How to make a mini 6 inch vanilla cake from scratch, the best easy homemade small vanilla cake recipe that's perfect for two or three!
INGREDIENTS:
baking spray
1 large egg - room temperature
2 tsp pure vanilla extract
½ cup granulated sugar
3 tbsp vegetable oil
⅓ cup buttermilk - room temperature
¾ cup cake flour - (85g)
3/4 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
Vanilla Buttercream Frosting Ingredients:
1/2 cup salted butter - softened (1 stick)
2 cups powdered sugar - (240g)
2 tbsp heavy cream
2 tsp pure vanilla extract
salt - to taste

I wasn’t a fan of this as a stand alone vanilla cake, and actually thought it tasted more like coconut cake without the coconut topping, so I toasted some coconut, covered the cake in it, and wow. It tastes exactly like coconut cake, but more moist. Next time I plan to add coconut extract to the frosting to really amo up the coconut flavor.

Is the max temperature of your oven 250 Fahrenheit or Celsius? If it's Celsius, then you would bake this cake at 180°C

Great I'm glad it works for you! You'll need a teaspoon of vinegar -- just remove a teaspoon of milk from your 1/3 cup and add in the teaspoon of buttermilk. Stir and let them sit a few minutes before adding to the recipe! 😊

No I think that would be fine if it's not too many -- maybe a few tablespoons at most :)
Any substitute of butter milk
You can make a buttermilk substitute with milk and vinegar. Just measure out your 1/3 cup of milk, remove a tsp of it, and add in a tsp of vinegar. Stir and let it sit for a few minutes and then add it to the recipe! :)

May I know the substitute for egg?
I would try adding another 1/2 tsp of baking soda to the dry ingredients and 1.5 tsp of vinegar to the wet ingredients -- should give it the lift it would get from the egg.

What is the difference between white flour and cake flour ? I have never seen cake flour on grocery stores in England. Where can i buy that . Thanks x
Hi! I'm not sure if cake flour is widely available in England, but you can make a cake flour substitute for this recipe by whisking together 82g or white flour and 12g of corn flour. Or you can just use white flour and it'll still be fine; just might not have as soft a texture. Hope this helps! 😊

I wanted to do a 4 layer 6inch cake do i just use this recipe x4 ?
I would triple it instead and then divide it into 4 pans, so that the layers aren't too tall :)

I'm sorry -- I'm not familiar with maida. Cake flour is flour with a lighter texture and lower protein content than other flours. I haven't measured the completed cake by weight; I imagine it would vary depending on how it's frosted.
