Homemade Herb Salt

- Herb salt is super quick and easy, it's great on (almost) anything*, and it uses fresh summer herbs in a way that will carry their flavor well into the winter (by way of a jar stashed in the pantry) - a gift to your future self, or a great homemade gift. Use any herb you like (or have in abundance), such as basil, sage, oregano, thyme, rosemary, cilantro, parsley, etc. - or use a combination of herbs.
Ingredients:
3/4 cup (15-20 g) fresh herbs
1 cup/ 240 g coarse salt
If using herbs with larger leaves (basil, sage...), give them a roughly chop. Put herbs and salt in a blender or food processor. Pulse several times to break the herbs into very small bits. [Alternatively, grind herb-salt mixture in a molcajete (mortar and pestle).] Spread herb salt onto a lined baking sheet and dry in a very low oven (about 170 degrees F) for 30 minutes, or until herb bits are thoroughly dry. Stir to break up any clumps. Cool completely and store in an airtight container at room temperature.
*Sprinkle herb salt on:
sliced tomatoes or cucumber
corn on the cob
watermelon or mango (really)
eggs - scrambled, fried, or... deviled!
avocado toast
pasta
fish

It's definitely a bit of kitchen magic: uses stuff that's seasonally abundant in a way that preserves it for another season - plus it's cheap and easy.
