/4 cup) unsalted butter, melted
    1 tsp vanilla sugar (1/2 tsp vanilla extract)
    1/2 tsp fine salt (more if you want on the salty side)
    If you use salted butter, might use less salt in the dough.
    200 grams or less/more of soft butter, for a layer between the thin dough
    100g grated cheese for the filling
    Oven: 175°C (347°F) preheat until the right temperature.
    Baking time: 25 - 30 minutes. An oven may vary.

    Ninik, I made it!🤗 At first I was suspicious whether it's going to be flaky and I couldn't make them look all the same as you did when making a hole, but in the end, after baking they turned out just fine and were delicious! Thank you for the recipe! I enjoy watching your work! ❤

    Hi Ninik, how long can I keep the rolled up dough in the freezer? And should we defrost it in the fridge or room temp for the next stages (cut, shape and stuff) And how long to expect the dough to be fully defrosted? Would love to bake this for a party but would need these info to plan. Thank you.

      You can keep the rolled dough in the freezer for about a month and when you want to use it, put in the fridge overnight or until softened completely. Cut and shape as you prefer and let rest at room temperature until warm again and expands about 1 - 2 hours before baking.

    Hi. Lovely recipe. I have two queries.. Should we keep the roll in the deep freezer or the refrigerator? Secondly , does this proportion yield two rolls , so can we use it on the after two days ??

      Thank you! Keep in the refrigerator for overnight. This recipe use a half of the rolled butter dough and yes, we can store the other half of the rolled dough in the refrigerator for 2 - 3 days.

      Hello, yes you can fill it with nutella but not too much, so won't leaking during baking.

      Thank you. The golden brown color on top comes from the egg. You may use butter and bake until the pastry until brown.

    I’d like to make this sometime, and I have a question. Does this pastry taste sweet, and will it make a difference if I reduce the amount of sugar used? If it doesn’t taste sweet in the end then that’s fine but if it does how much sugar should I use?

      This cheese pastry slightly sweet and the cheese add the savory taste. You can reduce the sugar to 1 tbsp.

      Ninik Becker thanks for the reply but I ended up using the original amount of sugar as I was afraid of ruining it, I did use salted butter tho and added around twice/three times the amount of salt u used :) it has risen beautifully and I’m going to bake it off tonight for dinner, and it’s going to have a chicken filling ☺️ thanks so much for the recipe, I’m still kinda afraid it’ll be too sweet since my family is used to eating spicy/saltier pastries 😂 but u said it’ll only be slightly sweet so let’s hope it turns out well :)

    Oh So Yum!!! Great Job!! Gonna make these babies for New Year.
    Btw, I made the croissants using your recipe, they baked so well but the only one thing I forgot was to add salt LOL! Nevertheless they were crunchy on the outside and soft on the inside, and since I like it hot, I had them with cheese & chilli pepper .. Umm! So Good!!

      Hello cha cha, this pastry required a good butter to achieve the flaky texture, you still can use oil but the texture and taste will be so much different.

      Yes, 10 layers of thin dough. Slice into 20 pieces for small or 10 pieces for a bigger size.

    It's quite difficult to achieve a thin layer like yours, it came back when i rolled it. Do u hv trick to do that?

      3asoy, thank you for a good question. When the dough stretches back while rolling out, it could be not enough kneading time or doesn't rest properly. Allow the dough to relax. Alternatively, may use oil to coat the dough will make it easy to spread out with hands then continue with a rolling pin.

      Will try for next batch, if i use bread flour instead of all purpose flour, will it effect? Since bread flour is more elastic.

      Bread flour good for making bread. For pastry, the best is to use pastry flour or all-purpose flour works great too.

      Receita de massa:

      1/2 colher de chá de sal fino (mais se você quiser do lado salgado)
      Se você usar manteiga com sal, poderá usar menos sal na massa.
      200 gramas ou menos / mais de manteiga macia, para uma camada entre a massa fina

      JoAnn Hutt, you mean to add more sugar? It would be no problem, add sugar follow your taste. You can add sugar after you spread the butter between the layer, or in the dough mixture, or on top before baking.

    Hi Ninik, any chance I can use an electric mixer to make the dough on your recipes. I have
    Rheumatoid Arthritis, and it's very difficult for me to do a lot of stuff by hand 😊 Big hug your way and thanks again for your recipes 👌💕😘

      I wish you good luck mbak Ria :) You can use a pasta maker to start rolling and then continue using a rolling pin to make it even thinner. Selamat Tahun Baru juga..thank you!
